SHRIMP PASTA SALAD
This easy shrimp pasta salad is ready in minutes! Made with healthy ingredients, veggies and bright lemon dressing. Perfect for potlucks.

Steps:
- Cook the pasta to al dente according to the package instructions. Drain in a colander, then rinse with cold water to stop the cooking. Shake off as much water as possible. Let the colander with the pasta sit in the sink or on a towel to continue draining while you prepare the rest of the salad.
- In a small bowl or large measuring cup, whisk together the dressing ingredients: Greek yogurt, lemon juice, honey, white vinegar, Dijon, salt, black pepper, and cayenne pepper.
- In a large serving bowl, place the shrimp, celery, bell pepper, peas, green onion, and dill. Shake the pasta once more, then add it to the bowl. Drizzle with the dressing and stir gently to combine. Taste and adjust the seasoning as desired.
- If time allows, place the pasta in the refrigerator and chill for 1 hour prior to serving. Enjoy directly from the fridge or at room temperature.

- Cook the pasta until it is Al Dente (follow directions on the box), drain and place in a mixing bowl.
- Add the shrimp, diced tomatoes, and green onions to the pasta while it is still hot. Pour in a little bit of the Italian dressing, sprinkle in some salt, and mix gently to combine the ingredients.
- Repeat another layer of Italian dressing and salt as desired, and mix the ingredients gently.

- Note: Cook the pasta & shrimp before starting on the salad.
- Mix the ingredients together for the dressing & set aside.
- Bring the water to a boil the add the vegetables (besides the pepper). Cook for 2 minutes or until tender-crisp. Immediately run under cold water to stop cooking.

QUICK SHRIMP & PASTA

- In a large pot, boil water for pasta.
- Add salt and film the top of the water with Vegetable Oil When the water starts boiling, add the pasta.
- Stir.
- In a saute' pan, heat the butter and olive oil together.
- Add the red pepper flakes (more or less to taste) Toast the pepper flakes until sizzling.
- Add shrimp and toss to coat.
- Add white wine, lower to simmer for 5 minutes.
- When pasta is done, drain and add to saute pan.
- Toss, season to taste with salt and pepper.
- Garnish with grated Parmesan cheese.
SHRIMP PASTA SALAD
Now that it's finally spring, I thought I'd post a favorite and simple salad. I have no idea who gave me the original recipe, but I have made some changes over time to suit our tastes. If the shrimp are bland, I marinate them for at least 30 minutes in Italian dressing. Drain and then combine with the other ingredients as posted. The preparation time does not include cooking and peeling the shrimp or the chilling time.

- Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain very well. Transfer to large bowl.
- Whisk 3 tablespoons sesame oil, honey, soy sauce, vinegar and cayenne pepper in small bowl to blend. Season with salt. Mix half of dressing into pasta. Heat remaining 1 tablespoon oil in heavy large pot over medium-high heat. Add bell peppers, peas and onion and sauté until just beginning to wilt, about 2 minutes. Add vegetables to pasta. Mix in peanuts, basil and enough dressing to coat. Serve, passing any remaining dressing separately.
QUICK CHINESE SHRIMP PASTA SALAD
Easy to make with ingredients you probably already have on hand. Plenty for a lunch and leftovers to snack on later!

- Into a medium size pot put enough water to boil the shrimp in, adding white wine, lime juice, or other flavorings if you'd like. I used a splash of lime juice and Jose Quervo classic margarita.
- Cook shrimp until pink, remove with slotted spoon and set aside.
- Keep the water boiling, and into the same pot add your pasta and cook as package directs. While the pasta is cooking, slice up the green onions.
- Drain the pasta, discarding the cooking water at last.
- To serve, spoon some of the hot cooked pasta into a bowl, top with the cooked shrimp, sesame dressing to taste and sprinkle with green onions.
