Chocolate-Glazed Ginger-Pumpkin Muffins image

This pumpkin recipe is a keeper -- especially with the luscious chocolate glaze on top. These pumpkin muffins are the perfect breakfast on a busy morning.

2 cup all-purpose flour
0.667 cup packed brown sugar
0.333 cup granulated sugar
2 teaspoon baking powder
1 teaspoon ground cinnamon
0.5 teaspoon ground ginger
0.25 teaspoon salt
0.75 cup canned pumpkin
0.5 cup butter, melted
0.5 cup buttermilk
2 eggs
Chocolate Glaze
1 - 2 tablespoon finely chopped crystallized ginger

Steps:

  • Preheat oven to 400°F. Line sixteen 2-1/2-inch muffin cups with paper bake cups; set aside. In a medium bowl stir together flour, brown sugar, granulated sugar, baking powder, cinnamon, ground ginger, and salt. Make a well in the center of the flour mixture; set aside.
  • In a small bowl stir together the pumpkin, melted butter, buttermilk, and eggs. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Spoon batter evenly into prepared muffin cups.
  • Bake for 18 to 20 minutes or until a wooden toothpick inserted in the centers of muffins comes out clean. Remove muffins from muffin cups; cool completely on a wire rack.
  • Dip the tops of the muffins into the Chocolate Glaze, allowing excess glaze to drip off. Place dipped muffins upright on the wire rack. Sprinkle tops of muffins with chopped crystallized ginger. Let stand for 30 minutes or until glaze sets.

2 teaspoons baking soda
1 teaspoon baking powder
3 teaspoons pumpkin pie spice
½ teaspoon kosher salt
1 cup coconut sugar
3 large eggs (at room temperature)
2 cups plain pumpkin puree
½ cup extra-virgin olive oil
¼ cup kefir
1 teaspoon vanilla extract
½ cup chopped candied ginger
8 ounces bittersweet chocolate (finely chopped)
3 tablespoons raw pumpkin seeds

Steps:

  • Preheat the oven to 350°F. Spray two 12-cup muffin tins with nonstick cooking spray or use paper liners. Set aside.
  • In a large bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, salt, and sugar. In a separate medium bowl, whisk together the eggs, pumpkin, olive oil, kefir, and vanilla until blended. Pour the wet ingredients into the dry and use a rubber spatula to mix together just until combined. Fold in the chopped ginger.
  • Fill the muffin tins about ¬æ full and bake for 20 minutes or until a toothpick inserted in the center comes out with only a few moist crumbs. Allow the muffins to cool in the tins for 15 minutes then remove from the tins and place on a wire rack cool completely.
  • Meanwhile, melt the chocolate in the microwave in 10-second intervals on high, stirring with a rubber spatula in between. When it is about 80% melted, remove it from the microwave and stir until it is completely smooth. Dip the top of each muffin in the chocolate, allowing the excess to drip off. Sprinkle with the pumpkin seeds and let stand for 15 minutes to set.

1 cup butter, room temperature

Steps:

3/4 cup plus 2 tablespoons cooked pumpkin puree or canned solid pack pumpkin
1/2 cup plus 2 tablespoons low-fat buttermilk
1 teaspoon vanilla extract
2 large egg whites
1 large egg
3/4 cup plus 3 tablespoons (packed) golden brown sugar
1/2 cup unsulfured (light) molasses
1/4 cup vegetable oil

Steps:

  • Preheat oven to 375°F. Line sixteen 1/3-cup muffin cups with paper liners. Mix 2 1/2 tablespoons crystallized ginger, currants and brandy in small bowl.
  • Sift flour, ground ginger, pumpkin pie spice, baking soda and salt into medium bowl. Whisk pumpkin puree, buttermilk and vanilla in another bowl. Using electric mixer, beat egg whites and egg in large bowl until foamy. Add 3/4 cup plus 2 tablespoons brown sugar; beat until light, about 2 minutes. Beat in molasses and oil. Beat in dry ingredients alternately with pumpkin mixture in 3 additions each. Stir in currant mixture.
  • Divide batter among prepared muffin cups. Mix 3 tablespoons crystallized ginger and 1 tablespoon brown sugar in small bowl. Sprinkle evenly over muffins.
  • Bake muffins until tester inserted into center comes out clean, about 25 minutes. Cool on rack.

Steps:

  • In large bowl, sift together the flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves.

  • Add the flour mixture alternately with the milk, blending well.

1 cup canola oil
1/3 cup water
2 1/2 cups granulated sugar
3 teaspoons vanilla
3 1/2 cups Gold Medal™ all-purpose flour
2 tablespoons ground cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 cup crystallized ginger, finely chopped

Steps:

  • Heat oven to 350°F. Line 15x10x1-inch pan with cooking parchment paper. Spray regular-size muffin cups with cooking spray.
  • In medium bowl, toss pecans with egg white until well coated. Add 3 tablespoons granulated sugar, 2 teaspoons ground ginger and the kosher salt; toss until coated.
