Spinach and Goat Cheese Stuffed Potatoes image

These baked potatoes, stuffed with fresh spinach, sun-dried tomatoes, pine nuts and goat cheese are hearty enough to make a delicious meatless dinner.

4 medium baking potatoes (scrubbed)
6 tablespoons butter (divided)
1/4 cup onion (finely chopped)
1 clove garlic (very finely chopped)
1/4 cup sun-dried tomatoes (chopped)
2 tablespoons pine nuts
5 ounces baby spinach leaves
1/2 cup crumbled goat cheese
2 tablespoons heavy cream (optional)
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425°F. Make several small slits in the potatoes with the tip of a sharp knife to vent them.
  • Bake the potatoes for 1 hour, or until they can be easily pierced with a knife. Remove from the oven, reduce the temperature to 350°F, and allow the potatoes to cool for a few minutes before handling.
  • While the potatoes bake, heat 2 tablespoons of the butter in a large pan over medium heat. Add the onion and sauté until soft and translucent, 2 to 3 minutes. Add the garlic and continue cooking 1 minute longer. Add the sun-dried tomatoes and pine nuts, sauté 1 minute, then add the spinach, and continue cooking until wilted and nicely combined with the other ingredients. Season to taste with salt and pepper and set aside.
  • Once the potatoes have cooled, cut a 1/4-inch thick slice from the top of each. Using a teaspoon, scoop the flesh into a mixing bowl, leaving about 1/4-inch of the potato "wall" in tact. Be careful not to break the skins.
  • Add the remaining 4 tablespoons of butter along with the cream (if using) to the potatoes and mash with a fork. Fold in the goat cheese, reserving a little for garnish.
  • Spoon equal portions of the potato-cheese mixture back into each potato, pressing it against the sides to make a cavity for the spinach down the center. Add a portion of spinach to each potato, and top with a little of the reserved goat cheese.
  • Return the potatoes to the oven and bake for 5 to 7 minutes, or until the cheese on top has softened.

2 big handfuls baby spinach
2 tablespoons butter
8 pieces sun-dried tomato packed in oil, drained and finely chopped
2 scallions, trimmed and thinly sliced

2 ounces goat cheese (1/2 a small log), cut into thin slices

Steps:

  • Wash and dry the spinach then chop it coarsely.
  • Heat the butter in a large nonstick ovenproof skillet over medium heat. Stir in the sun-dried tomato and scallion and cook, stirring, until the scallion is wilted, about 2 minutes. Season lightly with salt and pepper. Stir in the spinach and cook until wilted and the water it gives off is evaporated, about 4 minutes.
  • Meanwhile, in a mixing bowl, beat the eggs with salt and pepper to taste.
  • Lower the heat to medium. Pour in the eggs and let them sit a few seconds until they start to set around the edges. Using a plastic spatula push a piece of the set edge gently toward the center. Tilt the pan and let some of the unset egg from the top fill the little gap you just made. Keep going around the edge of the pan like this, until there is no more unset egg on top.
  • Scatter the goat cheese slices over the top of the omelet. Put the skillet under the broiler and leave the oven door open, cook just until the top of the omelet is set and puffed, about 2 minutes.

1 1/4 cups low-fat (1%) milk

4 large egg yolks
4 ounces mild fresh goat cheese, crumbled (about 1 cup)
6 large egg whites
1/8 teaspoon cream of tartar

Steps:

  • Preheat oven to 350°F. Combine garlic and oil in small custard cup. Cover with foil. Bake until garlic is very tender, about 35 minutes. Cool slightly. Add 1 teaspoon salt and 3/4 teaspoon pepper to custard cup and mash to paste. Maintain oven temperature.
  • Spray four 2-cup soufflé dishes with nonstick spray. Sprinkle each with 1 tablespoon breadcrumbs, coating bottom and sides; place dishes on baking sheet. Melt butter in medium saucepan over medium heat. Add flour; whisk until smooth, about 1 minute. Gradually add milk, whisking constantly until mixture boils, thickens, and is smooth, about 2 minutes. Stir in tomatoes, thyme, and garlic mixture. Remove soufflé base from heat.
  • Whisk egg yolks in large bowl to blend. Gradually whisk in hot soufflé base, then fold in goat cheese. Using electric mixer, beat egg whites in another large bowl until foamy. Add cream of tartar; beat until stiff but not dry. Fold whites into soufflé mixture in 4 additions. Divide among prepared dishes.
  • Bake soufflés until puffed and golden, about 25 minutes. Serve immediately.

You can eat these while standing and socializing or sitting watching the games. They can be made ahead of time and frozen, then pulled out and popped into the oven or refried to serve.

