Nothing warms up a cool night like a plateful of old-time corn fritters! Dig in, these are delicious!

Steps:
- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

Yummy zucchini corn fritters that my family can't get enough of. These fritters are light and fluffy with lots of zucchini and fresh corn. Cheese is optional, but not in my house. Serve hot with ranch dressing.

- In a large bowl, stir together flour, baking powder, cumin, sugar, salt, and pepper.
- In a small bowl, whisk together eggs, milk, and butter. Whisk wet ingredients into dry ingredients. Stir in zucchini, corn, and cheese; mix well.
- Warm oil in a cast iron skillet over medium-high heat. Drop batter by the tablespoonful into hot oil. Fry until crisp and brown, turning once with tongs. Remove to paper towels.

BISQUICK CORN FRITTERS
Steps:
- In a small bowl, whisk together Bisquick baking mix, salt, black pepper, and Parmesan cheese.
- In a separate bowl, beat the eggs and stir in corn and onion.
- Add the Bisquick-cheese mixture into the corn-egg mixture and mix gently. Do not over mix! Stir just until the mixture has moistened.
- In a large skillet, melt the butter and vegetable oil over medium heat. Once the butter has melted, drop spoonfuls of batter into the hot skillet. Flatten the fritters with a spoon. Cook the fritters for about 3 minutes per side, or until golden brown.
- Place the cooked fritters on a plate lined with paper towels to absorb any excess grease.

- Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. Serve with Greek yogurt.

Steps:
- Dry ingredients: Whisk the flour, sugar, salt, and baking powder together in a large mixing bowl. Add the corn and stir to coat in the flour mixture.
- Batter: Mix the cream and eggs together, then pour into the mixing bowl. Stir everything together until a wet batter forms. It should be a thick batter. See recipe notes.
- Fry: Add enough vegetable oil to fully coat the bottom of your skillet. You'll have to do this in batches. Drop 2-4 quarter cup portions of batter, as many as your skillet can handle, and cook for 2-3 minutes over medium heat or until the bottom turns golden brown. Flip and cook for another 2-3 minutes. Adjust the heat as necessary. Repeat with remaining batter.
- Serve: Serve sprinkled with chives and a dollop with sour cream.

- 2. In a mixing bowl combine flour, baking powder, salt, and pepper. Add eggs, milk, and hot pepper sauce. Mix well. Stir in slightly cooled vegetable mixture.
- 3. In a large skillet, heat cooking oil over medium heat. Drop corn mixture by heaping tablespoonfuls, 4 or 5 at a time, into hot oil. Flatten slightly with the back of a spoon. Cook about 4 minutes or until brown, turning once. (If fritters brown too quickly, reduce heat.) Drain on paper towels. Serve warm with meat or poultry. Makes twelve

CORN FRITTERS
Steps:
- Mash the corn kernels in a large bowl using a potato masher or a mojito muddler until most corn kernels are broken and some juice comes out. You can also pulse the corn in a food processor for a few seconds just to break them - be careful not to over-process and turn them into creamed corn.
- Add the rest of the ingredients (jalapeno through salt) and mix well. I just used the same mojito muddler for mixing everything together - no need to get a whisk or another utensil dirty!
- Heat 1-2 tablespoons of olive oil in a pan. Use a heaping tablespoon or a melon baller to add the corn batter to the pan. Cook for about 3 minutes over medium heat, or until golden brown. Carefully flip and cook for another 3 minutes, or until the corn fritters are golden brown and cooked through.Serve with some fresh cilantro and a squeeze of lime juice.

- In a large bowl, whisk the first 8 ingredients. In another bowl, whisk egg and milk until blended. Add to dry ingredients, stirring just until moistened. Let stand 5 minutes. BANANA CORN FRITTERS
Serve as a side, snack or appetizer. Savory, smoky and slightly sweet - plus only 30 minutes start to finish! From my local newspaper which always publishes the greatest recipes! *Chipotle peppers are dried, smoked jalapeño peppers. The ground chipotle used in this recipe can be found in the Mexican/Spanish food section of your supermarket - or possibly in the spice section. This would make a great vegetarian meal served with black bean soup, coleslaw or crusty whole-grain bread.

- Preheat oven to 400°F, and coat a baking sheet with cooking spray.
- Whisk dry ingredients in a medium bowl;*Use only the 1/4 t chipotle if you don't want much heat; using cayenne will not give the same smoky flavor.
- In another medium bowl mix the banana, egg and milk; stir in the cornmeal mixture just until mixed (don't overdo).
- Heat 1 T oil in nonstick skillet over medium-high heat, then REDUCE heat to medium; Using about 2 T of batter, drop and space 5 fritters in the pan; Cook until golden brown, 30 seconds to 2 minutes per side.
- Transfer to the baking sheet and using the remaining oil make the rest of the fritters - Be sure to CHECK AND ADJUST your heat to prevent burning.
- Place the baking sheet with all the fritters into the oven and bake till they PUFF and get firm to touch, about 8 to 10 minutes.
- *To make these to serve later: complete the baking, refrigerate and reheat at 350°F for 15-20 minutes.
- *To use as an appetizer, top with creme fraiche. Yummy!
