8 chicken thighs , skin on and bone in
1 tsp cumin
½ tsp paprika
2 tbsp olive oil
6 pitta breads
150ml hot chicken stock
175g walnuts
1 small onion , chopped
2 garlic cloves , chopped
50ml single cream
juice 1 lemon
handful coriander , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a roasting tin, toss together the chicken, cumin, paprika, 1 tbsp olive oil and seasoning. Cook for 40 mins until the chicken is crisp and cooked through.
  • Meanwhile, tear up 1 pitta bread and place in a small bowl. Pour over a couple of tbsp chicken stock and leave to soak. Dry-fry the walnuts in a frying pan for about 3 mins until golden and toasted. Set aside. Heat the remaining oil in the pan and cook the onion and garlic until softened. Place the softened pitta bread, onion mixture and most of the nuts into a blender. Pour over the rest of the chicken stock and whizz together until a rough paste forms. Return the mixture to the pan. Add the cream and lemon juice, season and keep warm.
  • When the chicken is cooked, arrange on a platter. Stir the coriander through the sauce and spoon into a bowl. Roughly chop the remaining walnuts and scatter over the chicken. Toast the pittas, cut into wedges and serve alongside

1 (5 to 6 pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons (1/4 stick) butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges
Olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
  • Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

4 cloves garlic, chopped
1 tablespoon chopped fresh thyme

1 lemon, zested and halved

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix butter, garlic, thyme, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl.
  • Loosen skin on chicken breast; rub butter mixture between skin and breast meat. Press on the skin to distribute evenly. Rub oil, remaining 1/2 teaspoon salt, and 1/2 teaspoon pepper all over; place lemon halves inside cavity. Set in a baking pan.
  • Roast in the preheated oven, basting after 30 minutes, until chicken is no longer pink, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Let rest before carving, about 15 minutes.

1 4-pound chicken
1 small onion
1 sprig tarragon
1 sprig parsley
Olive oil for brushing
6 1/2 ounces of walnut meats, finely ground
6 tablespoons white vinegar
1 medium onion, finely chopped
1 tablespoon olive oil
1/2 teaspoon minced garlic
1/4 cup chopped fresh coriander
1/8 teaspoon hot Hungarian paprika
2 cups chicken stock or broth
1 1/4 teaspoon fenugreek
3/4 teaspoon ground coriander
1/2 to 1 teaspoon turmeric

Steps:

  • Heat the oven to 450 degrees.
  • Wash and dry the chicken and stuff its cavity with the whole, peeled onion, the sprig of tarragon and parsley. Rub the skin with olive oil.
  • Place the chicken in a roasting pan in the oven, then reduce the heat to 350 degrees. Roast the chicken for about 45 minutes, until it is tender.
  • While the chicken is roasting, make the walnut sauce.
  • Saute the chopped onion in one tablespoon of olive oil, until it is soft.

Steps:

  • Preheat oven to 400°F. Melt 1/4 cup butter in large skillet over medium heat. Add giblets (if using), onion, carrot, sage, and garlic. Sauté until carrot is tender, about 10 minutes. Add wine; simmer until evaporated, scraping up browned bits. Remove from heat. Mix in bread, walnuts, egg, Parmesan, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  • Spoon stuffing into cavities of chickens; skewer cavities closed. Rub each chicken with 2 tablespoons butter; sprinkle with salt and pepper. Arrange in roasting pan. Lay 6 pancetta slices atop each to cover. Surround with fennel.
  • Roast chickens and fennel 45 minutes. Turn fennel over. Roast until chickens are golden and thermometer inserted into thickest part of thigh registers 165°F, basting with pan juices, about 30 minutes. Transfer chickens and fennel to platter. Let rest 10 minutes.
  • Tilt roasting pan; spoon fat from pan juices. Serve chickens with pan juices.