16 egg roll wraps
1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
3 cups fresh spinach
1 small red pepper, diced
1 lb bacon, cooked crispy and diced
3 green onions, diced
1/2 cup crumbled goat cheese
1 1/2 tablespoons all purpose Greek seasoning
1 tablespoon salt
vegetable oil (for frying)
1/4 cup sun-dried tomato
1 tablespoon garlic salt
1 tablespoon horseradish
1/2 cup sour cream
1/3 cup mayonnaise
1 tablespoon bacon drippings

Steps:

  • Cook bacon, reserve 1 Tbls dripppings for dip, use the rest of the drippings to saute potatoes for about 5 minutes. Put potatoes, drained of excess grease, into a bowl. Stir in spinach, red peepper, bacon, onions, goat cheese, Greek Seasoning and salt. Let that cool while you mix together the dip. In a food processor, put the dip ingredients in and pulse, about 2 minutes, until you get a nice creamy mixture. Refrigerate until your ready to use.
  • Heat oil to 350. While that is heating take out your wrappers. Take a wrapper, lightly wet the outer edges of wrapper with water so that the wrappers will stick together when rolled, and put 1/2 cup of potato mixture in it and roll according to the directions on the package. Put aside until all the eggrolls are filled. Fry eggrolls for approx 5 minutes or until golden brown. Let them drain and rest on a paper towel until all the eggrolls are cooked. Do not overcrowd eggrolls in the oil. I have a Fry Daddy and it usually fits 4 to 5 at a time. Serve cut on a diagonal with your dip.

This is a delicious tart, full of healthy spinach perfectly complimented by the flavor of the goat's cheese.

Shortcrust Pastry, recipe follows
9 ounces baby spinach or trimmed large spinach leaves
7 baby new potatoes, unpeeled (about 8 ounces)
4 eggs
9 ounces heavy cream
Salt and freshly ground black pepper
Zest of 1/2 lemon
Pinch freshly grated nutmeg
Pinch ground cayenne pepper
1 ounce Parmesan cheese, finely grated
5 ounces goat cheese, cut into 1/4 to 1/2-inch slices
7 ounces all-purpose flour, sifted
Pinch of salt
7 tablespoons chilled butter, cubed
1/2 to 1 medium egg, beaten

Steps:

  • Make the Shortcrust Pastry, recipe follows, leaving to chill for 30 minutes before using. Preheat the oven to 350 degrees F. Line the tart tin with the dough and bake 'blind'. Cook's Note: Blind Baking. To pre-bake a pastry shell before adding filling, first chill the pastry, and then line your pan. Line the pastry with foil, parchment or greaseproof paper, leaving plenty to come up the sides. Fill with baking beans (alternatively, for a really smooth finish use plastic wrap to line the pastry: place 2 sheets over the pastry, add the beans and bring the edges into the center.) Whichever method you choose, bake 'blind' in a 350 degree F oven for 15 to 20 minutes, or until the pastry feels dry. Remove the paper and beans, and brush with a little leftover beaten egg, and return to the oven for 2 minutes. If there are any little holes or cracks in the pastry, just patch it up with any leftover raw pastry before you return it to the oven. Remove from the oven, and set aside in the pan while you make the filling. The pastry can be baked a day in advance and kept covered until you need it. Filling: Wash and dry the spinach, removing any tough stalks and stems, if using large spinach leaves. In a medium-size saucepan, cook the spinach in just the water that's clinging to it, over a low heat until it wilts. Drain the spinach in a colander or sieve, and let cool a little, then squeeze most of the moisture out with your hands, and roughly chop. Meanwhile, steam or boil the potatoes, until just cooked, and cool the potatoes on a tray or board. When the potatoes are cool enough to handle, cut them into 1/4-inch thick slices. In a medium-sized bowl, whisk the eggs, and add the cream, salt, and pepper, lemon zest, nutmeg, cayenne pepper, and grated Parmesan. Whisk these ingredients together, and then add the spinach, and mix through. Season well as the potatoes are very mild and need a good contrast. Spread the potato slices over the base of the prepared tart, and dot with the goat's cheese, reserving a few slices of each to place on the top, if you wish. Gently spoon the spinach cream mixture over the cheese, as high as you can go. If you are concerned about spillage, carry the tart minus the last few spoons of filling over to the oven. Place the pan in the oven, and then add the remaining filling, and any remaining potato, and cheese slices. Bake until the tart is golden brown and just set in the center, about 35 to 40 minutes. Remove the tart from the oven, and let cool for about 10 minutes before serving.
  • Shortcrust Pastry
  • Place the flour, salt, and butter in a food processor and whiz or pulse briefly. Add half the beaten egg and continue to whiz. You might add a little more egg, but not too much as the mixture should be just moist enough to come together. If making by hand, rub the butter into the flour until it resembles coarse bread crumbs. Then, using your hands, add just enough egg to bring the dough together. With your hands, flatten out the ball of dough, until it is about 3/4-inch thick, and then wrap in plastic wrap or place in a plastic bag and leave in the refrigerator for at least 30 minutes or, if you are pushed for time, in the freezer for 10 to 15 minutes. Makes 1 crust (about 14 ounces).

