PUFF PASTRY PINWHEELS WITH CANDIED FRUIT

Puff Pastry Pinwheels with Candied Fruit image

These cookies are best enjoyed the same day they are made.

Yield Makes about 5 dozen

Number Of Ingredients 10

1/2 cup sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
Additional sugar
1 17.3-ounce package frozen puff pastry (2 sheets), thawed
1/4 cup unsalted butter, melted
2 cups chopped mixed candied fruit (such as glacéed pineapple, cherries, orange peel, and sweetened dried cranberries)
1 egg, beaten to blend

Steps:

  • Mix first 5 ingredients in small bowl. Sprinkle work surface generously with additional sugar; place 1 puff pastry sheet on sugared surface. Cut sheet in half, forming two 9 1/2x4 1/2-inch rectangles. Brush each rectangle generously with some of melted butter, leaving 1-inch plain border along 1 long side of each. Sprinkle buttered part of each rectangle with 1 1/2 tablespoons spiced sugar. Scatter 1/2 cup candied fruit over spiced sugar on each. Brush border of each with egg. Starting at long side opposite glazed border, tightly roll up each rectangle, pressing firmly to seal long edges. Wrap each log separately in plastic. Repeat with remaining pastry sheet, butter, spiced sugar, candied fruit, and egg to create 2 more logs. Chill logs until firm, at least 3 hours and up to 1 day.
  • Position 1 rack in center and second rack in top third of oven and preheat to 400°F. Line 2 baking sheets with parchment paper. Using serrated knife, cut 2 logs into 1/2-inch-thick rounds (keep remaining 2 logs chilled). Arrange rounds on prepared sheets, spacing 1 inch apart. Bake 12 minutes, then reverse position of sheets and bake until cookies are golden brown, about 12 minutes longer. Cool cookies on sheets on racks 5 minutes. Using spatula, transfer cookies to racks, bottom side up. Cool completely. Repeat slicing and baking with remaining 2 logs. (Can be made 8 hours ahead. Store airtight between sheets of waxed paper.)

Number Of Ingredients 5

1 (17 1/4 ounce) package frozen puff pastry, thawed (2 sheets)
1 egg, beaten to blend (glaze)
1/2 cup sugar
1/2 cup jam (such as raspberry, apricot and kiwi)
powdered sugar (optional)

Steps:

  • Preheat oven to 400°F Lightly butter 2 heavy large baking sheets. Roll out 1 puff pastry sheet on lightly floured surface to 16x13-inch rectangle. Trim edges neatly, forming 15x12-inch rectangle. CHEDDAR AND BACON PINWHEELS

Cheddar and Bacon Pinwheels image

Provided by Jeff Mauro, host of Sandwich King

Categories     appetizer

Time 40m

Yield 24 pinwheels

Number Of Ingredients 8

8 slices bacon
6 ounces cream cheese, at room temperature
6 scallions, green part only, thinly sliced
Kosher salt and freshly ground black pepper
2 sheets frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for dusting
4 ounces Cheddar, grated
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
  • In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
  • Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
  • Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
  • Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.

PESTO PUFF PASTRY PINWHEEL

Pesto Puff Pastry Pinwheel image

With three main ingredients you can make this gorgeous giant puff pastry pinwheel in no time. Pesto and ricotta fill layers of puff pastry that are cut and twisted into a pinwheel which begs to be pulled apart!

Provided by Magda

Categories     Pastry Appetizers

Time 50m

Yield 8

Number Of Ingredients 4

2 sheets puff pastry
2 teaspoons all-purpose flour, or as needed
8 ½ ounces ricotta cheese
8 ½ ounces pesto

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking tray with parchment paper and dust lightly with flour.
  • Lay puff pastry on a flat work surface; cut a 12-inch circle from each sheet. Transfer 1 circle to the prepared baking sheet.
  • Spread ricotta evenly over the pastry circle. Top with an even layer of pesto. Lay the second pastry circle on top. Set a small glass upside down in the middle of the circle.
  • Cut the circle, away from the glass, into 4 equal quarters. Cut each quarter in half, then each eighth in half, to make 16 equal strips. Remove glass. Twist strips twice, two at a time, in the opposite direction. Pinch ends together. Repeat with remaining strips to make a pinwheel shape.
  • Bake in the preheated oven until pastry is browned, 25 to 30 minutes.
