NORWEGIAN RED CABBAGE
Delicious! Tart and sweet at the same time! This recipe is old, and I have no idea where it came from...but it is very good. Try it and let me know what your taste buds tell you... This dish goes good with pork of any type.

Steps:
- Chop cabbage fine, and put in a big pot.
- Add butter, vinegar, sugar, water and salt.
- Cook for 1hour on low heat.
- Add jelly and cook for 20 minutes longer.

- Combine cabbage and onion in a large bowl.
- In another bowl whisk together oil, lemon juice, mayonnaise, mustard and cumin.
- Pour over cabbage mixture.
- For best flavour allow to marinate a minimum of 2 hours before serving.
- Garnish with chopped walnuts.

- Combine vegetables in a large mixing bowl.
- In a microwavable bowl combine oil, vinegar, and sugar; Microwave uncovered for about 45 seconds to dissolve sugar - NOTE if you are using splenda omit this step.
- Pour hot dressing over vegetables; mix well.
- Refrigerate to blend flavours.
- Leftovers will keep a couple days in the fridge.

- Cook in a small amount of boiling water with salt, cloves and pepper for about 45 minutes.

Steps:
- Remove any ragged leaves from cabbage.
- Cut in quarters, wash and drain.
- Shred cabbage on cutting board, discarding core.
- Heat fat in Dutch oven or casserole.
- If you use bacon, let it melt but not brown.
- Add sugar to hot fat and saute slowly until golden brown.
- Add apple and onion, cover and braise over very low heat 5 minutes.
- Add shredded cabbage and toss until coated with fat.
- Pour vinegar over kraut and stir to mix through.
- Cover and braise slowly, 10 minutes until cabbage has turned"blue" or more exactly, bright purple.
- Sprinkle with salt, add 1 cup water, cover and simmer slowly 1 1/2 to 2 hours or until tender.
- Add more liquid if needed.
- Season with pepper and salt, if needed.

- Melt the butter in a large saucepan over medium-high heat. Add the apples and the onion and sauté until the onion is tender and translucent, approximately 8 minutes.
- Stir in cabbage and stir until wilted, approximately 8 minutes. Stir in the sugar, vinegar ,salt, cinnamon, allspice, and cloves. Cover and cook until the cabbage is tender, stirring occasionally, aproximately 10 minutes.
- Add the stock and jam and continue to cook uncovered for 5 minutes longer. Season with salt and pepper and serve. Delicious!