Ready, Set, Cook! Special Edition Contest Entry: Growing up my mom always made pierogies around the holidays. And, being a picky little girl, I always turned my nose up at them. My Hungarian relatives would hang their heads in shame and worry that too much Texas had rubbed off on me. Oh how times have changed! I love pierogies now and especially love playing with different fillings that are far from the traditional sauerkraut filling from my childhood. Simply potatoes mashed potatoes makes it so easy to whip up the pierogie dough and makes for a delicious pierogie. If you haven't ever tried a pierogie, you absolutely must give this recipe a try!

1 1/2 cups bread flour, plus an additional 1/2 cup to cup for kneading and rolling
1 cup Simply Potatoes Traditional Mashed Potatoes, chilled
1 teaspoon salt
1 egg yolk
1 egg white, for sealing the pierogie
1/3 cup crumbled goat cheese
4 green onions, chopped
1/2 cup spinach, chopped
1/2 cup sun-dried tomato, chopped
1/3 cup low-fat sour cream (pierogie chef's choice!) or 1/3 cup cottage cheese (pierogie chef's choice!)
1/2 teaspoon garlic salt
1/2 teaspoon kosher salt
1/2 teaspoon pepper
4 cups salt water
2 tablespoons butter
1/4 cup onion

Steps:

  • In a medium size bowl, combine potatoes, flour, salt, and egg yolk. Work together until a dough forms. Flour a countertop with additional flour and begin to knead the dough for about two minutes. You do not want the dough to be too sticky, so add more flour as kneaded (ha, get it?).
  • Let dough sit while you prepare the filling. In a medium bowl stir together all the ingredient for the filling until combined.
  • Roll pierogie dough out and cut out small circles about 2 1/2 inches in diameter and 1/6 of an inch thick. I know these measurements sound specific, but don't worry if it isn't exact. You just want the dough to be somewhat thin, but not paper thin, and want a wide enough circle so you can stuff the pierogie.
  • Place slightly less than a tablespoon worth of filling into each dough circle. Brush the edges of the dough with egg white and fold one side over top of the other and seal. Make sure the seal is tight. Do this until you have used all the filling.
  • Bring 4 cups of salted water to boil. Once water is boiling, drop pierogies into the water. They will float to the top when they are ready to be pan fried. Let them take their time.
  • In a large skillet melt butter and add onions. Once pierogies are floating transfer them from the water to the skillet. Pan fry about 2 minutes per side. I let mine get pretty brown, but you can opt to cook them for less time. Again, pierogie maker's choice!
  • Once done, remove pierogies from skillet. Serve with chopped onion and sour cream.

1/3 cup Niçoise or other brine-cured black olives, pitted and chopped
2 russet (baking) potatoes (about 1 pound total), scrubbed
3 ounces fresh mild goat cheese, crumbled (about 3/4 cup)
2 tablespoons finely chopped fresh parsley leaves (wash and dry before chopping)

Steps:

  • Preheat oven to 375°F. Coat bottom and sides of an 11- by 8-inch (6-cup) gratin dish or other shallow baking dish with 1 tablespoon oil.
  • In a heavy skillet cook onion in 2 tablespoons oil over moderately low heat, stirring, until softened. Add garlic and cook, stirring, 1 minute. Add herbes de Provence, sugar, tomatoes, bouillon cube, and salt and pepper to taste. Cook mixture, covered, stirring occasionally, 20 minutes and stir in olives.
  • Cut potatoes crosswise into 3/4-inch-thick slices and arrange one third in baking dish. Spread half of tomato mixture over potatoes and top with half of goat cheese. Continue layering potatoes, tomato mixture, and goat cheese in same manner, ending with potatoes. Drizzle remaining tablespoon oil over gratin and bake, covered with foil, in middle of oven 40 minutes. Remove foil and bake gratin 20 to 30 minutes more, or until potatoes are very tender. Sprinkle gratin with parsley.

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Poke a few slits through the skin of the sweet potato with the tip of a knife, then microwave on high for 1 minute. Let cool.
  • Cut off the ends of the sweet potato, then peel. Thinly slice the sweet potato into ⅛ inch (3 mm) thick slices.
  • Add the sweet potato slices to a bowl and toss with olive oil, salt, and pepper.
  • Arrange the sweet potato slices in a 9-inch (23 cm) round baking dish, slightly overlapping so they cover the sides and bottom.
  • Bake for 20-25 minutes, or until the potatoes are softened.
  • In a medium bowl, beat the eggs, salt, and pepper. Add the milk, garlic, and sun-dried tomatoes and whisk to combine.
  • Spread the spinach over the sweet potato crust. Pour in the egg mixture. Top with goat cheese crumbles.
  • Bake for 30 minutes, or until the center of the dish is set and no longer jiggles.
  • Cool for 10 minutes before slicing.
