This is one of the easiest side dishes I've found. I don't even like most tomatoes, but I love these sweet little cherry tomatoes. This is the basic recipe, but you can also add slivered garlic to the roasting pan and/or chopped fresh basil and Parmesan cheese at the end. Very good with pasta!

¼ cup olive oil
1 tablespoon balsamic vinegar
1 ½ teaspoons salt
¼ teaspoon ground black pepper
3 pints cherry tomatoes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk olive oil, balsamic vinegar, salt, and pepper in a large bowl. Add cherry tomatoes; toss to coat.
  • Spread cherry tomatoes in an even layer on a rimmed baking sheet.
  • Roast until skins are slightly shriveled, 35 to 40 minutes.

Good olive oil
Kosher salt

20 fresh basil leaves, chopped or julienned
Sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the tomatoes lightly with olive oil on a sheet pan. Spread them out into one layer and sprinkle generously with kosher salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft.
  • Transfer the tomatoes to a serving platter and sprinkle with basil leaves and sea salt. Serve hot or at room temperature.

24 Triscuit Rosemary and Olive Oil Crackers (from one 9 ounce box)
1 tablespoons extra virgin olive oil
3 tablespoons freshly grated Parmesan cheese
Roasted Cherry Tomatoes (recipe follows)
24 tiny sprigs fresh thyme, optional for serving
Roasted Cherry Tomato Sauce
24 cherry tomatoes, (from 10.5 ounce package)
2 cloves garlic smashed
2 tablespoons olive oil
1 1/2 teaspoon balsamic vinegar
1 teaspoon fresh thyme leaves
1/2 teaspoon brown sugar
1/4 teaspoon coarse salt

Steps:

  • 1. Preheat oven to 400°. Fill a 9-by-13-inch pan halfway with warm water. Add Triscuit Crackers in 2 batches and soak, turning twice until just soft, about 2 minutes, no more than 3 minutes. Oil two 12 cup (or one 24 cup) mini muffin tins and press a softened Triscuit into each cup, pressing and molding any cracks together. Sprinkle each with cheese. Bake until firm and slightly more golden, about 25 minutes. 2. Fill each cup with a roasted cherry tomato, and drizzle a little sauce over top of each one. Serve garnished with thyme, if desired. Serve immediately. Tomatoes: 1. Preheat oven to 325º. Arrange tomatoes and garlic in a non-reactive 9x5- inch baking dish (loaf pan). Whisk together olive oil, vinegar, thyme, sugar, and salt. Drizzle over tomatoes and garlic. 2. Bake until tomatoes are wilted and caramelized, about 40-45 minutes. Let cool. Store cooled tomatoes and juices in an airtight container in refrigerator for up to 5 days.

2 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
1/4 cup packed fresh basil leaf, torn if large

Steps:

  • Heat oven to 400°F.
  • Combine all the ingredients except the basil in a roasting pan.
  • Roast for 20 minutes, stirring occasionally, until the tomatoes are just bursting.
  • Carefully transfer the tomatoes to a bowl and set aside.
  • Place the roasting pan on the stove over medium heat (or transfer the liquid to a small saucepan) and reduce liquid until slightly thickened, about 5 minutes.
  • Toss the tomatoes with the basil.
  • Drizzle some of the thickened balsamic sauce on each serving.

1 (16 ounce) package penne pasta
1 tablespoon chopped fresh basil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread tomatoes in a single later in a 9x13-inch baking dish. Add olive oil, shallots, garlic, balsamic vinegar, sugar, salt, pepper, and pepper flakes; toss until tomatoes are coated with oil and seasonings.
  • Roast, uncovered, in the preheated oven, stirring occasionally, for 40 minutes.

24 cherry tomatoes, washed and dried

Steps:

  • Using a serrated knife, slice about 1/8 inch from the top of each tomato. If tomatoes do not sit upright, trim a tiny piece from the uncut side to create a flat bottom. (Do not cut off too much or filling will leak out.) With the tip of a small knife, gently loosen the flesh around the inside of each tomato. Scoop out seeds with a small melon baller. Tomatoes can be prepared 1 hour in advance and kept at room temperature.

For parsley cherry-tomato sauce
1 1/2 lb cherry tomatoes (5 cups)
1/2 teaspoon salt
1/4 teaspoon dried hot red-pepper flakes
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 cup firmly packed fresh flat-leaf parsley leaves
1 garlic clove, sliced
1 tablespoon red-wine vinegar

a well-seasoned 10-inch cast-iron skillet; an instant-read thermometer

Steps:

  • Make roast:
  • Put oven racks in upper and lower thirds of oven and preheat oven to 425°F.
  • Pat roast dry and sprinkle with salt and pepper. Heat oil in skillet over moderately high heat until hot but not smoking, then sear roast until underside is browned, about 4 minutes. Turn meat over, then transfer skillet to upper rack of oven and roast until thermometer inserted 2 inches into center of meat registers 120°F, 20 to 25 minutes. Transfer to a cutting board and let stand 15 minutes. (Internal temperature of meat will rise to 130 to 135°F for medium-rare.)
  • Make sauce while meat cooks:
  • Toss together tomatoes, salt, red-pepper flakes, and 1/4 cup oil in a 13- by 9-inch glass baking dish. Roast on lower rack until tomatoes burst and release their juices, about 30 minutes.
  • Meanwhile, pulse parsley and garlic with vinegar and remaining 2 tablespoons oil in a food processor until chopped, then transfer to a bowl.
  • Stir tomatoes with their juices into parsley mixture. Slice roast across the grain and serve with sauce.