Chicken stock, preferably homemade (page 160), or water as needed
One 3- to 4-pound chicken, trimmed of excess fat
2 medium onions, peeled and quartered
2 carrots, chopped
2 celery stalks, chopped
1/4 cup fresh parsley leaves, stems reserved and tied together
Salt and black pepper to taste
1 thick slice day-old bread
1 cup walnuts, blanched
3 garlic cloves, peeled
1 fresh hot red chile, stemmed and seeded, or 1 teaspoon pure chile powder, like ancho or New Mexico

Steps:

  • Bring a pot of chicken stock or water to a boil (starting with stock will mean even more flavorful chicken and even better stock when you're done). Add the chicken, onions, carrots, celery, parsley stems, salt, and pepper; the liquid should just cover the chicken. Simmer, uncovered, over low heat, until the chicken is cooked through, about 30 minutes. Remove the chicken and cool to room temperature. Strain the stock and set aside.
  • Put the bread in a bowl and saturate it with some of the stock. Squeeze any excess liquid out of the bread, then place it in a food processor with the parsley leaves, walnuts, garlic, and chile. Process until the walnuts are ground, then, with the machine running, pour in enough of the reserved stock to form a creamy sauce, about 2 cups. Reserve the remaining stock for another use.
  • Season the sauce with salt and pepper. Carve the chicken and serve it with the sauce.
  • Walnut Chicken Salad
  • When the chicken is cooked, remove the meat from the bones and chop into small pieces; combine with enough of the sauce to create a chicken salad. Serve at room temperature.

Pan drippings and chicken necks left over from Roast Chicken with Herbs
1 cup dry white wine
1 tablespoon cold butter
Coarse salt and ground pepper

Steps:

  • After preparing Roast Chicken, remove rack from roasting pan, leaving necks in pan; place pan on stove (it may need to be set across two burners) over medium-high heat. Cook, stirring occasionally, until necks and chicken bits remaining in pan are deep brown, 3 to 4 minutes; spoon off and discard all but 1/4 cup of the fat.
  • Add 1 cup dry white wine, and boil until reduced by half, scraping up browned bits with a wooden spoon, 4 to 6 minutes. Carefully pour contents of pan through a fine-mesh sieve into a small saucepan; add any juices that have accumulated on platter from resting chickens.
  • Remove pan from heat; add 1 tablespoon cold butter, and swirl pan just until butter has melted and sauce has thickened. Season with coarse salt and ground pepper; serve with roast chickens. (If necessary, reheat sauce but do not boil.)

1 small yellow onion, thinly sliced
1 pound assorted mushrooms (such as shiitake, cremini, and white), stemmed and quartered
2 tablespoons sherry vinegar
1 tablespoon all-purpose flour
1 1/2 cups homemade or low-sodium store-bought chicken stock
2 tablespoons chopped fresh flat-leaf parsley, plus sprigs
1 tablespoon heavy cream

Steps:

  • Preheat oven to 375 degrees. Season chicken with salt and pepper. Heat oil in a large ovenproof skillet over medium-high heat. Add chicken, skin side down; cook until golden brown, 4 to 5 minutes. Flip; transfer to oven. Roast until a meat thermometer registers 160 degrees, about 15 minutes. Transfer to a plate; cover.
  • Place the skillet over medium heat. Add onion; cook, stirring, 1 minute. Add mushrooms. Cover; cook, stirring occasionally, 3 minutes. Stir in vinegar. Add flour; cook, stirring, 1 minute. Stir in stock and chopped parsley; simmer, stirring, until thickened, about 5 minutes. Stir in cream; season with salt and pepper. Serve with chicken; garnish with parsley sprigs.

3 cups water
1 1/2 teaspoons salt, divided
1 1/2 cups walnuts
1/2 cup finely chopped onion
3 slices white bread or 2 pita breads
1 teaspoon paprika, divided
1/4 teaspoon black pepper
sliced black olives, to garnish

Steps:

  • In a large pan, simmer the chicken with water and 1/2 tsp salt until cooked, 20-50 minutes, depending on whether it is bone in or not.
  • Strain through cheesecloth or a fine strainer and set chicken aside to cool.
  • Boil the water stock down until you have 1 1/2 cups.
  • Remove the cooled chicken from the bones while the stock is reducing and chop into 1-inch pieces.
  • In a food processor or blender, blend the walnuts, onions and cooled, reduced stock.
  • Break the bread into chunks and add to the blender, along with 1/2 tsp paprika, 1 tsp salt and the pepper.
  • Blend to a smooth paste.
  • Put the chicken pieces in a bowl, pour the walnut paste over, and toss gently to combine.
  • Garnish with the remaining paprika and sliced black olives.
  • Particularly nice served with fresh fruit.

