ROASTED BEET AND POTATO SOUP



Roasted Beet and Potato Soup image

I adapted this from a vegetarian soup while my twin toddlers were going through a soup-only phase. They love it. Luckily the rest of the family enjoys it too! It's a nice hearty puree, super-easy to put together, especially if you roast the potatoes and beets beforehand.

2 cups diced potatoes
2 cups diced peeled beets
olive oil, divided
salt and ground black pepper to taste
1 stalk celery, diced
1 onion, diced
1 clove garlic, minced
4 cups chicken broth
½ teaspoon dried thyme
1 bay leaf
1 ½ cups whole milk
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place the potatoes and beets into a baking dish, and drizzle with 1 tablespoon olive oil; season with salt and black pepper.
  • Roast in the preheated oven until tender, about 1 hour; allow to cool.
  • Heat 2 tablespoons of olive oil in a large soup pot over medium heat, and stir in the celery, onion, and garlic. Cook, stirring often, until the onion is translucent, about 5 minutes. Mix in the cooked vegetables, chicken broth, thyme, and bay leaf, bring to a boil, and reduce heat. Simmer until the celery is very tender, about 45 minutes.
  • Remove from heat, and discard the bay leaf. Puree the mixture in the pot with an immersion blender until very well blended; stir in the milk and lemon juice to serve.

BEETROOT CURRY

If you've never tried beets in a curry before, you're in for something special. Beetroot's sweet, earthy flavour is a great match with the spices and it cooks up beautifully, too. Insanely good!

14 g dried curry leaves
2 teaspoons black mustard seeds
1 teaspoon hot curry powder
2 tablespoons desiccated coconut
6 spring onions
3 cloves of garlic
5 cm piece of ginger
vegetable oil
1 kg mixed beets, (about 12 medium-sized)
250 g ripe cherry tomatoes
320 g wild rice
1 x 400 ml tin of light coconut milk
1 lemon
½ a bunch of fresh coriander, (15g)
1 lime
TEMPER
3 cloves of garlic
1-2 fresh long red chillies
5 cm piece of ginger
7 g dried curry leaves

Steps:

  • Place a large pan over a medium heat. Add the curry leaves, mustard seeds, curry powder and coconut and toast for 1-2 minute or until fragrant. Tip into a food processor and blitz well.
  • Trim the spring onions and add to the food processor. Peel and chop the garlic and ginger and add to the food processor along with the vegetable oil. Pulse until the mixture forms a paste.
  • Peel the beetroots and chop into 2cm cubes. Place the pan back on the hob over a medium heat, add the paste and cook for a few minutes. Add the chopped beetroot. Reduce the heat to low and cook for 25 minutes or until sticky and gnarly, stirring often.
  • Tip in the cherry tomatoes and cook for 5 minutes, before starting to break them up with the back of a wooden spoon. Meanwhile, cook the rice according to the packet instructions.
  • After 10 minutes, or once the tomatoes have completely cooked down, stir in the coconut milk and a squeeze of lemon juice. Increase the heat and cook for 5 minutes, until the sauce has thickened. Season to taste. If you want the curry a little looser, add a splash of water before serving.
  • For the temper, place a frying pan over a medium heat and add the oil. Add all the temper ingredients and heat for 1-2 minutes, until the spices start to pop and smell aromatic. Turn off the heat and tip into a bowl lined with kitchen paper.
  • Pick the coriander leaves and cut the lime into wedges. Serve the curry with the rice and temper, coriander leaves scattered on top and the lime wedges on the side for squeezing over.

After having a bowl of wonderful light beet soup at a Russian friend's home, I tried to recreate it by tweaking a recipe I had found. This recipe comes pretty close, but I haven't tried making it yet. Later I learned that this is a cold borscht and is called "svekolnik" in Russian. Sometimes boiled diced potatoes are also added, but these are cooked separately from the beets.

4 small beets, optionally with the stems and leaves (or canned whole beets)
water, enough to cover well (or the juices out of the can)
2 tablespoons lemon juice
1/2 teaspoon salt
1 teaspoon sugar (optional)
1 medium cucumber, julienned
2 medium green onions, chopped
2 hard-boiled eggs, chopped
1/2 cup baby dill, chopped
1/2 cup flat leaf parsley
4 tablespoons sour cream

Steps:

  • Cook beets 30 min or until tender. Keep water (broth).
  • Peel beets and julienne; return to pot.
  • Add sugar, salt, lemon juice to taste. Cool.
  • When ready to serve, add cucumber, scallions and one-half egg to each bowl.
  • Garnish with a dollop of sour cream, dill and parsley.
  • NOTE: You can use red wine vinegar instead of lemon juice.

4 medium sized beets, cooked and cubed
4 medium sized potatoes, cubed
1 onion, chopped
1/4 cup fresh dill
2 tablespoons butter
8 cups vegetable stock
1/2 cup cream or 1/2 cup half-and-half cream
salt and pepper

Steps:

  • Saute onions with dill in butter until softened.
  • Add cubed potatoes and saute for a few minutes.
  • Add stock and beets.
  • Bring to a boil, reduce to a simmer and cook for approximately 30 minute.
  • Blend with a hand blender until desired texture.
  • Finish with cream or half/half, salt and pepper to taste.
  • Serve hot.
  • Note: prep. time includes cooking of the beets.

A delicious, beautifully colored, rich soup perfect for fall and winter! Serve with some multi-grain rolls or bread for a satisfying lunch or supper. I think it's best hot, but can be eaten cold as well. Garnish with sour cream and chopped chives.

4 beets, tops and tails on, or to taste
1 teaspoon white vinegar, or as needed
2 tablespoons olive oil
3 potatoes, peeled and chopped
1 red onion, chopped
1 teaspoon red chile flakes
2 teaspoons curry powder
5 cups chicken stock
1 tablespoon brown sugar
salt to taste

Steps:

  • Place beets into a pot, cover with water, and add vinegar. Bring to a boil. Reduce heat to medium-low and simmer until halfway tender, about 30 minutes. Drain. Let cool until safe to handle, at least 15 minutes.
  • Place beets on a cutting board. Remove skin and chop beets.
  • Heat oil in a large pot over medium heat. Cook and stir potatoes, onion, red chile flakes, and curry until potatoes are slightly softened, about 15 minutes. Add the boiled beets, chicken stock, and brown sugar. Increase heat to high; bring soup to a boil. Reduce heat to low and cover; cook until vegetables are tender, about 30 minutes. Season with salt.
  • Fill blender halfway with soup. Cover and hold lid down with a potholder; pulse a few times before leaving on to puree. Pour into a pot. Repeat with remaining soup.
