BAKED TUNISIAN CARROT, POTATO AND TUNA FRITTATA
Tunisians often add tuna to their frittatas. I've tried this one with both tuna packed in olive oil and in water, and find that the tuna packed in water becomes too dry when the omelet bakes.

- Preheat the oven to 350 degrees. Steam the potatoes and carrots above 1 inch of boiling water until tender, about 10 minutes.
- Place the oil in a 2-quart baking dish or a 9-inch cast iron skillet. Rub the oil over the sides of the pan, and place in the oven. Meanwhile, whisk the eggs in a large bowl. Whisk in garlic, caraway, salt (about 1/2 teaspoon) and pepper to taste and harissa. Stir in the potatoes, carrots, tuna and parsley. Remove the baking dish from the oven, scrape the egg mixture into the hot baking dish and place in the oven.
- Bake 30 to 35 minutes until lightly colored on the top and set. Allow to cool for 10 minutes or longer before serving. Serve warm or at room temperature.

Steps:
- Cook potatoes in lightly salted boiling water until tender but still intact.
- Drain and return to pan.
- Cook over low heat until potatoes are dry, about 1 minute.
- Heat oil in a large, heavy skillet over medium heat until a light haze forms above it.
- Combine cayenne, cumin and water.
- Add cayenne mixture, lemon juice, caraway and salt to skillet.
- Cook, stirring constantly, until most of the liquid has evaporated.
- Remove from heat, add potatoes, and stir gently until evenly coated.
- Cool to room temperature before serving.

- Place potatoes and 1/2 teaspoon salt in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 12-15 minutes. Drain; rinse with cold water. Pat dry., Meanwhile, in a small saucepan, bring 1 cup water to a boil. Add beans; cook, uncovered, just until crisp-tender, 3-4 minutes. Drain; immediately drop into ice water. Drain and pat dry., Peel and cube potatoes; sprinkle with remaining salt and the pepper. Transfer to a serving bowl. Add beans, cucumbers, tomatoes, onion and 3/4 cup basil leaves. Posting for ZWT 2006 this is an appetizer or cold side dish. Sounds nicely spiced and very interesting. I would think the spices in this could be played with a little bit.

Steps:
- Place the potatoes in a pot with water to cover; add 1 teaspoon salt and the sugar.
- Bring to a boil over high heat then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
- Drain the potatoes, return them to the pan and shake in the dry pan for a few minutes, until thoroughly dry.
- Cut the potatoes into thick slices, several per potato, or into quarters.
- Place in a bowl and toss with the cumin, paprika, cayenne, garlic and olives.
- Dress with the olive oil, lemon juice and salt; refrigerate until ready to serve, or serve at room temperature.

- Cook potatoes in boiling water for 15 minutes or until tender but not too soft or mushy.
- Cool and peel, cut into cubes.
- Heat oil in a small skillet and add harissa, salt, cumin and lemon juice.

This Moroccan salad is both sweet and spicy. I like the olives and capers in it, but you could just as easily leave them out. I also wonder if it would be good with a handful of raisins, instead of the olives?

- Boil the sweet potatoes in just enough water to cover.
- Stir in the ginger, cinnamon, harissa, lemon, honey and salt and boil for about 10 minutes, or until the potatoes are cooked but not falling apart.
- The sauce should be thick, almost syrup-like.
- If it isn't, lift out the potatoes and boil the sauce until it is thicker.
- When the sauce is done, mix in the coriander, olives and capers.
- Cool and serve as an appetizer.

- Place the potatoes in a large saucepan and cover by 1 inch with water. Season with salt. Add bay leaf and bring to a boil over medium-high heat. Reduce heat to medium and simmer until potatoes can be easily pierced with a knife, 12 to 15 minutes. Do not overcook.
- Meanwhile, whisk olive oil, white wine vinegar, Dijon mustard, salt, and pepper in a small bowl together until emulsified.

- Steam or boil the potatoes until tender-about 15-20 minutes. I *very* slightly undercook the potatoes for best results. *After the potatoes have cooked, refresh under cold water, drain and cut into cubes. *Note: when I made this potato salad recipe I drained the potatoes, placed them in a bowl to cool until just warm and proceeded with the recipe. After the potato salad had cooled in the refrigerator then the fresh cilantro was stirred in just before serving. I wanted to avoid "cooking" the fresh herbs.
- Combine the remaining ingredients except for the herb(s) in a large bowl and mix well. Add the potatoes to the bowl and toss with the dressing. Can serve warm; or chill and serve (depends on time of year).
- Stir in the herbs just before serving.
