RACHAEL RAY'S VEGETERRANEAN PIZZA
This is an easy-to-make, fabulous appetizer or main dish. Unlike other Mediterranean pizzas posted on the Zaar, this one features ricotta cheese as the base. The rest of the ingredients are easily substituted according to personal tastes. I like it with spinach, kalamata olives, sauteed mushrooms, and fresh Roma tomatoes.

Steps:
- Preheat oven to 425°F.
- Grease cookie sheet.
- Unroll dough; place on greased cookie sheet.
- Starting at center, press out dough with fingers to form 15x10-inch rectangle.
- Sprinkle with salt & pepper & lightly drizzle with extra virgin olive oil.
- Bake at 425°F for 7 minutes or until crust just begins to brown. Remove from oven.
- Spread ricotta, smoked Gouda, & roasted garlic on top.
- Distribute onions, tomatoes & eggplant on pizza and put back in oven for 6-8 minutes or until crust is golden brown.

Steps:
- Preheat oven to 450 degrees F.
- Cover pizzas with cheese, 1 sack per shell. To each pizza, add about 1/2 teaspoon each of oregano, red pepper flakes and garlic powder. Bake until cheese is brown and bubbly, 8-10 minutes.
- Grind olives in food processor.
- Using a cake spatula or a rubber spatula, spread olives onto hot pizzas fresh from the oven, leaving a 4 inch wide circular space at the center of the pizza. Add roasted red peppers to the center of each pizza. Finished pizzas should look like vinyl records.
RACHAEL RAY'S ANTIPASTO PIZZA
I saw this prepared on 30 Minute Meals and am posting it to try later. When I prepared this, I mixed in about 2 tablespoons of italian dressing with the toppings and put the "salad" on just before serving. Tastes great that way too!

Steps:
- Heat the oven to 425 degrees F.
- Press dough onto baking sheet and top with garlic, cheeses, and pepper flakes and freshly ground black pepper, to taste, and bake 15 to 18 minutes.
- Top the cooked pizza with lettuce, salami, roasted peppers, hot peppers, artichokes or mushrooms and olives, cut into squares and serve.

RACHAEL RAY ITALIAN PIZZA "THE ONLY PIZZA YOU'LL EVER WANT TO EAT"
Steps:
- 1) Preheat oven to 500 degrees F.
- 2) On a 12-inch nonstick pizza pan, stretch out your dough and form the pizza crust. Drizzle 2 teaspoons extra virgin olive oil on crust and spread it with a pastry brush over the dough to the edges. Sprinkle crust with 2 tablespoons grated Parmigiano-Reggiano.
- 3) In a small covered saucepan, bring 2 inches water to a boil.
- 4) Separate broccoli tops into florets, discarding lower stalks or reserving for soup. Salt water and add broccoli florets. Cook covered 3 to 5 minutes. Drain broccoli and set on cutting board. Chop broccoli florets into small pieces.
- 5) Heat a small nonstick pan over medium high to high heat. Add oil, cracked garlic and chicken. Season with salt and pepper. Brown chicken breast cut for stir-fry or tenders until lightly golden all over, 3 to 5 minutes. Chop sauteed chicken and garlic on a cutting board into small pieces.
- 6) To assemble pizza, dot crust with chopped broccoli bits and cooked chopped chicken. Dot crust with spoonfuls of ricotta and spread ricotta gently with the back of your spoon. Add sliced sun-dried tomatoes, scattering them around the pizza to the edges. Complete the assembly with a thin layer of shredded mozzarella, about 1 cup.
- 7) Place pizza in oven on middle rack and lower heat to 450 degrees F. Bake 12 minutes, until cheese is deep golden in color and crust is brown and crisp at the edges. Remove pizza from the oven and let stand 5 minutes. Top with lots of torn or shredded basil. Cut pizza into 8 slices using pizza wheel and serve.

- Position a rack in the bottom third of the oven and preheat to 500 degrees . In a skillet, cook the bacon until nearly crisp, 8 to 10 minutes. Drain on paper towels. Reserve the bacon fat.
- Grease a baking sheet with 1 tablespoon bacon fat, place the pizza dough on top and press and stretch the dough as close to the pan edges as possible. Sprinkle half of the cheese over the dough; bake for 5 minutes.
- In a pot of boiling, salted water, cook the brussels sprouts and cauliflower for 1 minute. Drain in a colander and rinse with cold water until cool. Transfer to a large bowl and add the sun-dried tomatoes, garlic, olive oil, salt and plenty of pepper; toss well. Spoon the veggie mixture evenly over the dough, halve the bacon crosswise and scatter on top; sprinkle the pizza with the remaining cheese.
- Bake the pizza until the crust is golden-brown and the cheese is bubbly, 10 to 12 minutes. Let cool slightly before serving.
