2 Tbsp butter
¼ cup all-purpose flour
½ tsp salt
pinch pepper
1 ½ cup milk
½ cup grated Parmesan cheese
6 eggs, separated
¼ cup chopped fresh chives
1 tsp grated lemon rind
½ bunch asparagus (8 oz/250 g)
1 pkg (8 oz/250 g) light cream cheese, softened
3 Tbsp light sour cream
½ cup finely diced sweet yellow pepper
¼ cup chopped fresh chives
½ tsp grated lemon rind
1 tsp lemon juice

Steps:

  • Grease 15- x 10-inch jelly roll pan; line bottom with parchment paper and set aside.
  • In saucepan, melt butter over medium heat; stir in flour, salt and pepper. Whisk in milk, ½ cup at a time; cook, stirring, until thick enough to coat back of spoon, about 3 minutes.
  • Stir in Parmesan cheese. Remove from heat. Whisk one-third of the sauce into egg yolks; whisk back into pan. Stir in chives and lemon rind. Set aside.
  • In large bowl, beat egg whites until stiff but not dry peaks form; stir one-quarter into yolk mixture. Scrape yolk mixture over whites; fold in. Spread evenly in prepared pan. Bake in centre of 425°F oven until puffed, golden and firm to the touch, about 12 minutes.
  • Place clean tea towel over soufflé. Top with baking sheet larger than pan. Invert and lift off pan; peel off paper. Starting at 1 short edge, loosely roll up soufflé and towel together. Let cool for 20 minutes.
  • Snap woody ends off asparagus and discard. In large skillet, bring 1 inch water to boil; add asparagus. Cover and simmer over medium heat until tender-crisp, about 3 minutes. Drain. Chill in bowl of ice water; drain. Cut into 1-inch long pieces.
  • In small bowl, beat cream cheese with sour cream until smooth; stir in yellow pepper, chives and lemon rind and juice.
  • Unroll soufflé. Spread with cream cheese mixture; arrange asparagus in single layer over top. Using towel to lift, roll up soufflé tightly. (Make-ahead: Wrap in plastic wrap and refrigerate for up to 1 day.)

3 tablespoons unsalted butter, plus extra for greasing the dish
1/4 cup finely grated Parmesan cheese, plus extra for sprinkling
3 tablespoons all-purpose flour
1 cup scalded milk
1/4 teaspoon of nutmeg
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
4 extra-large egg yolks, at room-temperature
1/2 cup grated aged Cheddar cheese, lightly packed
1 package frozen chopped spinach, defrosted and squeezed dry
5 extra-large egg whites, at room temperature
1/8 teaspoon cream of tartar

Steps:

  • Preheat the oven to 400 degrees F. Butter the inside of a 6 to 8-cup souffle dish (6 1/2 to 7 1/2 inches in diameter by 3 1/2 inches deep) and sprinkle evenly with Parmesan.
  • Melt the butter in a small saucepan over low heat. With a wooden spoon, stir in the flour and cook, stirring constantly, for 2 minutes. Off the heat, whisk in the hot milk, the nutmeg, cayenne, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook over low heat, whisking constantly, for 1 minute, until smooth and thick.
  • Off the heat, while still hot, whisk in the egg yolks, one at a time. Stir in the Cheddar, 1/4 cup of Parmesan and the spinach and transfer to a large mixing bowl.
  • Put the egg whites, cream of tartar, and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on low speed for 1 minute, on medium speed for 1 minute, then finally on high speed until they form firm, glossy peaks.
  • Whisk one quarter of the egg whites into the cheese sauce to lighten and then fold in the rest. Pour into the souffle dish, then smooth the top. Draw a large circle on top with the spatula to help the souffle rise evenly, and place in the middle of the oven. Turn the temperature down to 375 degrees F. Bake for 30 to 35 minutes (don't peek!) until puffed and brown. Serve immediately.

