1 tablespoon olive oil
1 medium onion, chopped
1 red bell pepper, seeded and chopped
1 celery, chopped
2 garlic cloves, minced
1 lb Italian turkey sausage, mildly spicy, casings removed
1 lb boneless skinless chicken thighs, cut into medium chunks
3 cups Ragú® Pasta Sauce, marinara sauce
3 tablespoons double concentrated tomato paste
1 tablespoon fresh ground chili paste
1 teaspoon Worcestershire sauce
1 teaspoon dried marjoram
1 teaspoon dried thyme
1/2 teaspoon dried chipotle powder
1/2 teaspoon smoked paprika
3 bay leaves
1 teaspoon salt
1/2 teaspoon pepper
1 lb extra large shrimp, shelled and deviened
3 cups vegetable stock
1 cup fine ground polenta
3 tablespoons unsalted butter
4 ounces goat cheese
1/4-1/2 cup half-and-half
1/2 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • INSTRUCTIONS:.
  • 1. In a large skillet over medium-high heat add the olive oil, onion, bell pepper, and celery and cook until the onion is translucent. Add the garlic and cook for 1minute. Add the sausage and chicken and continue cooking until just cooked through. Add the Ragu marinara sauce, tomato paste, chili paste, Worcestershire sauce, marjoram, thyme, chipotle, paprika, and bay leaves. Bring to a boil and reduce heat to medium-low, salt and pepper to taste. Cover and simmer for 30 minutes.
  • 2. While the sauce simmers, begin the polenta. In a large sauce pan over medium-high heat, bring the stock to a boil. Reduce the heat to medium and stir in the polenta. Cook for 20 minutes while continuing to stir. Reduce to heat to low and stir in the butter and cheese until combined. Add the half and half ¼ cup at a time and stir until creamy, adding more half and half if needed; salt and white pepper to taste.
  • 3. Add the shrimp to the simmering sauce until cooked through, about 5 minutes.
  • 4. Serve the Ragu stew over the polenta.

1 lb skinless chicken thigh, boneless, cut into 1-inch chunks
1 cup diced onion
1/4 cup olive oil
2 tablespoons garlic, minced

1 teaspoon fennel seed
1/2 teaspoon red pepper flakes
1/2 cup dry red wine
1 (14 1/2 ounce) can diced tomatoes with juice
1 cup low sodium chicken broth
2 tablespoons balsamic vinegar

2 ounces cream cheese
parmesan cheese, shredded
fresh parsley, chopped

Steps:

  • Cook pasta in a large pot of boiling salted water according to package directions; drain and set it aside.
  • Sauté sausage, chicken, and onion in oil in a large sauté pan over medium-high heat until browned, 5-7 minutes. Add garlic, tomato paste, fennel seed, and pepper flakes; cook until fragrant, 2-3 minutes.

6 slices bacon, diced
1/2 lb Italian sausage, cut into 1/2-inch slices
1/2 lb smoked sausage, cut into 1/2-inch slices
1/2 cup flour
1 onion, chopped
1 green bell pepper, chopped
2 celery ribs, chopped
4 garlic cloves, minced
1 tablespoon creole seasoning
1 quart chicken stock
2 bay leaves
1 (24 ounce) Ragú® Pasta Sauce (old world style marinara sauce)
2 cups frozen cut okra, thawed
2 lbs raw shrimp, peeled and deveined
1 cup cooked rice
2 green onions, chopped
1/4 cup cilantro, chopped

Steps:

  • In a large pot over medium-high heat, cook the bacon until crisp. With a slotted spoon, remove the cooked bacon and set aside. Add the Italian sausage and smoked sausage. Cook for 2 minutes, until lightly browned. Remove the sausages and set aside.
  • Whisk the flour into the bacon grease. Cook for 5 minutes, stirring constantly, until the roux is golden brown. Add onion, green bell pepper, celery, and garlic. Cook for 4-5 minutes, until the vegetables are softened.
  • Add the creole seasoning, chicken stock, bay leaves, and Ragu Old World Style Marinara sauce. Bring to a boil, then reduce the heat to simmer. Add the cooked bacon, Italian sausage, and smoked sausage. Cover and simmer for 20 minutes, stirring occasionally.
  • Add the okra and shrimp. Cook for 10 minutes, until the shrimp is fully cooked.
  • Ladle the gumbo into bowls. Top each bowl with cooked rice, and garnish with green onions and cilantro.

