Best Paleo Burgers {with Buns & Burger Sauce!} image

These classic paleo burgers taste just like the real deal but are made with better-for-you ingredients! Juicy grass-fed beef patties, grain free buns, a dairy and soy free burger sauce and thick cut bacon make these the best loaded paleo burgers you'll try.

5 Paleo Burger Buns*
1/3 cup paleo mayo
2 Tbsp mustard
2 Tbsp paleo ketchup
1 Tbsp coconut aminos
1 tbsp dill pickle relish
1/2 tsp onion powder
1/2 tsp garlic powder
Hot sauce (to taste (optional))
1 Tbsp avocado oil
1 1/4 lbs grass-fed ground beef (80% lean)
2 cloves garlic (minced (optional))
Coarse sea salt and black pepper
6 slices bacon ((I used thick-cut) cooked until crisp)
Sliced Dill Pickles (no added sugar)
Thinly sliced red onion
Thinly sliced tomatoes
Lettuce

Steps:

  • Have the burger buns baked, cooled and sliced before beginning.*
  • Cook the bacon to preference first and set aside. To make the sauce, whisk together all ingredients in a medium bowl until well combined. Adjust any seasonings to taste and set aside.
  • Shape your burgers. It's important not to overwork the meat while shaping so the burgers stay juicy! I don't like adding much more than sea salt and pepper to my burgers - a little minced garlic is an optional add-in. Shape 5 patties (1/4 lb each) so they're about 1/4-1/2" thicker around the perimeter than the inside - this will help prevent the burgers from puffing up in the middle. Mine were about 3/4" on the outside. Sprinkle with sea salt and black pepper as you shape them.
  • The burgers can be grilled or pan-fried. Preheat your grill to high heat or skillet (or grill pan) to high heat and brush with oil. Cook for a total of 5 minutes for medium rare and 6-7 minutes for medium. The total time will depend on the exact thickness of your patties and the heat of your stovetop or grill. Use a meat thermometer to be more exact about the timing for your desired doneness.
  • Time to layer your burgers! Start off with a slather of sauce on the bottom bun, followed by lettuce, tomato, onions, pickles, bacon, the burger patty, and more sauce. Feel free to layer the burgers however you like, but I recommend using the sauce on both the top and bottom buns.
  • Serve the burgers right away and enjoy!

Steps:

  • Add ground beef to large mixing bowl. In a food processor, combine scallions, garlic and Serrano. Pulse until well combined and add to ground beef. Dice yellow onion and sauté with coconut oil over medium to medium high heat until translucent. Add onions to ground beef mixture. Add 1 egg to meat mixture. Mix well. Form beef into 4 equal patties. In frying pan, add some coconut oil on medium to medium-high heat. When oil is hot, add patties. Cook for about 3 to 4 minutes on each side or desired wellness. Set Aside. Use the oil from the patties to cook eggs (over easy, sunny side up, etc) Sprinkle with pepper. Set Aside. Toss Portobello mushrooms with olive oil and oregano. Grill on George Foreman for about 2 to 3 minutes. Set aside. Assemble: Place one piece of green leaf lettuce on plate. Place cooked patty on top. Add egg. Add one or two pieces of sliced tomato. Add 2 to 3 slices of Avocado. Drizzle with Chimichurri Sauce.