7 eggs, separated
1 tablespoon margarine
6 tablespoons unsifted all-purpose flour
1 dash cayenne pepper
3/4 teaspoon salt
1 1/4 cups milk
1/2 cup grated parmesan cheese
1/2 cup coarsely grated sharp cheddar cheese
1/4 teaspoon cream of tartar
2 (10 ounce) packages frozen chopped spinach
2 tablespoons butter or 2 tablespoons margarine
1/4 cup finely chopped onion
1/4 teaspoon salt
1/4 cup grated sharp cheddar cheese
1/2 cup sour cream
1/4 lb cheddar cheese, sliced

Steps:

  • Place whites and yolks in separate bowls. Let whites warm to room temperature for 1 hour.
  • Grease bottom of a 15 x 10-1/2 x 1-inch jelly-roll pan; line bottom with waxed paper; then grease with butter. Heat oven to 350 degrees.
  • Melt 1/3 cup butter in saucepan. Remove from heat. With wire whisk, stir in flour, cayenne, 1/2 teaspoon salt until smooth. Gradually stir in milk. Return to heat, bring to a boil, stirring. Reduce heat; simmer, stirring, until thick and leaves bottom of pan. Beat in 1/2 cup Parmesan and 1/2 cup Cheddar.
  • With whisk, beat yolks; beat in cheese mixture. With mixer at high speed, beat whites with 1/4 teaspoon cream of tartar until stiff peaks form when beater is slowly raised. With under-and-over motion, fold 1/3 whites into the cheese mixture. Carefully fold in remaining whites to combine. Turn into prepared pan.
  • Bake 15 minutes, or until surface is puffed and firm when pressed with fingertip.
  • Meanwhile, make filling - Cook spinach as package label directs. Turn into sieve; press to remove water.
  • In hot butter in medium skillet, sauté onion until golden. Add spinach, salt, 1/4 cup Cheddar and the sour cream; mix well.
  • With metal spatula, loosen edges of soufflé. Invert on waxed paper sprinkled lightly with Parmesan. Peel off waxed paper. Spread surface evenly with filling. From long side, roll up; place, seam side down, on greased cookie sheet. Arrange cheese slices over top. Broil, about 4-inches from heat, just until cheese melts. Use large spatula to remove to serving dish or board.

6 tablespoons all-purpose flour, plus more for baking sheet
1 1/2 cups skim milk
1/2 cup water
3 tablespoons unsalted butter
1 1/2 teaspoons coarse salt
Pinch of ground cayenne pepper
2 large egg yolks
8 large egg whites
Large pinch cream of tartar
1/2 cup grated Parmesan cheese (1 1/2 ounces)
2 pounds spinach, cleaned and large stems removed
1 onion, finely diced
16 ounces fat-free ricotta cheese
1/4 teaspoon freshly ground black pepper
1 tablespoon heavy cream
Tomato-Pepper Sauce(optional)
Vegetable-oil cooking spray

Steps:

  • Preheat oven to 400 degrees. Coat a 10-by-15-inch rimmed baking sheet with cooking spray, and line with parchment. Spray and flour parchment; shake off excess flour.
  • Heat milk in a saucepan until hot but not boiling; set aside. Place flour in an airtight container with the water; shake until dissolved. Set aside. Heat 2 tablespoons butter in a medium saucepan over medium heat. Add flour mixture; whisking constantly, cook until roux is lightly colored, 1 to 2 minutes. Whisk in hot milk; cook, stirring constantly, until thick, about 3 minutes more. Remove from heat; season with 1 teaspoon salt and cayenne. Lightly beat yolks in a bowl; gradually whisk some of the hot mixture into yolks to warm them. Whisk yolk mixture back into milk; set pan aside.
  • In a medium bowl, whisk egg whites until foamy. Add cream of tartar; whisk until smooth, firm peaks form. Stir a quarter of the whites and half the Parmesan into milk mixture; gently fold in remaining whites. Pour mixture onto prepared baking sheet; spread to fill all corners. Sprinkle with remaining Parmesan. Bake until top is browned and puffed, about 15 minutes. Remove from oven; let cool. Carefully invert onto a parchment-lined work surface; gently remove paper from bottom; set aside.
  • Bring a large saucepan of water to a boil. Fill a large bowl with ice and water; set aside. Add spinach to boiling water in bunches; cook until bright green and wilted, about 1 minute. Transfer to ice bath to stop cooking. Transfer to colander to drain; squeeze out excess water. Very finely chop spinach; set aside in a bowl.
  • Coat a baking sheet that is at least 15 inches long with cooking spray; set aside. Heat remaining tablespoon butter in a nonstick skillet over medium heat. Add onion, and cook, stirring occasionally, until tender, about 10 minutes. Remove from heat, and transfer to bowl with spinach. Add ricotta, and season with remaining 1/2 teaspoon salt and black pepper. Stir until well combined. Spread the filling over cooled souffle base. Using the parchment as a guide, roll souffle tightly, starting with a long side, and transfer carefully to baking sheet, seam side down. Brush with cream, and bake until filling is heated through and souffle is light golden, 25 to 30 minutes. Slice, and serve hot or at room temperature with sauce, if using.

