Roasted Eggplant and Zucchini image

This recipe for Roasted Eggplant and Zucchini is fast (ready in less than 30 minutes), healthy and the perfect way to bake up summer fresh zucchini and eggplant together. It's a great side dish, can be used for meal prep or add it to pasta or Buddha bowls.

1 large eggplant, cut into 1-inch cubes
2 medium zucchini, cut into 1-inch chunks
3 tablespoons olive oil
½ teaspoon salt
Freshly ground pepper to taste
2 tablespoons chopped fresh basil
2 teaspoons aged balsamic vinegar

Steps:

  • Preheat oven to 450 degrees F.
  • Toss eggplant, zucchini, olive oil, salt and pepper in a large bowl. Spread out on a large rimmed baking sheet.
  • Roast, stirring occasionally until the vegetables are softened and browned in spots, about 20 minutes.
  • Transfer to a serving platter. Sprinkle with basil and drizzle with vinegar before serving. Can be served hot, room temperature or cold.

Roasted Cuban Zucchini image

Inspired by some traditional Cuban spices, this recipe is packed with flavor. Paprika, chili powder, and cumin are definitely the headlining stars - but don't forget about Cotija cheese, cilantro or lime because they also play key roles!

4 zucchini or yellow squash, quartered vertically
1/4 c olive oil or melted butter
1/2 Tbsp paprika
1 Tbsp chili powder
1/2 Tbsp cumin
1 tsp salt
1 tsp black pepper
1/2 c cotija cheese crumbled
1/4 c cilantro, chopped
fresh lime juice for spritzing

Steps:

  • 1. Preheat oven or grill to 400 f.
  • 2. Lay out zucchini spears onto a lightly greased pan or baking sheet.
  • 3. In a small bowl, combine oil / butter, paprika, chili powder, cumin, salt, and pepper. Brush seasoning mixture over zucchini / squash to coat (leave some mixture leftover) .
  • 4. Roast in oven at 400F for 20-25 minutes, or until squash has become tender (grill for 5-10 minutes)
  • 5. Remove from oven / grill and brush with remaining seasoning mixture. Top with crumbled cotija cheese, chopped cilantro, and a spritz of fresh lime

Succulent roasted vegetables with a sweet and smoky, herby taste. Good for a main course with noodles or rice, or as a side dish.

8 zucchini, peeled and chopped
1 eggplant, peeled and diced
8 carrots, diced
16 cherry tomatoes
2 red onions, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ cup olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
2 bay leaves, crushed
1 teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
salt and pepper to taste

Steps:

  • In a large bowl mix the zucchini, eggplant, carrots, tomatoes, onions and peppers with the oil, rosemary, thyme, bay leaves, oregano, garlic, lemon juice, lemon zest, salt and pepper. Cover and chill for at least 2 hours, and preferably overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • On a large roasting pan, roast the vegetables, uncovered, for 20 minutes, or until the tomatoes have split and the edges of some of the vegetables are starting to crisp. Remove from the oven and stir before returning to the oven for another 20 minutes. At this time reduce heat to 200 degrees F (95 degrees C) and continue cooking until vegetables are tender, turning every 20 minutes.

ROASTED ROSEMARY ZUCCHINI AND EGGPLANT MEDLEY

Great veggie side dish to roast in the oven or in a foil pan on the grill. I like to prepare it for roasting a couple of hours ahead to let the flavors blend.

1 large eggplant, sliced
3 medium zucchini, sliced (about 5-6 cups or use a combo of yellow squash and green zucchini)
1/2 cup thinly sliced onion
3 garlic cloves, minced
2 tablespoons olive oil
1/4 cup balsamic vinegar
1 teaspoon sugar
3/4 teaspoon kosher salt
1/2 teaspoon pepper
5 sprigs fresh rosemary

Steps:

  • Place sliced eggplant, zucchini and onions in a large bowl.
  • Add all remaining ingredients and toss to coat well. Pour into a baking dish or foil pan and bake at 450°F for about 25-30 minutes or until desired tenderness. Or place foil pan on grill and grill for approximately 20-25 minutes or until desired tenderness.
