ROSEMARY BRUSCHETTA

Small bundle fresh rosemary
Extra-virgin olive oil
4 slices rustic bread, like sourdough, 1-inch thick
1 clove garlic, peeled
Zest of 1/4 lemon
Juice of 1 lemon
Kosher salt and freshly ground black pepper
2 cups arugula
Shaved Parmesan, for serving

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Tie the bundle of fresh rosemary together using butcher's twine. Pour 1/4 cup of olive oil into a small dish for basting. Using the rosemary bundle as a pastry brush, dip in the olive oil and brush the bread on both sides. Place the bread slices on the direct heat side of the grill to char on both sides, about 1 minute per side.
  • Once both sides of the bread are charred, move the bread to the indirect heat side of the grill, place the rosemary bundle in between the bread slices, close the lid of the grill and cook until the bread is more crispy and golden brown on the outside, but still soft and chewy on the inside, 3 to 5 more minutes. Remove the bread slices from the grill and, while still warm, rub the entire surface with the garlic clove.
  • Add 1 tablespoon of olive oil, the lemon zest and lemon juice to a small mixing bowl and mix to combine. Season with salt and pepper. Dress the arugula with the olive oil dressing. Top the grilled bread slices with the arugula. Using a vegetable peeler, shave Parmesan over the top. Cut into rustic pieces, sprinkle with some charred rosemary leaves and serve.

Rob Evans is the chef at Hugo's, located in Portland, Maine. http://www.hugos.net/ This is his version of a not straight-from-the-can tuna sandwich. An Italian tuna, Gruyère cheese, charred-rosemary mayonnaise tuna sandwich. I have also posted the recipe for the charred-rosemary mayonnaise which makes this sandwich out of this world. Tuna Melts are my favorite sandwich. I made this today for lunch and I will never use another recipe again!

Number Of Ingredients 7

8 ounces italian tuna in olive oil, drained, with 1 tbsp oil reserved
1/8 cup celery heart, finely chopped
1/2 teaspoon celery seed
coarse salt & fresh ground pepper
4 slices multigrain bread
4 slices about 4 oz gruyere cheese
unsalted butter

Steps:

  • Gently flake tuna and place in stainless-steel bowl.
  • Fold in desired amount of mayo, chopped celery, and celery seed, adding salt and pepper to taste.
  • Lay bread on work surface.
  • Spread tuna on two slices and layer with Gruyère.
  • Top with remaining bread slices and press lightly with the palm of your hand to bring tuna just to the edges of each sandwich.
  • Melt a small amount of butter in a skillet over low heat and toast sandwiches until cheese melts and bread is golden brown, about 2 minutes on each side.
  • Transfer to cutting board and cut in half on diagonal.

Roast Beef with Rosemary Mayonnaise image

Serve the roast beef and the mayonnaise on their own, or put assorted breads alongside so that guests can make little sandwiches.

Yield Makes 12 buffet servings or 8 main-course servings

Number Of Ingredients 7

4 teaspoons finely chopped rosemary
4 teaspoons distilled white vinegar
2 cups mayonnaise
1 garlic clove, pressed
Romaine lettuce leaves
2 pounds thinly sliced roast beef
1 red onion, thinly sliced (optional)

Steps:

  • Place chopped rosemary and vinegar in medium bowl. Let stand 15 minutes. Whisk in mayonnaise and garlic. Season rosemary mayonnaise to taste with salt and pepper. (Can be made 2 days ahead. Cover and keep refrigerated.)
  • Line large platter with romaine leaves. Arrange roast beef atop lettuce. Sprinkle with onion slices, if desired. Serve roast beef and rosemary mayonnaise separately.

1 jalapeño
1 large egg yolk
2 teaspoons fresh lime juice
1 teaspoon Dijon mustard
1 cup grapeseed oil
Salt, pepper
Lime juice

Steps:

  • Grill 1 jalapeño, turning often, over medium-high heat until charred and blistered, about 5 minutes. Let cool. Peel, remove seeds if desired, and finely chop. Whisk together 1 large egg yolk, 2 teaspoons fresh lime juice, and 1 teaspoon Dijon mustard. Whisking constantly, slowly drizzle in 1 cup grapeseed oil, drop by drop at first, until mayonnaise is thickened and smooth. Add jalapeño; season with salt, pepper, and more lime juice, if desired.

4 cups water
1 teaspoon white vinegar
1 large egg, cracked
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
3/4 cup extra virgin olive oil
reserved tuna oil

Steps:

  • Lightly char rosemary (hold stems with tongs and rotate through burner flame for about 10 seconds), strip leaves, and finely chop (yields about 1 tbsp).
  • Bring 4 cups water to boil, reduce to simmer, and add vinegar.
  • Ease egg into water, cooking until whites set but yolk is still runny, about 2 minutes.
  • Transfer egg (as dry as possible) to blender (or bowl of food processor) with lemon juice and Dijon mustard.
  • Slowly add oils, processing until thick and creamy. Add rosemary. Makes about 1 cup.
