GRILLED ROSEMARY STEAKS

Number Of Ingredients 8

4 (1 pound) New York strip steaks, 1-inch thick
2 teaspoons salt
1/4 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
2 sprigs fresh rosemary, cut in half
6 tablespoons butter
1 teaspoon salt
3 sprigs fresh rosemary

Steps:

  • For the steaks: In a baking dish, sprinkle the steaks on both sides with the salt and pepper and drizzle with the oil. Place the rosemary in the dish and allow to marinate on the counter at room temperature for 1 hour, turning the steaks halfway through to infuse all over with rosemary.
  • For the rosemary butter: In a saucepan over medium-low heat, add the butter and salt. Stir to melt the butter and dissolve the salt, then add the rosemary. Continue cooking on low until the butter is fragrant from the rosemary, 10 to 12 minutes. Remove the rosemary and discard.
  • Preheat a grill or grill pan to high heat. Remove the steaks from the baking dish, discard the rosemary and place the steaks directly on the grill. Cook for about 5 minutes on both sides for medium-rare. Remove from the grill and allow to rest under loosely fitted aluminum foil for 10 minutes.
  • Using the direction of the muscles as a guide, thinly slice the meat against the grain into strips and place on a serving dish. Pour the infused butter over the meat and serve.

1 cup red wine
1 teaspoon salt
1 sprig fresh rosemary
4 New York strip steaks, cut 1-inch thick

Steps:

  • Combine the red wine, salt and rosemary in a small bowl. Let stand at room temperature for 2 to 3 hours.
  • Heat a large griddle or cast-iron skillet over high heat. Place the steaks on the hot pan, and cook for about 8 minutes per side, or to desired degree of doneness. The internal temperature should be at least 145 degrees F (62 degrees C) for medium rare. Pour in the wine mixture, and allow it to boil for a minute. Serve steaks with sauce on a deep platter.

Some mornings you're looking at a package of round steaks or some other tough cut that NEEDS a marinade. And you've got 5 minutes before you have to walk out the door so there isn't time to measure out a lot of ingredients for something complexly seasoned. This marinade will make the cut because its almost as easy as the bottled kind. But you won't feel shortchanged at dinner time because it tastes like more work than it really is. Also good on chicken.

1/2 cup white wine
1 teaspoon minced garlic (or 1 clove garlic put through the press)
1 teaspoon dried rosemary
1/4 cup vegetable oil (I prefer olive oil)

Steps:

  • Mix all ingredients in a plastic, zipper bag.
  • Add steaks or chicken pieces and squash around to make sure that all surfaces are coated. Seal bag, removing as much air as possible.
  • Marinate, refrigerated, for 6-8 hours (flip bag halfway through if you have the opportunity.
  • Grill or broil meat according to your usual preference.
  • Note -- I use any sort of white wine that I happen to have on hand. The flavor will vary slightly but it will be good regardless of whether you used white zinfandel, Riesling, Chablis, or ?

1/2 cup balsamic vinegar
2 tablespoons extra-virgin olive oil
6 garlic cloves, coarsely chopped
1/2 teaspoon freshly ground pepper, plus more for seasoning
Needles from 6 rosemary sprigs
Coarse salt and freshly ground pepper

Steps:

  • Whisk together vinegar, oil, garlic, and pepper in a nonreactive bowl. Scatter half the rosemary in a shallow nonreactive dish; arrange meat on top. Cover with marinade; rub gently into meat. Sprinkle with remaining rosemary. Cover; refrigerate for amount of time indicated below, turning meat occasionally.
  • Before cooking, remove meat from refrigerator and let it come to a cool room temperature. Wipe off bits of garlic or rosemary; discard marinade. Season with salt and pepper; cook as desired.

1/4 pound Gorgonzola cheese, softened
1/2 stick (1/4 cup) unsalted butter, softened
3 tablespoons olive oil
a 3 1/2-pound buffalo tenderloin*, cut crosswise into eight to ten 1 1/4-inch-thick steaks
1/4 cup Dijon mustard
3/4 cup packed fresh rosemary leaves, chopped
freshly ground black pepper to taste
*available at some butcher shops

Steps:

  • Discard Gorgonzola rind and in a small bowl stir together cheese and butter until smooth. On a sheet of plastic wrap form Gorgonzola butter into a log about 4 inches long. Chill log, wrapped in plastic wrap, until firm, at least 1 hour. Butter may be made 1 week ahead.
  • Preheat oven to 450°F.
  • In a 12-inch heavy skillet (preferably cast-iron) heat 1 1/2 tablespoons oil over moderately high heat until hot but not smoking and sear half of steaks until browned, about 2 minutes on each side, transferring to a shallow baking pan. Sear remaining steaks in remaining 1 1/2 tablespoons oil in same manner.
  • When steaks are just cool enough to handle, spread tops and sides with mustard and sprinkle with rosemary, pepper, and salt to taste. Roast steaks in middle of oven 8 minutes for medium-rare (coating should just begin to brown). Transfer steaks to a cutting board and let stand about 3 minutes. Cut butter into about 20 thin slices.
  • Cut each steak in half horizontally. Tuck a butter slice between steak halves and top steaks with another butter slice.

1 lb sirloin steak, cut into 1 in pieces (2 1/2 cm)
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper, plus more to taste
8 sprigs fresh rosemary, bottom 4 inches (10 cm) of leaves removed
2 tablespoons extra virgin olive oil
4 cloves garlic, gently smashed
5 tablespoons unsalted butter, divided
1 cup red wine, such as Cabernet Sauvignon
1 teaspoon granulated sugar

Steps:

  • Heat a 12-inch (5 cm) cast iron skillet over medium-high heat for at least 10 minutes.
  • Add the steak to a medium bowl and season with the salt and pepper, tossing to coat evenly.
  • Thread 2 pieces of steak onto each rosemary sprig, sliding up the stem until the steak meets the leaves. Using scissors, trim the bottom of the sprigs so each end is about ½ inch long.
  • Add the olive oil and garlic to the pan, stir, and let heat for about 1 minute.
  • Once the oil begins to smoke, add 1 tablespoon of butter and stir to distribute. Place the skewers in the pan. Sear, without moving, for about 2 minutes, until a nice brown crust forms on one side. Using tongs, carefully flip each skewer over and brown on the other side, about 2 minutes more. Once cooked to your desired doneness, remove the steak skewers from the skillet and set on a clean baking sheet to rest.
  • Without reducing the heat, carefully pour the wine into the skillet. Cook until reduced to ¼ cup, 5-10 minutes. Once reduced, remove the garlic from the pan and discard.
  • Add the sugar and remaining 4 tablespoons of butter to the red wine reduction and stir until combined, 1-2 minutes.
  • Garnish the steak skewers lightly with salt and pepper, then transfer to a serving platter and spoon the sauce on top.
  • Serve immediately.
  • Enjoy!
