RON'S TRIPLE-CHOCOLATE CHIP COOKIES



Ron's Triple-Chocolate Chip Cookies image

Number Of Ingredients 12

8 ounces (2 sticks) unsalted butter
3/4 cup granulated sugar
3/4 cup firmly-packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour (scooped and leveled)
1 teaspoon salt
1 teaspoon baking powder
4 ounces chopped walnuts, pecans, or almonds (about 1 cup)
5 ounces bittersweet chocolate, roughly chopped to pieces
5 ounces milk chocolate, roughly chopped to pieces
5 ounces white chocolate, roughly chopped to pieces

Steps:

  • Combine the butter and sugars in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed until light and fluffy. Beat in the eggs and vanilla.
  • In a separate bowl, whisk together the flour, salt and baking powder. On low speed, add the flour mixture to the butter mixture in a few additions, scraping the bowl and beater in between. Do not over mix. Stir in the walnuts and the three types of chopped chocolate. Cover the bowl and refrigerate for at least 1 hour to firm.
  • Preheat the oven to 350 degrees F. Line three baking sheets with parchment paper or use non-stick baking sheets.
  • Using an ice-cream scoop or a slightly heaping tablespoon, drop mounds of the cooled cookie dough about 2 inches apart on the prepared baking sheets.
  • Bake for 12 to 15 minutes until the bottoms are brown, and the chocolate pieces have melted. Underbake for chewy cookies, or bake to the higher end of the time range for crispier cookies. Remove to a rack to cool completely. Store in an airtight container for up to 3 days.

RON'S BRAIDED CHALLAH

Number Of Ingredients 14

1 tablespoon sugar
1 3/4 teaspoons active dry yeast
1 cup minus 2 tablespoons water (warm but not boiling)
2 cups bread flour (scoop and sweep method, un-sifted), plus more for dusting
2 cups semolina flour (scoop and sweep method, un-sifted)
1 1/2 teaspoons sea salt
1/4 cup olive oil, plus more to drizzle
1 1/2 tablespoons honey
2 large egg yolks
1 large whole egg
3/4 cup raisins, optional
1 yolk
1 tablespoon cream or milk
Sesame seeds, for sprinkling, optional

Steps:

  • For the sponge starter: Add the sugar and yeast to the warm water. Mix to dissolve. Add about 1/2 cup of the bread flour and mix vigorously with a wire whisk. The mixture should look like a thick pancake batter. Cover with plastic or a plate and leave to ferment in a warm room temperature place for about an hour. This sponge will give the challah a rich flavor and will extend its shelf life.
  • Add the remaining 1 1/2 cups bread flour, the semolina flour and salt into a mixer bowl. Add the sponge starter, oil, honey, yolks and egg. Mix on low speed with the dough hook until the ingredients seem to come together. Then switch to medium speed and knead to develop the gluten, 5 to 7 minutes. The dough should be smooth and satiny, and have a nice stretch.
  • Shape the dough into a ball and place it back in the mixer bowl. Sprinkle a bit of olive oil and turn the dough so it's lightly coated. Cover with plastic or a plate and let rise in a warm area until doubled, about 1 1/2 hours. To test, lightly poke a finger in the dough. It should be relaxed and not pull back to shape immediately.
  • Turn the dough onto a lightly floured counter and fold it over upon itself few times to redistribute the yeast. If using, sprinkle the raisins onto the dough and press them into it.
  • Divide into desired number of braids (3, 4 or 6) and roll each braid to elongate. Braid the strands to a long loaf or a round shape and place on a baking tray lined with parchment paper. Brush the braided loaf with the egg wash and let rise until doubled in size, about 1 1/2 hours.
  • Preheat the oven to 450 degrees F as the challah rises.
  • Reapply the egg wash and, if using, sprinkle the seeds before placing the tray with the challah in the oven. Lower the oven temperature to 350 degrees F and bake until golden, 30 to 35 minutes. The challah will develop a deep brown and shiny crust, and will sound hollow when tapped on the underside. Cool on a rack.

RON'S CHEDDAR, CRANBERRY AND PISTACHIO COOKIES

4 ounces unsalted butter (1 stick), at room-temperature
2 tablespoons granulated sugar
1 cup finely shredded Cheddar
1 large egg
1cup all-purpose flour (scooped and leveled)
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 cup toasted chopped pistachios
1/3 cup finely chopped dried cranberries

Steps:

  • Combine the butter, sugar and cheese in the bowl of a stand mixer fitted with a paddle attachment. Beat until smooth and creamy, about 2 minutes. Do not incorporate too much air by raising the speed. Beat in the egg until incorporated.
  • In a separate bowl, whisk together the flour, baking powder, salt and cayenne to combine. Mix in the pistachios and cranberries.
  • On low speed, add the flour mixture to the creamed butter-cheese mixture in a few additions, scraping the bowl and beater in between.
  • Spread the dough along the edge of a large piece of waxed paper or plastic wrap. Using the edges of the paper or plastic, roll the dough into a log shape about 12 inches long. Twist the ends to close. Refrigerate for a minimum of 1 hour or freeze up to four weeks.
  • Preheat the oven to 350 degrees F.
  • Unwrap the dough log and, using a sharp knife, slice into 1/4-inch thick rounds. Place the rounds on parchment-lined or nonstick baking sheets and bake for 10 to 12 minutes, or until lightly golden brown. Remove to a rack to cool completely. Store in an airtight container for up to one week.