6 large chicken thighs (about 2 1/4 pounds)
3 cups chopped onions
2 1/3 cups chopped green bell peppers
1 1/4 cups chopped red bell pepper
6 large garlic cloves, chopped
3 tablespoons chopped fresh oregano
2 tablespoons chopped fresh thyme
1 tablespoon paprika
1 28-ounce can diced tomatoes with juices
1 14 1/2-ounce can low-salt chicken broth
1 cup dry white wine
3/4 cup sliced pimiento-stuffed green olives
1 pound uncooked large shrimp, peeled, deveined
*A smoked pork and beef sausage, available at specialty foods stores. Hot links, smoked bratwurst, kielbasa or smoked Hungarian sausage can be substituted.

Steps:

  • Sauté sausage in heavy large pot over medium heat until brown, about 4 minutes. Transfer to large bowl. Sprinkle chicken with salt and pepper. Add chicken to pot and cook until browned, about 3 minutes per side. Transfer chicken to bowl with sausage. Pour off all but 1 tablespoon pan drippings.
  • Add onions and bell peppers to pot; sauté until golden brown, about 15 minutes. Add garlic, oregano, thyme and paprika; sauté 2 minutes. Return sausage, chicken and any accumulated juices to pot. Add tomatoes with juices, chicken broth and wine. Bring to boil. Reduce heat; cover and simmer until chicken is cooked through, about 25 minutes.
  • Uncover pot. Add olives and simmer until chicken is very tender and liquid is reduced to thin sauce consistency, about 40 minutes. Add shrimp and simmer just until cooked through, about 5 minutes longer. Season to taste with salt and pepper. (Stew can be prepared 1 day ahead. Refrigerate until cold, then cover tightly and refrigerate. Before serving, rewarm over medium-low heat.)

1/2 cup chopped fresh marjoram (from about 2 large bunches)
6 garlic cloves, minced
1 teaspoon grated lemon peel
1/4 teaspoon dried crushed red pepper
1 cup dry white wine
2 14 1/2-ounce cans diced tomatoes in juice
2 cups low-salt chicken broth

Steps:

  • Place chicken thighs, skin side down, on work surface. Using sharp knife, cut each thigh lengthwise along each side of bone, forming 2 pieces of meat (some meat may remain on bones); reserve bones.
  • Heat oil in heavy large pot over medium-high heat. Sprinkle chicken and bones with salt and pepper. Working in batches, sauté in pot until brown, about 6 minutes per batch. Transfer to bowl. Add sausage to pot and sauté until brown, about 5 minutes. Using slotted spoon, transfer to bowl with chicken. Add carrots and onions to pot and sauté until onions are tender and golden, about 10 minutes. Stir in 1/4 cup marjoram, garlic, lemon peel, and crushed red pepper; sauté 2 minutes. Add wine and boil until reduced by half, about 3 minutes. Stir in tomatoes with juices and broth; bring to boil. Add chicken, bones, sausage, and any accumulated juices from bowl. Reduce heat, cover, and simmer until chicken is cooked through, about 35 minutes.
  • Using slotted spoon, transfer chicken and sausage to bowl; discard bones. Boil liquid in pot until reduced to 3 cups, about 20 minutes. Stir in remaining 1/4 cup marjoram. Season to taste with salt and pepper. Return chicken and sausage to pot. (Can be made 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep refrigerated. Rewarm over medium heat before serving.) Spoon ragù over Campanelle Pasta with Parsley Butter.

2 tablespoons olive oil
1 1/2 lbs boneless skinless chicken thighs, cut in 1/2 inch pieces
6 ounces Italian sausage, (mild or hot) casings removed
1/2 medium onion, minced
2 stalks celery, minced
2 carrots, peeled and minced
1/2 lb fresh mushrooms, sliced
1 bay leaf
1 clove large garlic, minced
1 cup dry marsala
1 (14 ounce) can tomatoes, crushed
1 cup chicken stock
1 tablespoon tomato paste
3 pinches cloves

Steps:

  • Heat 2 Tbsp oil in a large skillet over medium high heat. Add chicken thighs and Italian sausage. Stir cook, breaking sausage into small pieces, until chicken is browned and sausage meat is no longer pink.
  • Add onion, celery, carrot, garlic and bay leaf and continue to stir cook until the onion is softened.
  • Stir in Marsala.
  • Bring to a boil, scraping up any brown bits that are stuck to the bottom of the skillet. Reduce heat and simmer until half of the liquid has evaporated (about 15 minutes). Transfer this mixture to a Dutch oven.
  • Mix in mushrooms, tomatoes, chicken stock, tomato paste and cloves.
  • Bring to a boil then reduce heat and simmer, stirring occasionally for 45 minutes.
  • Serve as a stew with a salad and French bread or serve as a sauce for your favourite pasta.
  • Makes 4 to 6 servings.
