Steps:
- In the bowl of your mixer, whisk together warm milk (about 110F) and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit 1 minute. Whisk together and let it sit for about 5 minutes until yeast looks foamy. Add 4 Tbsp melted butter, remaining sugar and salt.
- Add flour half a cup at a time until the dough whisking to incorporate. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2 (you can also continue mixing by hand with a stiff spatula). Add about 4 cups of flour, adding the last 1 to 3 Tbsp of flour only if needed. The dough should feel sticky and tacky but should not stick to clean/dry finger tips.
- Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand (10 min), then place dough in an oiled bowl. Cover it with plastic wrap and let it rise about 2 hours in a warm place or until doubled in size.
- Once the dough rises, turn it out onto a lightly floured surface and cut it into 15-24 even pieces depending on the shape of your baking dish. Roll each piece of dough into a ball and place them onto an oiled 9x13 casserole dish or baking sheet.
- Cover the dinner rolls with plastic wrap and let them rise another 30-60 minutes in a warm place or until puffed (do not over-proof). Bake at 375F for about 23-25 minutes or until the tops are golden brown.
- Immediately brush tops of dinner rolls with melted butter and set aside to cool to room temperature before serving.

QUICK AND EASY SOFT DINNER ROLLS
Steps:
- Place milk and 1 tsp sugar in a microwave-safe cup. Heat for 30 seconds. Check if the temperature is LUKEWARM by dipping your finger or a kitchen thermometer. If it's still cold, heat for another 10 seconds until it reaches 40c/104f.
- Add yeast, stir and let it proof for 10 minutes until it froths.
- Meanwhile, prepare the rest of the ingredients. In the bowl of a stand mixer combine flour, salt, and sugar. Whisk to combine. Separate egg yolks from the egg whites. Set aside.
- Add proofed yeast and eggs to the flour mixture. Stir with a spatula until just combined. Attach the dough hook and turn the mixer on to the lowest speed. Add the cubes of butter one at a time while running the mixer at medium-low speed. Beat for 2 minutes. Stop the mixer to scrape down the sides of the bowl.
- Increase speed to medium-high. Beat for 8 minutes, scraping down the sides of the bowl every now and then. While beating, add flour as necessary until dough becomes less sticky. Start with 2 tablespoons and go from there. I added about 4-5 tablespoons more bread flour.
- Scrape dough on a work surface dusted with flour. Form into a smooth bowl and let it rest for 10 minutes.
- Line baking tray with baking paper.
- Divide the dough into 16 large rolls (approx 70g each) or 24 smaller rolls and shape into a smooth ball. For an evenly sized dough, use a kitchen scale. Mine was about 47g each to make 24 rolls. Adjust based on your preference.
- Place the ball in the tray. Repeat with the remaining dough. Cover with a kitchen towel and let it rise for 30mins up to 40 mins depending on room temperature.
- Preheat oven at 180c/356f, 20 minutes before the dough rolls finishes rising.
- Gently brush the top of each roll with egg wash. This is optional.
- Bake for 18 to 20 minutes until the top turns light brown. If you're using two racks, switch the trays after 12 minutes so all the rolls will brown evenly.
- Brush with a mixture of melted butter and honey while warm. Enjoy!

- In a large mixing bowl, whisk together the warm milk (1 cup), honey (1/4 cup), and instant dry yeast (1 packet) until yeast and honey are fully dissolved. Whisk in the kosher salt (1 teaspoon), egg, and 1/4 cup (4 tablespoons) of the melted butter, until everything is well-combined.
- Add the flour to the bowl 1/2 cup at a time, until dough easily comes off the sides of the bowl and forms a sticky ball in the center. Use a wooden spoon to stir. I had to use all three cups of flour, but you may need less or even a bit more.
- Grease the bottom of a 9" round pan (see notes for alternatives) with 1 tablespoon of the butter, generously coating the bottom and sides.
- Form 12 equal-ish balls with the dough and place them in the prepared pan. The dough is quite sticky, so this may be a little frustrating, but I found it helpful to coat my hands in a little melted butter as I worked (or, use olive oil or flour to coat your hands). You can also use a large disher scoop to help get the dough out of the bowl.
