This side is a great earthy compliment to any dish. Not too sweet, not too nutty just a perfect mix. Apple cider acts as the perfect balance for just a touch of sweetness. This recipe is perfect paired with Beef Tenderloin in a Port Shitake Reduction.

Steps:
- Place the sweet potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
- Mash the potatoes until smooth, then stir in the hazelnuts, heavy cream, sour cream, and apple cider. Season to taste with salt and pepper.

Steps:
- Bring a pot with tight fitting lid of water to a rolling boil.
- To prepare the potatoes take a very sharp knife and score the potato entirely around the center. With a pair of cooking tongs, place the potatoes into the boiling water and cover with lid. Let simmer for about 15 minutes.
- Remove potatoes and place into a bowl filled with water and ice. Let them cool to the touch; just a few minutes. Holding the potato in both palms on either end, with thumbs pull away the skin from the center removing all from the potato in 2 pieces. Repeat for all potatoes.

- Place potatoes in a large pot, and add enough cold water to cover by 2 inches. Add 1 teaspoon salt. Bring to a boil, and cook until tender, about 10 minutes. Drain, and pass hot potatoes through a ricer or a food mill into a large bowl. Cover to keep warm.
- Combine milk, butter, and 1 tablespoon salt in a saucepan over medium heat, and cook until steaming but not bubbling. Add hot-milk mixture to potatoes, and stir until smooth. Stir in oil. Season with pepper.
- Just before serving, beat potato mixture with a whisk until fluffy, 3 to 5 minutes. Season with salt to taste.
SWEET POTATO WITH ROASTED HAZELNUTS
A great make-ahead side dish for Christmas dinner. Served at room temp, with a sweet mustard and maple syrup dressing. As yet untested, from Super Food Ideas Christmas Special, Dec 2006. NB Australian measurements: 1 cup = 250ml

- Preheat oven to 220C (430F). Spread hazelnuts on a baking tray and roast for 10-15 minutes or until skins crack. Wrap nuts in a clean teatowel and rub to remove skins. Chop and set aside.
- Line a large roasting pan with non-stick baking paper. Arrange sweet potato in a single layer, spray with oil and turn to coat. Season with salt and pepper.
- Roast sweet potato, turning once, until golden and tender (15-20 minutes). Set aside to cool to room temperature.
- Dressing: place oil, vinegar, mustard and maple syrup in a screw-top jar. Season with salt and pepper. Secure lid and shake well to combine.
- Place sweet potato and hazelnuts in a large bowl. Drizzle with dressing and toss to combine. Serve.

HAZELNUT PASTRY DOUGH
Steps:
- Toast and skin hazelnuts. In a food processor pulse nuts with 1 teaspoon sugar until finely ground. Add flour, baking powder, and a pinch salt, pulsing to combine. Add remaining 1/3 cup sugar and pulse to combine. Cut butter into small pieces and add to flour mixture, pulsing until mixture resembles coarse meal. In a small bowl lightly beat together egg, Frangelico or hazelnut extract, and vanilla. Add egg mixture to butter mixture, pulsing until mixture forms a dough. Dough may be kept, wrapped in plastic wrap and chilled, up to 3 days. Bring dough to room temperature before using.
SCALLOPED POTATOES WITH HAZELNUTS

Steps:
- Rub the inside of a porcelain or enamel gratin dish (14 by 9 by 2) with garlic.
- Melt butter in small pan and saute hazelnuts in hot butter for 2 to 3 minutes, until nuts are thoroughly coated with butter. Remove from heat and reserve.
- Preheat oven to 375 degrees.
- In large mixing bowl combine potatoes, cheeses, milk, cream and salt and pepper to taste. Mix well and spoon into baking dish, pouring liquid over potato slices. Bake at 375 degrees for 10 minutes; reduce heat to 350 degrees and continue baking 35 minutes.
- Sprinkle potatoes with hazelnuts and butter mixture and bake additional 15 minutes, or until nuts are golden and potatoes are cooked.
