- In a small saucepan, boil 1 cup of port until it is reduced into a syrup of about 2 tablespoons.
- In a mixing bowl, cream together the cream cheese and cheddar cheeses. Season with salt and pepper to taste.
- Then, by hand swirl in the port reduction. Do not fully combine.
- Transfer into a crock for serving and top with a scattering of chopped walnuts and fresh herbs or roll into a 10 - 12 in log or ball and then roll into the nuts and fresh herbs

I always make it around the holidays, or for football and hockey game nights. Everyone begs for this recipe. Turn this into a pub spread by adding a half cup of your favorite dark ale. Use brick cream cheese for a spread, or spreadable cream cheese for a dip. Serve with crispy crackers, toast, or bagels.

This is as close as one can get to the famous restaurant 'bar scheez; spread my mother loved, Win Schuler's®. It became a staple in our house. The horseradish gives the spread that interesting bite.
