ROASTED SQUASH WITH BALSAMIC VINEGAR
This is an Italian way of roasting squash. Delicious with grilled lamb chops, roast chicken and pork.

Steps:
- Preheat oven to 400º. Line a cookie sheet with foil.
- Cut the squash lengthwise in half.
- Seed and cut it into 4" squares with skin on. Score the flesh with crosshatch cuts about 1/2 inch deep.
- Rub all over with olive oil.
- Set the pieces skin-side-down on the cookie sheet and sprinkle with coarse salt and freshly ground pepper.
- Bake 45 minutes or until easily pierced with a knife and lightly browned.
- Serve hot or at room temperature, sprinkled with balsamic vinegar.
BALSAMIC GLAZED BUTTERNUT SQUASH
Steps:
- Preheat oven to 400 degrees F.
- In a large bowl combine all ingredients and mix to coat the squash.
- Place squash on a nonstick baking sheet or a baking sheet lined with foil. Bake until the squash is tender and brown about 30 to 35 minutes making sure to flip the squash after 15 minutes.

- Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. Microwave, uncovered, on high until tender, 15-18 minutes., Meanwhile, in a large nonstick skillet, saute carrots and onion in oil until tender. Add garlic; cook 1 minute. Stir in beans, tomatoes, artichokes, zucchini, vinegar, thyme, salt and pepper. - In a shallow roasting pan combine beans, onion, and garlic.
- Drizzle with olive oil;s prinkle with salt and pepper.
- Toss mixture until beans are evenly coated.
- Spread in a single layer.
- Roast in a 450° oven for 8 minutes.
- Stir in squash and roast 6 to 8 minutes more or until vegetables are tender and slightly browned.
- Meanwhile, in a small saucepan bring the balsamic vinegar to boiling over medium-high heat; reduce heat.
- Boil gently about 5 minutes or until vinegar is reduced reduced by half (vinegar will thicken slightly).
- Drizzle the vinegar over roasted vegetables; toss until veggies are evenly coated.

ROASTED SQUASH WITH BALSAMIC SAUCE AND APPLES

- Heat oven to 400°F. Slice a small piece off the skin side of each squash half, so halves sit flat. Microwave on high in a covered bowl until flesh begins to soften, 2 minutes. Gently simmer ginger, vinegar and sugar in a small saucepan over medium-low heat until liquid decreases by 1/3, 8 to 10 minutes. Remove from heat and set aside. Line 2 large baking sheets with foil and coat with cooking spray. Place squash halves skin side down on baking sheets. Arrange apple slices in cavity of each half. Bake until apples soften, 25 minutes. Remove squash from oven, drizzle with balsamic sauce, return to oven and bake until apples brown, 5 to 6 minutes. Cut each squash half into quarters and transfer to a serving platter with any extra juices. Sprinkle with cherries and serve immediately.

- Preheat oven to 400 degrees then line a baking sheet with foil and spray with nonstick spray. Set aside.
- Pierce the bulb end of the butternut squash four or five times all the way around with a very sharp knife then microwave for 1-1/2 minutes to help soften the squash. Slice the top and bottom off then cut the squash in half to separate the bulb end from the straight end. Peel the straight end, slice into four planks, then chop each plank into a large cube and add to a large bowl. Peel bulb end then slice in half and remove seeds. Slice into wedges then chop.
- Toss butternut squash cubes with extra virgin olive oil, salt, garlic powder, and pepper then arrange on prepared baking sheet. Bake for 20-30 minutes (depending on how large you cut your cubes,) then drizzle with balsamic vinegar to taste while still hot, and then serve.