Every child keeps their special memories of every day with the family and I sure remember mine from when I was a little girl.

½ cup butter
½ cup vegetable oil
2 teaspoons ground ginger
4 cups all-purpose flour

Steps:

  • Beat the sugar, molasses, butter or margarine, and oil together. Add 2 cups of the flour and the baking soda, cloves, ginger, and cinnamon. Mix in the remaining flour 1/2 cup at a time until the dough is stiff. Flatten into disks and cover with plastic wrap. Refrigerate for at least 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • On a lightly floured surface roll the dough out to 1/4 inch thick and use cookie cutters to cut into desired shapes. Place cookies on a baking sheet and bake at 350 degrees F (175 degrees C) for 8 minutes.

These are my favorite cut-out cookies. Sweet and spicy, they're a wonderful Christmas treat. I've been making them every Christmas for almost 15 years now. You can make the dough up to 3 days ahead of time.

1 ¾ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch ground cloves
½ cup softened butter
1 cup packed brown sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Mix the flour, the baking powder, cinnamon, nutmeg, and cloves together in a bowl.
  • Cream the butter and brown sugar together with an electric mixer in a large bowl until smooth; beat the egg and vanilla extract into the butter mixture. Add the flour mixture in small amount to the butter mixture, beating each addition until blended. Form the dough into a ball, wrap with plastic wrap, and refrigerate at least 1 hour or up to 3 days.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
  • Roll the dough out on a floured work surface with a rolling pin to about 1/8-inch thickness. Cut with 2-inch cookie cutters. Arrange the cut cookies onto the prepared baking sheets.
  • Bake in the preheated oven until the edges begin to brown, 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

This recipe for spice cookies came to The Times from Claire Will of San Francisco after a callout for favorite holiday recipes. At first, it seemed rather plain Jane, but the hefty dose of ground cloves (3/4 teaspoon) was what lured me into testing it, and I have to admit I was skeptical. I was soon a believer. Of the five kinds of cookies I served to a group at a holiday party, those crisp-edged, soft-centered beauties were the first to vanish. One friend texted on his way home, "send recipe for spice cookies a.s.a.p."

1 cup/200 grams granulated sugar
1/4 cup/60 milliliters molasses
1 large egg

3/4 teaspoon ground ginger

Steps:

Steps:

FROSTING:
4-1/2 cups confectioners' sugar
1 cup heavy whipping cream
2 tablespoons lemon juice
GARNISH:

Steps:

  • In a very large bowl, beat the molasses, butter, sour cream and lemon juice until well blended. Combine the flour, brown sugar, spices, baking soda, lemon zest and salt; gradually add to butter mixture and mix well. Stir in the walnuts, raisins and candied peels. 2 cups whole almonds
boiling water to cover
⅔ cup chopped dried apricots
8 Medjool dates, pitted and chopped
4 ½ cups unbleached all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons ground ginger
1 ½ teaspoons baking powder
1 teaspoon ground cloves
½ teaspoon ground cardamom
½ teaspoon salt
2 eggs
1 cup brown sugar
1 cup honey
¼ cup blackstrap molasses
1 tablespoon water
2 teaspoons almond extract
2 teaspoons grated orange zest
1 teaspoon grated lemon zest
¾ cup confectioners' sugar
2 tablespoons whole milk
1 teaspoon lemon zest

Steps:

  • Cover almonds with boiling water in a bowl. Let stand for 1 to 2 minutes and drain. Rinse with cold water and drain again. Pat almonds dry and remove skin. Allow almonds to dry on paper towels.
  • Place half the almonds in a food processor; pulse until finely chopped. Add apricots and dates; pulse until fruit is chopped. Reserve remaining 1 cup almonds.
  • Combine flour, cinnamon, ginger, baking powder, cloves, cardamom, and salt in bowl. Beat eggs, brown sugar, honey, molasses, water, almond extract, orange zest, and 1 teaspoon lemon zest in a large bowl with an electric mixer until smooth. Add apricot mixture, blending until evenly distributed. Gradually stir in flour mixture on medium speed until dough comes together. Cover dough with plastic wrap and refrigerate for 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn dough onto a lightly floured surface and roll out to about 1/2-inch thick. Cut out cookies with a 2 1/2 to 3-inch diameter cookie cutter. Arrange cookies about 1 inch apart on ungreased baking sheets.
  • Lightly press 3 almonds into each cookie with tips towards the center to create a star pattern.
  • Bake in preheated oven until cookies begin to brown, about 12 minutes. Cool in the pans for 10 minutes before removing to cool on a wire rack.
  • Meanwhile, whisk confectioners' sugar, milk, and 1 teaspoon lemon zest in a bowl until glaze is smooth. Brush warm cookies with glaze and allow cookies to cool completely.
