BAKED RED SNAPPER FILLETS



Baked Red Snapper Fillets image

From Talk About Good II "The Book of Cajun Cuisine" You can use any fish with a white, flaky texture such as speckled trout, red fish, bass or tilapia.

4 (6 ounce) red snapper fillets
salt and pepper, to taste
1 onion, chopped
1/2 cup unsalted butter, melted
1 bunch green onion, diced

Steps:

  • Preheat oven to 350°F.
  • Season filets with salt and pepper.
  • Saute onion in butter in saucepan on top of stove.
  • Place seasoned filets in pyrex baking dish and pour butter-onion mixture on top.
  • Cook for 30 minutes, occasionally spooning butter over filets.
  • When fish are tender and flake, remove from oven and sprinkle green onions on top.

Here's an easy but impressive dish from the Admiral's Inn in St. John's Antigua. When ordering the whole snapper from the fish market, have them clean and scale it. If you cannot find whole red snapper, use fillets and bake them about 25 minutes.

1 2-to 2 1/4-pound whole red snapper, cleaned
1 tablespoon minced garlic
1 tablespoon fresh lemon juice
3/4 teaspoon seafood seasoning
2 tablespoons (1/4 stick) chilled butter, cut into pieces
6 fresh thyme sprigs
6 thin lemon slices

Steps:

  • Place 24x18-inch piece of foil on heavy large baking sheet. Butter foil. Place fish in center of foil. Season cavity of fish with garlic, lemon juice and seafood seasoning. Dot cavity with butter. Arrange thyme sprigs inside cavity. Sprinkle outside of fish with salt and pepper. Top with lemon slices. Fold edges of foil over fish; seal. (Can be made 1 day ahead. Refrigerate.)
  • Preheat oven to 350°F. Bake fish until cooked through, about 45 minutes. Transfer fish to platter. Open foil.

2 tablespoons olive oil
1/2 small onion, diced
2 cloves garlic, minced
5 whole canned tomatoes, drained and chopped
2 tablespoons capers, chopped
1/2 cup sliced black olives, drained
1/4 teaspoon crushed red pepper flakes
1/2 tablespoon chopped fresh parsley
1 lb red snapper fillet
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium skillet, heat olive oil and saute onion until tender, about 5 minutes.
  • Add garlic, and saute for 1 minute.
  • Stir in tomatoes, capers, black olives, red pepper flakes, and parsley.
  • Bring to a boil, and simmer for 10 minutes.
  • Spread 1/2 cup of the sauce in a 11x7 inch baking dish, and arrange the snapper fillets in a single layer in the dish.
  • Drizzle lemon juice over the fillets, and then pour the remaining sauce over all.
  • Bake for 15 minutes for 1/2 inch thick fillets, or 30 minutes for 1 inch thick fillets.
  • Baste once with the sauce while baking.
  • Snapper is done when it flakes easily with a fork.

2 1/2 lbs red snapper fillets
6 tablespoons butter, melted
1/2 teaspoon pepper, freshly ground
1 tablespoon lemon juice, 1/2 of a lemon
3/4 cup macadamia nuts, ground or 3/4 cup almonds
1 tablespoon parsley, minced

Steps:

  • Preheat oven to 450 degrees.
  • Oil a baking pan with 1 tablespoon of the butter.
  • Place the fish in the pan, and sprinkle with pepper and lemon juice.
  • In a small skillet heat the rest of the butter. .
  • Add the ground nuts.
  • Stir and cook for 1-2 minutes making sure the mixture doesn't burn.
  • Spread the mixture over the fish.
  • Bake for 10-15 minutes or until done.
  • Sprinkle with parsley and serve.

  • Preheat broiler. Put bread slices on a large baking sheet, brush both sides with olive oil (about 6 tbsp.), and sprinkle with salt and pepper to taste. Broil bread on both sides until golden and crunchy, about 2 minutes per side. When toasts are cool enough to handle, rub each on one side with garlic halves. Lower heat to 325°.
  • Zest 1 lemon (to yield 1 tsp. zest) and squeeze half of it (to yield 2 tsp. juice). Cut other lemon into wedges. In a large mixing bowl, whisk together 3/4 tsp. salt, 1/4 tsp. pepper, lemon zest, lemon juice, and 2 tbsp. olive oil. Add beans and toss gently to mix. Set aside.
  • With a very sharp knife, make shallow slashes about 1 in. apart in skin of snapper fillets. Season fillets with salt and pepper. Heat 1 tbsp. olive oil in a large nonstick frying pan over medium-high heat. Add 4 fillets skin side down, reduce heat to medium, and cook 5 to 6 minutes, pressing often with spatula to keep them as flat as possible; turn over and cook another 2 minutes. Transfer to a baking sheet and reserve pan juices in a bowl. Wipe pan clean with paper towels and cook remaining fillets the same way, reserving pan juices and transferring to baking sheet. Put fish in oven and cook until done, about 8 minutes (cut to check).
  • Add arugula and tomatoes to beans and toss gently but thoroughly. Divide salad among 8 plates, arranging in center.
