Fruit, spring veggies and salads are making their appearance all over at the dining room tables. I feel like you could use a new dressing recipe.

Ingredients

5 oz fresh raspberries
2 Tbsp brown sugar
1/2 tsp lime zest
Dressing:
Cooked raspberry mixture from above
1 Tbsp fresh lime juice
1/4 cup red wine vinegar
1/2 cup grape seed oil
1 1/2 Tbsp brown sugar
salt and pepper

Steps:

In a small sauce pan, over medium heat, combine raspberries, 2 Tbsp brown sugar and lime zest and mix well. Cover and cook for about ten minutes, stirring often. Blend the berries, carefully, with an immersion hand blender. Do be careful because the mixture is not too deep.
Let the berry mixture cool to room temperature, in the mixing bowl.
Add oil, vinegar, lime juice, sugar, salt and pepper. Whisk vigorously for a few seconds.
Refrigerate in the air tight container.

This raspberry lime vinaigrette is fruity, tangy and sweet. Enjoy it drizzled on salads, meats, fish or grilled vegetables.

Ingredients

3 cups (350 g) fresh or frozen raspberries
4 tablespoons extra virgin olive oil
1 tablespoon water
1 tablespoon fresh lime juice
1 tablespoon red wine vinegar
½ tablespoon Dijon mustard
1½ tablespoon honey or brown sugar (more or less (depending on your taste preference and the sweetness of the raspberries))
½ teaspoon salt
¼ teaspoon pepper

Steps:

Puree the raspberries in a blender. Strain the seeds out using a fine mesh strainer.
Return the puree to the blender and add the oil, vinegar, lime juice, mustard, honey, salt and pepper.
Blend on low until well combined.
Transfer the vinaigrette to a container and refrigerate for at least 20 minutes.
Store the raspberry lime vinaigrette in a airtight container in the fridge for up to 4 days.
