4 red bell peppers, seeded, deribbed and chopped
1/4 cup extra virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Heat the olive oil in a saucepan, add the peppers, cover and simmer over very low heat, for about 20 minutes or until tender. Puree the cooked peppers through a food mill to remove the skins. Season to taste with salt and pepper. The sauce is ready to be used like this over steak, grilled polenta, poultry, lamb or grilled seafood or can be enhanced with a few tablespoonfuls of the possible additions.

6 chicken breast fillets, flattened to 1/4-inch-thick
3 tablespoons olive oil
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
1 tablespoon Italian seasoning
2 tablespoons salted butter
1 tablespoon olive oil
1/2 large onion, finely diced
3 cloves garlic, minced
1 jar (15.5 ounces) roasted red peppers, drained and roughly chopped
1 to 2 cups vegetable or chicken broth
1/2 teaspoon kosher salt, more to taste
Freshly ground black pepper
1/2 cup heavy cream (or more to taste)
One 4-ounce chunk Parmesan, to shave
2 tablespoons finely minced parsley

Steps:

  • For the chicken: Put the chicken in a resealable bag. Add the olive oil, salt, pepper and Italian seasoning to the bag and smush everything together. Seal and refrigerate.
  • For the red pepper sauce: Melt the butter and add the olive oil in a large skillet over medium-high heat. Add the onion and garlic and saute for 2 to 3 minutes or until starting to soften. Add the red peppers and cook for 2 to 3 minutes, until hot.
  • Add the broth (if you like a thicker sauce only add 1 cup broth, for a thinner sauce add 2 cups broth), salt and pepper and stir until heated. Splash in the cream.
  • Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers). You can serve the sauce right away or cool it and bag it up.
  • When ready to cook, heat a grill pan over medium-high heat and grill the chicken until cooked through, about 4 minutes a side.
  • Heat up the red pepper sauce in a pan. Serve everyone a piece of chicken, spoon some sauce over each piece, and garnish with Parmesan shavings and a sprinkling of parsley. Serve with roasted vegetables alongside.

4 red peppers (or a mix of red, orange and yellow), cut into chunks
2 onions , roughly chopped
2 garlic cloves (skin left on)
2 tbsp olive oil
2 x 400g cans peeled plum tomatoes
2 tsp red wine vinegar
1 tsp light soft brown sugar

Steps:

  • Heat oven to 190C/170C fan/gas 5. Toss the peppers and onions with the garlic and olive oil, and spread out in a roasting tin. Roast for 40 mins, then add the tomatoes, red wine vinegar and sugar, and roast for another 20 mins. Tip into a food processor and blend until smooth. Season to taste.

1 3- to 4-pound red snapper
1/2 to 3/4 cup hazelnut oil
1 lime
1 red bell pepper
1 yellow bell pepper
4 tomatillos (Mexican green tomatoes)
2 jalapeno chilies, seeded and minced
1 clove garlic, minced (any green part removed)
1/2 small red onion, finely chopped
4 tablespoons fresh coriander, chopped
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe the snapper inside and out with paper towels. Sprinkle with about a tablespoon of the hazelnut oil and the juice of half the lime. Set aside.
  • Preheat broiler. Seed the peppers and cut them into quarters. Place them skin side up on a grilling rack and broil until the skins are charred. Place them in a plastic or paper bag and let them cool. Peel off the skins.
  • Meanwhile, quarter the tomatil-los and simmer them in water to cover until soft (about five minutes). Drain and chop. Chop the peppers.
  • Place the tomatillos, peppers, chilies, garlic and onion in a small bowl. Add the remaining hazelnut oil and toss thoroughly. Add the juice of the remaining lime to taste.
  • Just before serving, stir in the coriander and season with salt and pepper to taste.
  • Broil the snapper for about seven to 10 minutes on each side, or until it is cooked. Pass the vinaigrette sauce separately.

1 large leek, white and light-green parts only
1 teaspoon olive oil
1 red bell pepper, stem and seeds removed, cut into chunks
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 cup homemade or low-sodium canned chicken stock, skimmed of fat

Steps:

  • Cut leeks in half lengthwise, then into 1/4-inch-thick slices. Place in small bowl, and cover with cold water. Let stand for 5 minutes to rid leeks of dirt and sand. Lift out of the water, and drain.
  • Heat oil in saucepan over medium heat. Add leeks, peppers, salt, and pepper; saute for 3 minutes. Add stock; cover. Cook until vegetables are tender, about 12 minutes.
  • Transfer vegetables to food processor; puree. Pass puree through fine strainer back to saucepan. To serve, warm over low heat.

