CHERRY TORTE
This is my husband's grandmother's recipe. If you love cherries, you should love this. Prep time does not include cooling and chilling time.

Steps:
- Beat egg whites and cream of tartar until stiff peaks form.
- Add 2 cups sugar, nuts, vanilla and crushed cracker crumbs.; mix well.
- Pour into a greased 9x13 baking dish.
- Bake at 350 degrees for about 25 minutes.
- Let crust cool completely.
- Beat whipping cream until it thickens.
- Add sugar and, if using, vanilla.
- Beat well.
- Cover crust with whipped cream mixture.
- Add cherry pie filling on top of whipped cream mixture.
- Refrigerate 2-3 hours.
- Note: In place of the whipping cream, 4 T sugar and vanilla, I sometimes use 1 container (16 ounces) of Cool Whip.

- Add baking powder and sugar to beaten eggs and then beat again, fold in ritz crackers and chopped nuts.
- Bake in 9 inch ie pan at 350 degrees for 30 minutes.
- Let cool. Put in refrigerator.
- When ready to serve top with cool whip.

RITZ CRACKER TORTE
This recipe was mimeographed on pink paper and was in one of three recipe boxes that my sister brought with her when she came to my wedding in February.

Steps:
- 1. Fold in 1 cup chopped walnuts and 1 cup crumbled Ritz crackers (roll them in plastic with rolling pin). Bake for 30 minutes. Let cool.
- 2. Spread with whipped cream and chopped nuts on top and refrigerate for several hours before serving. Cut and serve in squares.
- 3. This keeps remarkably long - is delicious days after being made.
RITZ CRACKER CAKE WITH PINEAPPLE
This ritz cracker cake with pineapple is a simple dessert recipe with ritz crackers that is sweet, airy, and so, so easy to prepare!

Steps:
- Preheat oven to 325ºF. In a large bowl, use an electric mixer to whisk the eggs until stiff peaks form. Fold in the sugar and baking powder and mix gently. Add the crushed Ritz crackers and the nuts and mix gently to combine.
- Grease a 9x13'' baking dish. Pour the Ritz cracker mixture into the baking dish and flatten with a spatula. Transfer to the oven for 25-30 minutes until golden brown.
- Remove the pan from the oven and cool completely.
- Combine the Cool Whip, cream cheese, and the strained crushed pineapple and mix to combine.
- Pour the topping on top of the cooled crust. If desired, add maraschino cherries and toasted coconut on top. Transfer to the fridge for at least one hour to set up. Enjoy!
