1 tablespoon butter
1 tablespoon dry milk powder
1 tablespoon white sugar
1 ½ teaspoons salt
1 ½ tablespoons dried parsley
2 teaspoons garlic powder
3 cups bread flour
2 teaspoons active dry yeast

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Basic Bread cycle; press Start.

I wanted to make a roasted garlic bread with cheese and couldn't find a recipe I liked, so I sort of made one up by combining a couple I found on the internet and after tweaking a little it turned out pretty good.

1 1/4 cups warm water
2 tablespoons light olive oil
4 cups bread flour
1 teaspoon dried thyme
1 1/2 teaspoons salt
2 teaspoons bread machine yeast
4 ounces jalapeno jack cheese, grated
10 -15 roasted garlic cloves

Steps:

  • Add all ingredients to bread machine in order listed (or as recommended by your machine's manufacturer). Select dough cycle and press start.
  • When complete, turn dough out onto a floured surface and knead a few times, then divide dough in half.
  • Shape each half into a round or oval loaf, put on a greased pan and let rise until about double.
  • Bake at 350°F for about 25-30 minutes until golden brown and sounds hollow when tapped. Cool on wire racks at least 15 minutes before slicing. Great served with a steak dinner or as an appetizer with dipping oil.

1 bulb ​roasted garlic
3 tablespoons butter
4 cloves garlic (minced)
1/2 cup water
1/3 cup milk
2 3/4 cups bread flour
1/3 cup Parmesan cheese (grated)
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon garlic powder
1-1/2 teaspoons bread machine yeast

Steps:

  • Gather the ingredients.
  • Prepare roasted garlic . After squeezing garlic out of cloves, mash slightly and measure 1/4 cup.
  • In a small microwave-safe dish, combine butter and minced garlic. Microwave on high for 1 to 2 minutes until the garlic is fragrant.
  • Place all ingredients-butter and garlic mixture, water, milk, bread flour, Parmesan cheese, sugar, salt, garlic powder, and yeast-except the roasted garlic-in bread machine pan in the order recommended by the manufacturer.
  • Listen to the machine as it kneads ; if it sounds rough or straining add more warm water. If the dough is too wet or soft, add more flour. This is common practice in bread machines since flour absorbs more or less water depending on the growing conditions of the wheat and the region where it was grown.
  • Add mashed garlic at the Raisin/Nut signal or 5 to 10 minutes before the last kneading cycle ends. Select the Basic/White cycle and use Medium or Light Crust Color. Do not use delay cycles.

Roast a whole head of garlic and then spread it on a baguette before another bake with Parmesan and parsley.

1 head garlic
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
One 12-inch baguette, split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the top third off the head of garlic, exposing the tops of the garlic cloves. Put on a piece of aluminum foil, drizzle with 1 tablespoon of the oil and sprinkle with 1/4 teaspoon each salt and pepper. Wrap tightly and roast until the cloves are golden brown and very soft, about 45 minutes; cool slightly.
  • Unwrap the garlic and pour any garlic-flavored oil from the foil into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 2 tablespoons oil and mash with a fork until smooth; season with additional salt and pepper.
  • Put the bread halves on a baking sheet and evenly spread with the roasted garlic mixture. Top with the Parmesan and a few grinds of pepper. Bake until the bread is toasted and the cheese is melted, about 10 minutes. Sprinkle with parsley and cut into pieces.

  • Preheat the oven to 400 degrees Fahrenheit. Using a serrated knife, slice through the loaf of bread horizontally to make two evenly-sized slabs. Place them on a large, rimmed baking sheet (lined with parchment paper for easy clean-up, if desired).
  • Remove the cloves of roasted garlic from the heads. In a shallow bowl or plate, mash the cloves with a fork until mostly smooth. Add the butter and salt and mash it all together until evenly combined. Scoop half of the mixture onto the cut side of one piece of bread, and spread it evenly across with a butter knife or spatula. Repeat with the remaining garlic on the remaining bread.
  • Bake for 5 minutes (for softer bread) or 10 to 12 minutes, until golden at the edges and crisp enough to resist a gentle squeeze (for toasted bread as shown in photos).
  • Sprinkle with parsley. Once cool enough to handle, slice into pieces about 2 to 3 inches wide with a serrated knife. Serve promptly. Bread should be consumed or refrigerated within 2 hours.