2 large red bell peppers
2 tablespoons minced garlic
¼ cup fresh basil
3 tablespoons extra virgin olive oil
2 cups half-and-half
¼ cup grated Romano cheese
4 tablespoons butter
salt and pepper to taste

Steps:

  • Preheat broiler. Lightly coat the red peppers with olive oil. Grill peppers under the broiler until the skin is blackened, and the flesh has softened slightly. Place peppers in a paper bag or resealable plastic bag to cool for approximately 45 minutes.
  • Remove the seeds and skin from the peppers (the skin should come off the peppers easily now). Cut peppers into small pieces.
  • In a skillet, cook and stir the garlic, basil, and red peppers in 3 tablespoons olive oil over medium heat. Cook for 10 minutes, so that the flavors mix.
  • Place mixture in blender (careful it is hot), and puree to desired consistency. Return puree to skillet, and reheat to a boil. Stir in the half-and-half and the Romano cheese; cook and stir until the cheese melts. Add the butter, and stir until melted. Season with salt and pepper to taste. Simmer for 5 minutes.

2 cups heavy cream
1 teaspoon paprika
1 tablespoon lemon juice
¾ teaspoon salt
⅛ teaspoon ground white pepper
1 pinch cayenne pepper

Steps:

  • Combine the bell peppers and heavy cream in a pot and bring to boil over medium heat; reduce heat to medium-low and continue simmering, stirring occasionally, until the cream reduces to about 1 cup, about 30 minutes. Remove from heat and stir in the paprika, lemon juice, salt, white pepper, and cayenne pepper.

1 1/2 cups skinned and seeded roasted red peppers (from the jar is fine)
1/4 cup hazelnuts, roasted and skinned (filberts)
2 cloves garlic
2 tablespoons sherry wine vinegar
1 tablespoon coarsely chopped fresh rosemary
1 tablespoon fresh marjoram
1/8 teaspoon cayenne (scant)
1 teaspoon sugar
1 teaspoon salt
1/2 cup extra virgin olive oil

Steps:

  • Place all ingredients except for the oil in a food processor or blender and whir until the nuts are finely ground.
  • Turn the machine off and scrape down the sides.
  • Replace lid, turn the machine on, and then using the chute add in the oil in a steady thin stream and process until sauce is mixed well and has the consistency of a thick salad dressing.
  • Serve over pasta and sprinkle with an excellent cheese such as asagio shavings or gorgonzola.

1 tablespoon unsalted butter
1/2 onion, peeled and finely chopped
3 red bell peppers, seeded and coarsely chopped
1 1/4 cups chicken or vegetable stock
1/4 cup white wine
3/4 cup toasted, skinned hazelnuts
Salt and freshly ground black pepper to taste

Steps:

  • Place a saucepan over medium heat and melt the butter. Add the onion and cook until just translucent, about 3 minutes. Add the peppers and cook, stirring frequently, for 5 minutes more. Add the stock and wine and cook at a low simmer, uncovered, for 15 minutes.
  • Meanwhile, place the hazelnuts in the container of a food processor and process until they form a smooth butterlike paste, about 5 minutes, stopping to scrape down the sides of the bowl about every minute. Measure out 3 tablespoons of nut butter and set aside. (Unused butter can be refrigerated for up to 3 days.)
  • Whisk the 3 tablespoons of hazelnut butter into the sauce in the saucepan. Transfer the sauce to a blender and blend until very smooth. Return to the pan and season with salt and pepper.
  • Reheat when ready to serve. Serve with grilled or broiled meat, fish or shellfish.

2 Red Bell Peppers (about 2 cups chopped)
3 cups undrained canned tomatoes (28 oz can) or 4 medium fresh tomatores
4 Garlic cloves
3 Tablespoons Olive Oil
1 Tablespoon Red Wine vinegar
pinch of cayenne
2 small slices french or italian bread
salt to taste

Steps:

  • Preheat the oven to 325* Spread the hazelnuts on an unoiled baking sheet and bake for 10 minutes. While the nuts are baking, chop the bell peppers, tomatoes and garlic. Heat the olive oil in a saucepan, then add the peppers, tomatoes, garlic, vinegar and cayenne. Cook on high heat for 5 minutes adnd remove from the heat. The peppers will still be crunchy. Cool the baked hazelnuts for several minutes, and then rub them briskly with a towel to remove most of the skins. Finely grind the hazelnuts in a food processor or a nut grinder. Submerge the bread in water for a moment, then gently squeeze out the excess water. Place all of the ingredients in a food processor or blender and puree until smooth. Reheat the sauce if necessary and add salt to taste.