1 cup butter at room temperature
1 whole head garlic, minced
3 lemons, zested
1 orange, zested
2 tablespoons chopped chives
1 tablespoon toasted sesame oil

1 ½ teaspoons ground black pepper
1 teaspoon ground coriander

Steps:

  • Rinse chicken and allow to air-dry for 30 minutes.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Beat butter, garlic, lemon zest, orange zest, chives, sesame oil, thyme, salt, black pepper, and coriander in a bowl until thoroughly combined. 1 chicken, cut into serving pieces (legs and thighs should be severed at the joint)
Salt and pepper
2 ounces French or Italian bread
1 cup milk or stock
4 ounces walnuts, about 1 cup
1 small clove garlic, peeled
1/4 cup walnut, hazelnut or olive oil
Paprika or chili powder to taste
1/2 cup chopped fresh parsley leaves, optional

Steps:

  • Turn the heat to medium under a nonstick skillet large enough to hold the chicken pieces without crowding them; use two skillets if necessary. Cook on the first side about 10 minutes, rotating the pieces and adjusting the heat as necessary to brown the pieces evenly. As the pieces brown, season with salt and pepper. Cook the second side as you did the first, then turn once or twice more until done, a total of 20 to 30 minutes. (You can check for doneness by cutting into the pieces; there should be no sign of blood, although traces of pink are all right. The breast and wing pieces will finish cooking first; keep them warm in a low oven, or just set them aside and serve them less than piping hot.)
  • Meanwhile, soak the bread in the milk or stock. Put the walnuts, garlic and some salt in the container of a food processor, and pulse to grind coarsely. Gently squeeze some liquid from the bread, and add the bread to the container, along with the oil. Process until combined but not puréed. Add as much of the remaining milk or stock as necessary to give the mixture a mayonnaise-like consistency. By hand, add the paprika or chili powder, and stir in the parsley if you are using it. Taste and adjust seasoning as necessary.
  • Serve the chicken hot or at room temperature with the sauce spooned over it.

1 tablespoon flour
1 1/2 cups chicken stock
2 tablespoons red wine vinegar or 2 tablespoons cider vinegar

1/8 teaspoon cinnamon (ground)
1/8 teaspoon cayenne pepper
1 bay leaf
1/8 teaspoon saffron (ground)

1 cup shelled walnuts, pulverized into a paste (about 3 oz)

Steps:

  • Pat chicken dry inside and out with paper towels, then truss it securely with white kitchen cord.
  • Mix the butter and oil together, then brush chicken with this mixture until thoroughly and completely coated.
  • Preheat oven to 475°F.
  • Place chicken on its side on a rack in a shallow baking pan just large enough to hold the chicken.
  • Roast in the center of the oven for 10 minutes, then turn over onto other side, brush again with the butter-oil mixture, and roast for another 10 minutes.
  • Turn bird onto its back, reduce temperature to 400F, baste with the butter-oil mix, sprinkle with salt and pepper, and roast for another 40 minutes (basting every 10 minutes with the butter-oil mixture and/or the juices in the pan).
  • To test for doneness, pierce the thigh with a sharp knife, if the juice that trickles out is pink, roast for another 5-10 minutes.
  • To make the walnut sauce: in a heavy 10-12" skillet, melt the butter over High heat, add the onions& garlic, lower heat to Medium, and, stirring occasionally, cook uncovered for 3 to 5 minutes, or until the onions are soft but not brown.
  • Stir in the flour and mix into a paste, then pour in the chicken stock, bring to a boil over High heat, stirring constantly until the mixture thickens.
  • Stir in the vinegar, cloves, salt, pepper, bay leaf, saffron, parsley,& walnuts.
  • Lower heat and simmer uncovered for about 5-6 minutes, then taste for seasoning.
  • Quarter the chicken, pour the sauce over the quarters, and serve.
