Roasted Peppers with Pine Nuts and Parsley image

This recipe is so delicious and easy. I enjoy it cold but it can be eaten immediately as well. I hope you enjoy this recipe!

2 red bell peppers
2 yellow bell peppers
2 ounces pine nuts
⅓ cup golden raisins
1 clove garlic, minced
½ cup chopped fresh parsley
½ cup olive oil
salt and ground black pepper to taste

Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil. Cut the peppers in half from top to bottom; remove the stem, seeds, and ribs, then place the peppers cut sides down onto the prepared baking sheet. Cook under the preheated broiler until the skin of the peppers has blackened and blistered, about 10 minutes. Place the blackened peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Once cool, remove the skins and discard.
  • Toast the pine nuts in a small dry skillet over medium-low heat, swirling the pine nuts in the skillet until they turn a light tan color and have a nutty fragrance, 1 to 2 minutes. Remove from heat and pour into a small bowl to prevent them from overcooking.
  • Slice the roasted peppers into strips, and arrange decoratively onto a serving platter, alternating red and yellow strips. Sprinkle the peppers with toasted pine nuts, raisins, garlic, and parsley, drizzle with olive oil, and season to taste with salt and black pepper.

2 red bell peppers
1 tablespoon all purpose flour
1 tablespoon butter, room temperature
1 tablespoon olive oil
1 1/2 cups chopped onions
2 teaspoons minced garlic
1 1/4 cups canned low-salt chicken broth
3/4 cup dry white wine
1/2 teaspoon dried thyme
1/4 teaspoon dried crushed red pepper
1 10-ounce bag spinach leaves, stems removed, leaves chopped
1/2 pound rotini pasta
3/4 cup freshly grated Parmesan cheese (about 2 1/2 ounces)
1/2 cup pine nuts, toasted

Steps:

  • Char bell peppers over gas flame or in broiler until blackened on all sides. Wrap in paper bag; let stand 10 minutes. Peel and seed peppers; cut into 1/2-inch strips.
  • Mix flour and butter in small bowl to form paste. Heat oil in large skillet over medium heat. Add onions; sauté until tender, about 5 minutes. Add garlic; sauté 1 minute. Add broth, wine, thyme and dried red pepper; simmer until liquid is reduced by half, about 6 minutes. Whisk in flour paste. Simmer until sauce thickens slightly, about 1 minute. Season with salt and pepper. Add roasted peppers and spinach and simmer until spinach wilts, about 2 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta well.
  • Add pasta, Parmesan cheese and pine nuts to sauce and toss to coat.

1 (12 ounce) jar roasted red peppers, sliced
4 cups fresh Baby Spinach or 4 cups frozen spinach, chard, sugar peas, basil leaves, arugula, pesto, artichoke hearts, broccoli florets
1 cup caesar salad dressing
parmesan cheese
cracked pepper
salt

Steps:

  • Cook pasta according to package directions. Heat a large saute pan with a light film of oil, toss in red peppers and spinach.
  • Heat until warmed (about 1 minute).
  • In the large saute pan, toss cooked pasta with spinach and peppers.
  • Add Caesar dressing, stirring frequently until heated through (approximately 3-5 minutes).

350 g Leggos roasted tomato and bacon stir through pasta sauce
50 g baby spinach leaves

Steps:

  • Cook pasta following packet directions.
  • once cooked , drain water, and stir through pasta sauce, and evaporated milk.
  • Over low heat, add spinach leaves and pine nuts.

3 large red bell peppers (1 1/2 lb total), cut lengthwise into 1/4-inch strips
1 teaspoon anchovy paste
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons extra-virgin olive oil
12 oz rotini or fusilli (short corkscrew pasta)
1/4 cup chopped fresh dill
5 oz feta, crumbled (1 cup)

Steps:

  • Cook onions, bell peppers, anchovy paste, salt, and pepper in oil in a 4- to 6-quart heavy pot over moderately high heat, covered, stirring occasionally, until vegetables begin to soften, 10 to 15 minutes. Remove lid and cook, stirring occasionally, until onions are golden, 10 to 15 minutes more.
  • While onions are browning, cook rotini in a 6- to 8-quart pot of boiling salted water until al dente.
  • Reserve 1 cup pasta cooking water, then drain pasta in a colander. Cook pasta with onion mixture in pot over high heat, tossing and adding enough reserved cooking water to keep pasta moist, 1 minute.

3 tablespoons raisins
3 tablespoons pine nuts

Steps:

  • Chop whole onions. Saute onions in hot oil in a nonstick pan until soft.
  • Meanwhile, slice whole peppers in a food processor, and add to the onions, cooking over medium heat until they begin to soften.
  • Stir in raisins, pine nuts, salt and pepper, and continue to cook until peppers are softened.

1 clove garlic
1 bunch kale, chopped
⅓ cup white wine
3 each roasted red peppers, diced
1 pinch Salt to taste
1 pinch Black pepper to taste
¼ cup pine nuts, toasted
½ cup Pecorino cheese, grated

Steps:

  • Bring a large pot of water to a boil.
  • In a large skillet, cook garlic in olive oil for 1-2 minutes or until slightly yellow in color. Add kale and saute for 3-4 minutes. Deglaze with white wine. ADD the roasted red bell peppers and season with salt and pepper.
  • In a separate skillet, toast pine nuts until slightly browned, then remove and set aside.
  • Cook pasta, drain and toss with sauce. Remove from heat and add pine nuts and cheese. Stir to combine and serve.