4 egg yolks

6 egg whites
1/2 cup swiss cheese, grated
1 cup green onion, chopped

1/2 cup white wine
2 lbs shrimp, cleaned
1/2 cup mushroom, sliced
salt and pepper
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 dash white pepper
1/4 teaspoon salt
1 dash nutmeg

Steps:

  • Line a jelly roll pan with waxed paper, and butter and flour it.
  • In a saucepan, add milk to flour, and cook while stirring until thick.
  • Beat in egg yolks, one at a time.
  • Add salt, pepper, and nutmeg.
  • Beat egg whites, and then fold flour mixture into whites.
  • Add cheese, and pour mixture onto jelly roll pan.
  • Bake at 375 degrees for 18-20 minutes.
  • Turn souffle out onto dampened kitchen towel and remove waxed paper.
  • Spread souffle with shrimp filling and roll up jelly roll fashion.
  • Place on serving dish and garnish with remaining Bechamel sauce.
  • Shrimp Filling:.
  • Saute green onions in butter.
  • Add the wine and shrimp and cook 5 minutes.
  • Add salt, pepper, and mushrooms and simmer 5 minutes more.
  • Blend in 1 cup Bechamel sauce.
  • Bechamel Sauce:.
  • Melt butter in heavy saucepan.
  • Add flour and blend with a whisk.
  • Gradually add milk while whisking, and cook until sauce has thickened.
  • Add seasonings.

Using a few staple ingredients, you can whip up a chocolate dessert that's guaranteed to impress at a dinner party yet easy enough for a casual supper.

Unsalted butter, room temperature, for baking dish
1/4 cup sugar, plus more for baking dish
8 ounces semisweet chocolate, finely chopped, or semisweet chocolate chips (1 cup)
1 teaspoon pure vanilla extract
3 large egg yolks, lightly beaten, plus 4 large egg whites
1/4 teaspoon cream of tartar

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 1 1/2-quart tall-sided baking dish. Coat with sugar, tapping out excess. Set dish on a rimmed baking sheet.
  • In a large heatproof bowl set over a pot of simmering water, combine chocolate, vanilla, and 1/4 cup water. Stir until chocolate is melted and mixture is smooth, about 10 minutes. Remove from heat and let cool to room temperature, 20 minutes.
  • Stir egg yolks into cooled chocolate mixture until well combined. Set souffle base aside.
  • In a large bowl, using an electric mixer, beat egg whites and cream of tartar on medium-high until soft peaks form, about 2 minutes. Gradually add sugar and beat until stiff, glossy peaks form, about 5 minutes (do not overbeat).
  • In two additions, fold egg-white mixture into souffle base: With a rubber spatula, gently cut down through center and lift up some base from bottom of bowl. Turning bowl, steadily continue to cut down and lift up base until just combined.
  • Transfer mixture to dish, taking care not to get batter on top edge of dish; smooth top. Bake souffle until puffed and set, 30 to 35 minutes. (Do not open oven during first 25 minutes of baking.) Serve immediately.
