4 Granny Smith apples
6 pork sausages
4 medium yellow potatoes
black pepper
butter, unsalted
extra virgin olive oil
salt

Steps:

  • Wash and dry the fresh produce.
  • Preheat a skillet over medium heat.
  • Peel the potatoes, then halve lengthwise and crosswise; transfer the quarters to a small saucepan. Cover with hot water (from the tap) by about 1 inch and bring to a boil over high heat.
  • Place the sausages on a plate and rub with a little olive oil.
  • Once the skillet is hot, add the sausages. Cook, turning occasionally, until the sausages are browned and cooked through, 10 to 15 minutes. Once done, transfer to a plate and cover with foil to keep warm.
  • Quarter the apples lengthwise, then cut out the core and stem from each section; cut each quarter lengthwise into 4 thin wedges.
  • Once the water in the saucepan is boiling, reduce the heat to medium and cook until the potatoes are tender when pierced with a knife, 8 to 12 minutes. Once done, reserve about 1 cup of liquid and drain the rest. Cover the saucepan to keep warm.
  • Once the sausages have been transferred, add the apples to the skillet. Cook, stirring frequently, until they are lightly browned and softened, 4 to 6 minutes. Once done, remove from the heat.
  • Add ½ of the reserved liquid, butter, salt, and pepper to the potatoes; mash with a potato masher until smooth. Add more liquid to thin out the mash if needed.
  • To serve, divide the mashed potatoes, sautéed apples, and sausages between plates. Enjoy!

1 kg pork belly
1 large onion
1 large cooking apple
2 teaspoons marjoram
2 teaspoons dried sage
2 teaspoons dried herbs
grated nutmeg (about an eigth of a nut)
ground black pepper
ground sea salt
100 g white breadcrumbs
sausage, skin (my friendly butcher lets me buy some from them)

Steps:

  • First make the breadcrumbs in a food processor, so they are fine.
  • Mince (or grind) the pork, then add the onion to the grinder, and finally the apple (peeled and cored). Add all the herbs and nutmeg and salt and pepper to taste.
  • Fill your sausage filler (either machine or hand operated one) and put the skins over the end of the nozzle.
  • Fill slowly so that the skins do not burst, and twist the finished sausages into the required size.
  • Since nothing has been pre-frozen, these will freeze well.
  • Various adaptations can be made, by adding either sun-dried tomato puree, or garlic puree for instance.
  • Prior to cooking, pierce the skins to prevent bursting.

2 tablespoons extra virgin olive oil
3 large onions, peeled and sliced
1 large granny smith apple, peeled and sliced
1 piece fresh ginger, golf ball size grated
1 tablespoon mustard seeds, crushed in mortar and pestle
500 ml cider
8 thick pork sausage links
1/2 cup water

Steps:

  • Preheat oven to 180dC.
  • Heat oil in a heavy based pan, add onions, apples and ginger and cook until soft.
  • Add mustard seeds and water and cook for 15 minutes.
  • Remove mixture to warmed ovenproof dish.
  • Deglaze pan with cider and add to onion mixture.
  • Fry sausages in pan until browned.
  • Drain and add to onion mixture.
  • Bake in oven, uncovered for 25-30 mins.
  • Serve with mashed potatoes.

1 (12 ounce) package smoked sausage
2 tablespoons water
1 medium yellow onion, sliced
2 apples, cored and sliced
4 medium potatoes, peeled and sliced
4 tablespoons butter
1/4 cup apple cider vinegar
3 tablespoons sugar
2 tablespoons fresh parsley (or 1 T dry) (optional)

Steps:

  • Saute sausage with water covered, about 8 minutes. Discard grease. Set aside.
  • Saute potatos in about 2-3 T butter until tender. Set aside.
  • Saute apples and onions in remaining 1 T butter until tender.
  • Combine cider vinegar, sugar, and parsley.
  • Return the sausage and potatoes to the saute pan along with the apples and onions. Add the vinegar, sugar, and parsley to the skillet. Mix well.
  • Warm over medium heat until warmed through.
  • Serve.

1 tablespoon olive oil
2 garlic cloves, minced fine
1 medium onion, coarsely diced
2 medium firm cooking apples, coarsely diced (like Granny Smith or Braeburn)
1 lb chicken-apple sausages, sliced into 1 inch pieces
1/2 teaspoon celery salt (to taste)
1/4 teaspoon ground thyme (to taste)
1/4 teaspoon white pepper (to taste)
1/2 teaspoon salt (to taste)
2 tablespoons white wine or 2 tablespoons cider
3 medium russet potatoes, coarsely diced
2 teaspoons butter
1/4 cup milk
1/4 cup sour cream
1 teaspoon salt (to taste)
2 teaspoons parsley flakes

Steps:

  • Preheat the oven to 350 degrees F.
  • Boil the potatoes in salted water until fork tender.
  • Heat the oil in a skillet and saute the garlic, onion, and apple until slightly carmelized and the apple is starting to soften.
  • Keep the potatoes warm if they are cooked.
  • Put the onion mixture in a medium bowl and keep warm. Add additional oil to the pan if needed and slightly brown the sausage.
  • Mix the sausage with the onion mixture and the celery salt, thyme, pepper, salt, and wine/cider.
  • Put the sausage mixture into a pie plate.
  • Mash the potatoes with the butter, milk, sour cream, salt, and parsley.
  • Top the pie with the mashed potatoes and seal the edges with the potatoes. Spray lightly with the cooking spray, if you want.
  • Bake for 45 minutes or until the potatoes are starting to brown.
  • Let cool for 5-10 minutes before serving.
