NANA DOT'S IRISH SODA BREAD
This was my mom's mothers recipe (my Nana Dot) and has been passed down for generations, direct from Ireland. If you like soda bread, this is awesome!

- Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
- Stir together the flour, baking soda, baking powder, salt, and sugar in a large bowl until evenly blended. Cut in the butter using a pastry blender or your hands until the mixture resembles coarse cornmeal. Stir in the raisins, currants, and caraway seeds, then make a well in the center and pour in the milk and vinegar. Stir with a spoon until the dry ingredients are moistened.
- Turn the dough out onto a well floured work surface, and knead gently 8 to 10 times. Divide the dough into two balls, and place onto the prepared baking sheets.
- Bake in preheated oven for 15 minutes, then reduce heat to 375 degrees F (190 degrees C), and bake until the top of the bread is golden brown, about 15 minutes more.

MOM'S IRISH SODA BREAD
Authentic Irish soda bread does not contain raisins, but I like mine with raisins so I include them. This is a very easy and delicious recipe.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 9-inch deep-dish pie plate.
- Spoon 1 tablespoon of the buttermilk into a small bowl; place remainder of 1 cup buttermilk into a separate bowl.
- Stir golden raisins into the larger amount of buttermilk and allow raisins to soak while you complete the remaining steps.
- Spoon 1 tablespoon of the melted butter into the small bowl with the tablespoon of buttermilk; stir to combine and set aside. Set remaining melted butter aside.
- Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl.
- Make a well in the center of the dry ingredients, pour in reserved butter, and stir until the mixture resembles coarse crumbs.
- Mix the egg into the flour mixture until thoroughly combined.
- Mix the soaked raisins with buttermilk into dough and shape dough into a ball.
- Place the ball of dough into prepared pie dish and lightly pat dough down so top is slightly domed.
- Use a sharp knife to cut two crisscrossing lines through the center of the loaf about 1/4 inch deep.
- Thoroughly brush buttermilk and butter mixture over the loaf, getting the mixture into the crevices.
- Bake in the preheated oven until loaf is golden brown and a toothpick inserted into the center comes out clean, 55 minutes to 1 hour.

- Preheat oven to 325 degrees F (165 degrees C). Grease two 8x4 inch loaf pans.
- Mix the flour, sugar, baking soda, baking powder and salt. Add the eggs, sour cream and raisins and mix until just combined. Distribute batter evenly between the two pans.

SODA BREAD WITH WALNUTS AND RAISINS
This Irish soda bread is inspired by a classic, made with white flour and currants, called "spotty dog." My whole wheat version proved to be the perfect home for some particularly luscious golden raisins and walnuts that I get from a vendor at my farmers' market.

- Preheat the oven to 400 degrees. Line a baking sheet with parchment. Sift together the flours, baking soda and salt and place in a wide bowl
- Make a well in the middle of the flour, add the walnuts and raisins and pour in the buttermilk. Using a wide rubber spatula, a wide wooden spoon or your hands mix in the flour from the sides of the bowl to the center, turning the bowl and sweeping the flour from the sides into the buttermilk. Mix until the buttermilk, raisins and walnuts have been incorporated into the flour, then scrape out onto a lightly floured work surface. The dough should be soft and a bit sticky. Flour your hands so it won't stick to them.
- Gently and quickly knead the dough, only enough to shape it into a ball, then with floured hands gently pat it down to a 2-inch high round. Place it on the parchment-lined baking sheet and cut a 1/2-inch deep cross across the top. You shouldn't let too much time lapse between the time you add the buttermilk to the flour and the moment you put the loaf into the oven.
- Bake 40 to 45 minutes, until the loaf responds with a hollow sound when tapped on the bottom. Remove from the oven, wrap loosely in a cloth or kitchen towel, and cool on a rack.

IRISH SODA BREAD
This is an incredible bread recipe that comes together in no time. It looks incredible coming out of the oven, and the currants are an added bonus.

- Preheat the oven to 400 degrees F.
- Whisk together the flour, sugar, baking soda, cream of tartar and salt in a large mixing bowl.
- Stir in the buttermilk and 3 tablespoons of the melted butter, using a fork, then stir in the currants. Once combined, the dough should come together. Turn the dough out onto a floured surface. Knead gently for just a few turns until the dough can be shaped into a 6-inch round (do not over-knead).
- Place the shaped dough into a cast-iron skillet or sheet tray. Cut an "x" into the top of the round loaf, using a knife.
- Bake until the center has cooked through (testing with a skewer), about 40 minutes. Slather with the remaining tablespoon melted butter.
FRUITY IRISH SODA BREAD

- Preheat the oven to 375 degrees.
- In a large bowl, combine the flour, baking powder, baking soda, allspice and salt and mix well. Cut the butter and shortening into small pieces and add to the flour mixture. Using your fingers, work the cold butter and shortening into the flour mixture until it resembles coarse crumbs. Add the egg, the buttermilk, the dried fruit and the walnuts and mix into the flour mixture until it is incorporated. - Preheat the oven to 350 degrees F. Generously butter 2 (9 by 5-inch) bread pans.
- Stir together the sifted flour, sugar, baking powder, salt, and baking soda. Cut in the butter and mix very thoroughly with your hands until it gets grainy. Stir in raisins and caraway seeds.
- Add the buttermilk and egg to the flour mixture. Stir until well moistened. Shape dough into 2 loaves and place in the pans.

- Turn dough onto floured surface and knead lightly about 5 times, adding additional flour if dough is too sticky.
