Sweet potatoes and chicken are added to a hearty stew base of peanut butter and coconut milk, flavored with gingerroot, garlic and a touch of jalapeño. It's an easy, no-fuss way to serve something surprising but comforting for dinner.

6 boneless skinless chicken thighs, cut into 2-inch pieces (1 1/2 lb)
1 teaspoon salt
2 tablespoons olive oil
1 cup chopped onions
2 tablespoons finely chopped fresh gingerroot
4 cloves garlic, finely chopped
1 medium jalapeño chile, finely chopped
3 tablespoons Gold Medal™ all-purpose flour
2 medium sweet potatoes, peeled and cut into 1-inch cubes (about 3 cups)
1 can (13.66 oz) unsweetened coconut milk (not cream of coconut)
1 cup Progresso™ chicken broth (from 32-oz carton)
1 bag (5 oz) baby spinach
1/2 cup creamy peanut butter
1 tablespoon packed brown sugar
2 tablespoons lime juice
2 teaspoons soy sauce
1/3 cup chopped fresh cilantro
1/3 cup chopped roasted peanuts

Steps:

  • Season chicken with 1/2 teaspoon of the salt.
  • In 5-quart Dutch oven, heat oil over high heat. Add chicken; cook 5 to 7 minutes, stirring occasionally, until lightly browned. Using slotted spoon, remove chicken from Dutch oven. Reduce heat to medium; add onions. Cook 4 to 6 minutes, stirring occasionally, until softened. Add gingerroot, garlic and jalapeño chile. Cook and stir 1 minute. Add flour; cook and stir 1 minute. Add browned chicken, sweet potatoes, coconut milk, broth and remaining 1/2 teaspoon salt. Heat to boiling. Reduce heat to low; cover and simmer about 10 minutes or until sweet potato is tender. Gradually add spinach, stirring until wilted.
  • Stir in peanut butter, brown sugar, lime juice and soy sauce. Divide among serving bowls; garnish with cilantro and peanuts. Serve with lime wedges.

2 cups diced onion

Steps:

  • Season chicken with 1/2 teaspoon salt and the black pepper. Heat 1 tablespoon oil in a large pot over medium-high heat. Add half the chicken; cook until no longer pink, 2 to 3 minutes, then transfer to a plate. Repeat with 1 tablespoon oil and remaining chicken.
  • Add remaining 1 tablespoon oil to the pot and reduce heat to medium. Add onion; cook until softened, about 3 minutes. Add garlic, ginger, coriander, cumin, turmeric, cinnamon, and remaining 1/2 teaspoon salt; cook, stirring, 30 seconds.
  • Stir in broth, tomatoes, sweet potato, collard greens, and red bell peppers; bring to a boil. Reduce heat to medium-low; simmer, partially covered, until vegetables are tender, about 20 minutes.

1 whole chicken (3 1/2 pounds), cut into 8 pieces
1 garlic clove, minced
1 teaspoon ground ginger
1 teaspoon ground coriander
Coarse salt and ground pepper
1 tablespoon canola oil
1 large onion, coarsely chopped
2 jalapeno chiles, finely chopped (seeds and ribs removed for less heat)
6 plum tomatoes, coarsely chopped
1 large sweet potato, peeled and cut into 1-inch chunks
1/3 cup smooth peanut butter
1 can (14.5 ounces) reduced-sodium chicken broth

Steps:

  • Rub chicken with garlic and spices; season with salt and pepper. Heat oil in a large pot or Dutch oven over medium heat. Working in 2 batches, brown chicken on all sides, turning as needed, 6 to 8 minutes. Transfer to a plate; set aside.
  • Add onion and jalapeno to pot, and cook, stirring often, until onion is translucent, 6 to 8 minutes. Add tomatoes and sweet potato; cook, stirring occasionally, 2 minutes.
  • Add peanut butter and broth to pot; bring to a boil. Reduce heat to a simmer, and add chicken. Cover, and simmer until chicken and potatoes are very tender, 25 to 30 minutes. Serve hot.

Chicken, Pork and Potatoes in Peanut Sauce image

This is a nice meat and potatoes dish of Peruvian origin adapted from South American Food and Cooking by Jenni Fleetwood and Marina Fillipelli. This is a subtley flavored, hearty and filling dish. I increased the seasonings from the original recipe, but naturually, you can add as much or as little as you like. If you like a little heat, it would probably be good with some tabasco. I may add some carrots some time as well.

