ROASTED MINI SWEET PEPPERS



Roasted Mini Sweet Peppers image

Mini sweet peppers are tossed with olive oil, garlic, and Parmesan, then roasted until tender.

1 pint mini peppers ((8 oz))
2 tablespoons olive oil
1/2 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
2 tablespoons Parmesan (dry-grated )

Steps:

  • Preheat your oven to 400 degrees F. Line a large rimmed baking sheet with foil.
  • Cut the mini peppers in half lengthwise. I usually leave the stem as I think it's pretty - but you can cut it off if you wish. The larger mini peppers might have some seeds and membranes - remove those with your fingers or with a paring knife.
  • Place the peppers in a large bowl. Toss them with the olive oil, salt, pepper, garlic powder, oregano, and Parmesan.
  • Arrange the seasoned mini peppers in a single layer on the prepared baking sheet.
  • Bake them until tender, about 20 minutes. Serve immediately.

8 Organic Baby Carrots, trimmed, scrubbed, and halved, leaving ½ of stem attached or larger carrots cut into quarters and 4" lengths
2 tablespoons Organic Olive Oil, plus more for drizzling
Coarse salt and freshly ground black pepper
1-2 Organic Navel Oranges, or 3-4 organic tangerines, peel and pith removed, sliced into 1/4" rounds and halved
¼ cup fresh Goat cheese
2- 3 ounces Pistachios, chopped
1 tablespoon Sherry Vinegar

Steps:

  • Step 1: Preheat oven to 425°. Step 2: On a baking sheet, drizzle Aurora Bites Mini Sweet Peppers and carrots with olive oil, and season with salt and pepper. Step 3: Roast, flipping once, until golden brown and tender, about 15-20 minutes. Step 4: Arrange roasted carrots and peppers with the citrus on a serving dish. Top with crumbled goat cheese and pistachios. Step 5: Whisk vinegar and remaining 2 tablespoons of oil. season with salt and pepper. Drizzle over ingredients.

1 pound carrots, peeled
2 tablespoons salted butter, melted
2 cloves garlic, minced
½ teaspoon garlic powder
salt and ground black pepper to taste
1 tablespoon minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Slice carrots on the diagonal into 1/4-inch slices and place into a bowl. Drizzle with butter and stir in fresh garlic, garlic powder, salt, and pepper. Spread onto the baking sheet in an even layer.
  • Roast in the preheated oven until carrots are lightly caramelized and soft, 20 to 22 minutes. Sprinkle with parsley.
