SOFT DINNER ROLLS RECIPE

Soft Dinner Rolls Recipe image

Irresistibly Soft Dinner Rolls are easy to make with just 6 ingredients. There's nothing like fluffy warm homemade dinner rolls. These are holiday-worthy bread rolls!

Provided by Natalya Drozhzhin

Categories     Easy

Time 3h40m

Number Of Ingredients 8

1 1/2 cup whole milk (warmed to 110F)
4 Tbsp unsalted butter (melted)
1 Tbsp active dry yeast
1/3 cup granulated sugar
1 1/4 tsp salt ((we used fine sea salt))
4 cups all-purpose flour
1 Tbsp unsalted butter (melted to brush the tops of dinner rolls)
1/2 tsp kosher salt (to sprinkle finished rolls)

Steps:

  • In the bowl of your mixer, whisk together warm milk (about 110F) and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit 1 minute. Whisk together and let it sit for about 5 minutes until yeast looks foamy. Add 4 Tbsp melted butter, remaining sugar and salt.
  • Add flour half a cup at a time until the dough whisking to incorporate. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2 (you can also continue mixing by hand with a stiff spatula). Add about 4 cups of flour, adding the last 1 to 3 Tbsp of flour only if needed. The dough should feel sticky and tacky but should not stick to clean/dry finger tips.
  • Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand (10 min), then place dough in an oiled bowl. Cover it with plastic wrap and let it rise about 2 hours in a warm place or until doubled in size.
  • Once the dough rises, turn it out onto a lightly floured surface and cut it into 15-24 even pieces depending on the shape of your baking dish. Roll each piece of dough into a ball and place them onto an oiled 9x13 casserole dish or baking sheet.
  • Cover the dinner rolls with plastic wrap and let them rise another 30-60 minutes in a warm place or until puffed (do not over-proof). Bake at 375F for about 23-25 minutes or until the tops are golden brown.
  • Immediately brush tops of dinner rolls with melted butter and set aside to cool to room temperature before serving.

QUICK AND EASY SOFT DINNER ROLLS

Quick and Easy Soft Dinner Rolls image

Softest and tastiest dinner bread rolls! Buttery, moist, and delicious. You can make this in 90 minutes or less with my fast-rising single proof dough.

Provided by Mella

Categories     Breakfast     Snack

Number Of Ingredients 11

1 1/2 cup fresh milk + 1 tsp sugar (lukewarm, see note 1)
1 tbsp instant yeast (or rapid rise yeast)
2 cup bread flour (see note 2)
2 cup all-purpose flour (see note 2)
1 1/2 tsp salt
1/2 cup unsalted butter (softened, slice into cubes)
1/4 cup white sugar
2 large egg yolks (room temperature)
1 egg, whisked (for optional egg wash)
1 tbsp butter (melted)
1 tbsp honey (optional)

Steps:

  • Place milk and 1 tsp sugar in a microwave-safe cup. Heat for 30 seconds. Check if the temperature is LUKEWARM by dipping your finger or a kitchen thermometer. If it's still cold, heat for another 10 seconds until it reaches 40c/104f.
  • Add yeast, stir and let it proof for 10 minutes until it froths.
  • Meanwhile, prepare the rest of the ingredients. In the bowl of a stand mixer combine flour, salt, and sugar. Whisk to combine. Separate egg yolks from the egg whites. Set aside.
  • Add proofed yeast and eggs to the flour mixture. Stir with a spatula until just combined. Attach the dough hook and turn the mixer on to the lowest speed. Add the cubes of butter one at a time while running the mixer at medium-low speed. Beat for 2 minutes. Stop the mixer to scrape down the sides of the bowl.
  • Increase speed to medium-high. Beat for 8 minutes, scraping down the sides of the bowl every now and then. While beating, add flour as necessary until dough becomes less sticky. Start with 2 tablespoons and go from there. I added about 4-5 tablespoons more bread flour.
  • Scrape dough on a work surface dusted with flour. Form into a smooth bowl and let it rest for 10 minutes.
  • Line baking tray with baking paper.
  • Divide the dough into 16 large rolls (approx 70g each) or 24 smaller rolls and shape into a smooth ball. For an evenly sized dough, use a kitchen scale. Mine was about 47g each to make 24 rolls. Adjust based on your preference.
  • Place the ball in the tray. Repeat with the remaining dough. Cover with a kitchen towel and let it rise for 30mins up to 40 mins depending on room temperature.
  • Preheat oven at 180c/356f, 20 minutes before the dough rolls finishes rising.
  • Gently brush the top of each roll with egg wash. This is optional.
  • Bake for 18 to 20 minutes until the top turns light brown. If you're using two racks, switch the trays after 12 minutes so all the rolls will brown evenly.
  • Brush with a mixture of melted butter and honey while warm. Enjoy!

  • In a large mixing bowl, whisk together the warm milk (1 cup), honey (1/4 cup), and instant dry yeast (1 packet) until yeast and honey are fully dissolved. Whisk in the kosher salt (1 teaspoon), egg, and 1/4 cup (4 tablespoons) of the melted butter, until everything is well-combined.
  • Add the flour to the bowl 1/2 cup at a time, until dough easily comes off the sides of the bowl and forms a sticky ball in the center. Use a wooden spoon to stir. I had to use all three cups of flour, but you may need less or even a bit more.
  • Grease the bottom of a 9" round pan (see notes for alternatives) with 1 tablespoon of the butter, generously coating the bottom and sides.
  • Form 12 equal-ish balls with the dough and place them in the prepared pan. The dough is quite sticky, so this may be a little frustrating, but I found it helpful to coat my hands in a little melted butter as I worked (or, use olive oil or flour to coat your hands). You can also use a large disher scoop to help get the dough out of the bowl.