3/4 cup roasted peanuts
4 tablespoons olive oil
2 chicken breasts, cubed
1 lb pork loin, cubed (I used thin-sliced boneless pork chops and it was fine)
1 onion, chopped
2 -3 tablespoons water
3 minced garlic cloves
2 teaspoons cumin
2 teaspoons paprika
1 1/4 lbs potatoes, peeled and thickly sliced
2 1/2 cups vegetable stock or 2 1/2 cups chicken stock
salt
pepper
2 eggs (hard-boiled and sliced)
black olives, chopped
parsley

Steps:

  • If using salted peanuts, rinse and pat dry. Grind peanuts in food processor till finely ground. (You can use unsalted, unroasted peanuts and toast them over low heat in a frying pan for about 2-3 minutes before grinding.).
  • Heat half the olive oil in a heavy skillet or dutch oven. Add the chicken pieces, season with salt and pepper to taste and cook for about 10 minutes, or till golden brown all over.
  • Transfer chicken to a plate using a slotted spoon.
  • Add the pork to the pan, seasoning with salt and pepper, and saute for 3-4 minutes, till golden brown.
  • Transfer to plate with cooked chicken.
  • Add remaining oil to pan and lower heat. Stir in onion and cook for 5 minutes, adding water if it begins to stick.
  • Stir in garlic, paprika and cumin and cook for 1 minute.
  • Add the sliced potatoes, stir and cover the pan; cook for 3 minutes. (potatoes that break down during boiling work best here - I used russets).
  • Add the stock and ground peanuts; bring to a boil, then simmer gently for 20-30 minutes.
  • Return chicken and pork to the pan and bring to a boil.
  • Lower the heat, replace the lid and simmer for 6-8 minutes, till meat is cooked through.
  • Avoid overcooking so that the meat does not become tough and stringy.
  • Garnish the stew with egg slices, black olives and parsley if desired (I didn't use any of these and it was still very nice).
  • Serve over cooked rice (unless you really don't like the idea of potatoes and rice together - I loved it!).

2 medium white onions, sliced
2 carrots, peeled and cut into 1-inch pieces
2 Scotch bonnet chilies, cut in half, seeds and ribs removed
One 3-inch piece ginger, peeled and sliced
2 bay leaves
6 white peppercorns
4 cups water
4 boneless, skinless chicken thighs, each cut into 4 pieces
4 boneless, skinless chicken breasts, each cut into 4 pieces
2 cups unsalted peanuts
3 tablespoons olive oil
2 baking potatoes, peeled and cut into 2-inch cubes
4 tomatoes, cut into quarters, or 2 cups roughly chopped canned tomatoes
1 teaspoon salt
1 pound spinach, tough stems removed, washed

Steps:

  • Combine the onions, carrots, chilies, ginger, bay leaves, peppercorns, and water in a medium pot and bring to a boil over high heat. Reduce the heat to medium, add the chicken thighs, and simmer, uncovered, for 15 minutes. Add the chicken breasts and simmer for another 10 minutes, or until the chicken is cooked through.
  • While the chicken is simmering, toast the peanuts in a small dry sauté pan over medium heat until golden brown and fragrant. Let cool, then grind 1 cup of the toasted peanuts in a blender to a smooth paste. Set aside.
  • Using tongs, remove the chicken from the cooking liquid and set aside. Using a slotted spoon, transfer the vegetables to a food processor; discard the bay leaves. Puree the vegetables until smooth. Set the broth aside.
  • Heat the oil in a large sauté pan over medium heat. When it begins to shimmer, add the potatoes and sauté until they are golden brown, about 10 minutes. Add the chicken pieces and brown them on all sides, about 10 minutes. Remove the pan from the heat.
  • Stir the vegetable puree into the broth and bring to a boil. Add the peanut puree and the remaining cup of whole peanuts and whisk until well combined. Add the tomatoes, chicken, and potatoes and simmer until heated through, about 5 minutes.
  • Remove from the heat and season with the salt. Add the spinach and stir until the spinach is wilted.
  • Serve with Yellow Rice.

1 very large green pepper, cut into 1/2-inch pieces

Steps:

  • Trim off plantain ends and cut 4 vertical slits in skin of each (do not cut into fruit). Microwave 1 minute at 50 percent power then pull off peel.
  • Stir next six ingredients in large pot until paste forms. Mix in meats. Cook over high heat until meats are no longer pink outside, stirring often, about 10 minutes. Add plantains, broth, tomatoes with juice, onion, pepper, and vinegar. Bring to boil. Reduce heat to medium-low; cover and simmer 20 minutes. Add potatoes and corn to pot. Cover; simmer 40 minutes.
