- In a small bowl, combine the first five ingredients. Pour 2/3 cup marinade into a large resealable plastic bag. Add the pork; seal bag and turn to coat. Refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade., Drain and discard marinade. Lightly grease the grill rack., Prepare grill for indirect heat, using a drip pan. Place pork over drip pan and grill, covered, over indirect medium heat for 25-30 minutes or until a thermometer reads 160°, basting occasionally with reserved marinade. Let stand for 5 minutes before slicing., Meanwhile, grill pineapple slices for 2-3 minutes on each side or until heated through; serve with pork.

PINEAPPLE PORK TENDERLOIN

Steps:
- Prepare a 13x9 baking dish by spraying with cooking spray.
- Preheat oven to 350-degrees, or prepare an outdoor grill by heating to medium/high.
- Layer a few slices of pineapple on the bottom of the dish.
- Place the pork tenderloin pieces on top of the pineapple slices.
- Drizzle the teriyaki sauce evenly over the pork tenderloin.
- Season with salt and pepper.
- Lay the slices of onion over the seasoned pork tenderloin.
- Top with the remaining pineapple slices.
- Place in a preheated oven for 40 minutes, or until an instant-read meat thermometer reads 145-degrees. OR place on top of two bricks on an outdoor grill, cover, and cook until an instant-read meat thermometer reads 145-degrees.
- Once the pork reaches 145-degrees remove it and allow it to rest for 5 minutes before slicing.
- Slice and serve the pineapple pork tenderloin by spooning the pan juices over the top, if desired.

- Mix lemon juice, herbs, salt, stevia and cinnamon in a zippered bag. Add pork. Marinate in refrigerator for at least 30 minutes, though overnight is best.
- Grill pork over high heat turning one to two times for about 5-6 minutes total. Grill broccoli and pineapple for 30 seconds a side in a grill basket. Remove and serve with tenderloin.
- If you don't have a grill, you can broil the pork and pineapple. Heat he broiler pan first and add the pineapple just before serving.

- Drain pineapple, reserving 1/4 cup juice; set aside. In a small bowl, combine 2 tablespoons cornstarch, 1 tablespoon water, garlic powder and 1 tablespoon reserved pineapple juice. Pour into shallow dish; add pork and turn to coat. , In a small bowl, combine the soy sauce, brown sugar, ginger, cayenne and remaining water, cornstarch and reserved pineapple juice until smooth; set aside., In a large skillet or wok over medium-high heat, stir-fry pork in 1 tablespoon oil until no longer pink; remove and keep warm., Stir-fry the broccoli, carrots and onion in remaining oil until tender. Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add pork and pineapple; heat through. Serve with rice.

This is the tastiest roast I've ever made! I found the recipe on southernfood.about.com and modified it to be more flavorful. I couldn't resist sharing something this tasty.

Steps:
- Trim the tenderloin.
- Place tenderloin in crockpot.
- Season with salt and pepper.
- Combine 8 oz of pineapple, 1/4 cup of the pineapple juice, brown sugar, soy sauce, garlic, and basil.
- Pour over tenderloin.
- Cover and cook on low for six hours.
- Remove the pineapple (as it will be well on its way to brown and dried) and top the roast with the remaining 8 oz of pineapple and green peppers.
- Cook on low for another two hours.
- Remove the roast, green pepper and pineapple, and drain the juice into a saucepan.
- Return the roast, peppers and pineapple to the crockpot.
- Skim as much fat as possible from the reserve liquid, and add water until there's 1 1/2 cups.
- Stir the cornstarch into the remaining 1/2 cup of pineapple juice.
- Add this mixture to the reserve liquid and cook until thickened.
- Pour over roast.
- Serve with rice or noodles.

- Preheat oven to 400 degrees F (200 degrees C).
- Mix honey, Dijon mustard, and black pepper together in a bowl until texture of a paste.
- Heat a cast iron skillet over medium-high heat. Cook pork loin in the hot skillet until browned on all sides, about 5 minutes. Transfer pork loin to a baking dish. Spread honey paste over entire pork loin. Spread pineapple chunks around pork loin and sprinkle salt over pork loin.
- Place a cooking thermometer into the pork loin and cover dish with aluminum foil.
- Bake in the preheated oven for 5 minutes. Decrease oven temperature to 375 degrees F (190 degrees C). Continue cooking until pork is cooked through, 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

- Heat broiler. Place pineapple slices on a foil-lined baking sheet.
- In a small bowl, combine hoisin sauce, ginger, garlic, and mustard. Place pork on a broiler pan fitted with a rack. Brush with hoisin mixture; season with salt and pepper.
- Place pork in broiler, about 4 inches from heat; place pineapple in oven. Broil pork until it registers 155 degrees on an instant-read thermometer, 15 to 20 minutes. Remove from broiler (let rest at least 10 minutes before slicing; temperature will rise to 160 degrees as pork sits). Turn pineapple slices; cook until browned in spots, about 10 minutes more.

PORK SHOULDER WITH PINEAPPLE AND SESAME BROCCOLI
Steps:
- Place a roasting pan in oven; preheat to 450°F. Cut shoulder into four 1"-thick steaks; season with salt. Whisk ginger, garlic, 1 Tbsp. vinegar, and 1 Tbsp. soy sauce in a small bowl. Set both aside.
- Remove stalk from broccoli. Peel, trim, and slice into 1/4"-thick planks. Divide broccoli into large florets. Blanch stems and florets in a large saucepan of boiling salted water until bright green, about 10 seconds. Transfer to a rimmed baking sheet; let cool. Pat dry and toss in a medium bowl with shallots, olive oil, and sesame seeds; season with salt.
- Heat vegetable oil in a large skillet, preferably cast iron, over medium-high. Cook reserved pork, undisturbed, until deep golden brown underneath, about 5 minutes. Turn and cook until an instant-read thermometer inserted into the thickest part registers 135°F-140°F for medium, about 3 minutes. Transfer to a cutting board and let rest 10 minutes.
- Pour off fat from skillet and cook pineapple, tossing often and adding a splash or so of water if needed to keep mixture saucy, until slightly softened and browned in spots, about 3 minutes. Add 1 Tbsp. butter along with any pork juices on cutting board; toss until sauce is glossy and emulsified. Stir in remaining 2 tsp. vinegar and soy sauce. Season with salt.
- Meanwhile, transfer broccoli mixture to hot roasting pan. Roast until lightly browned but still crisp-tender, 8-10 minutes. Add to reserved dressing and toss to coat; season with salt. Serve pork with pineapple and broccoli.
