Steps:
- Slice 1 lemon half into 4 thin rounds and set aside. Grate the zest of the other lemon half and set aside; squeeze some of the juice into a bowl and mix in the yogurt and 1/4 teaspoon paprika. Preheat the broiler. Heat 1 teaspoon olive oil in a medium saucepan over medium heat. Add the garlic, oregano and red pepper flakes and cook until the garlic is golden, about 2 minutes. Add the lima beans, 1 1/2 cups water and the lemon zest; partially cover the pan, bring to a simmer and cook until the beans are tender, about 20 minutes. Season with salt and pepper. Remove from the heat and stir in the parsley, 1 tablespoon of the yogurt mixture and the remaining 1 teaspoon olive oil. Meanwhile, mix the remaining 1/2 teaspoon paprika, 1/2 teaspoon salt, and pepper to taste in a small bowl. Sprinkle all over the salmon; arrange on a foil-lined baking sheet and top each fillet with a lemon slice. Broil until just cooked through, 6 to 8 minutes. Serve with the lima beans and top with the yogurt mixture.

- Combine 1/4 cup toasted almonds, the roasted red peppers, vinegar and 1 tablespoon water in a blender. Puree until mostly smooth. With the machine running, slowly add 1/4 cup olive oil and puree until smooth; season with salt and pepper.
- Oil the grill grates. Toss the beans with the remaining 2 teaspoons olive oil; season with salt and pepper. Put in a grill basket and grill, tossing occasionally, until charred and tender, 8 to 10 minutes. Rub the salmon with olive oil and grill until well-marked, 3 to 4 minutes per side for medium doneness.
- Toss the beans with the basil and divide among plates. Sprinkle with the remaining almonds. Add the salmon to the plates and top with the sauce.
PEANUT BUTTER-GLAZED SALMON AND GREEN BEANS
This fast and fun weeknight meal reveals an unexpected use for peanut butter, transforming it into a savory five-ingredient sauce. The pantry favorite is combined with tangy lemon juice, fragrant ginger and toasted sesame oil to create a rich, supernutty glaze that pairs well with fatty salmon. Here the salmon is roasted on a rack of green beans, but a bed of broccoli florets would be an excellent alternative. The sweet-salty glaze can be made a day ahead and brought to room temperature before using.

Steps:
- Heat oven to 450 degrees. On a large rimmed baking sheet, combine green beans, scallions, garlic and 2 tablespoons of the neutral oil; season with salt and pepper. Toss to evenly coat, then spread in an even layer.
- Prepare the peanut butter glaze: In a small bowl, combine peanut butter, lemon juice, soy sauce, ginger, sesame oil and 1 tablespoon water. Season with salt and pepper, then whisk until smooth.
- Rub salmon with the remaining 1 tablespoon neutral oil and season with salt. Arrange salmon on top of beans and spoon half of the peanut butter glaze on top of the fish. Roast for 5 minutes, then spoon over the remaining glaze. Roast until salmon is cooked to medium and beans are crisp-tender, 5 to 7 minutes more, depending on thickness.
- Divide salmon and beans among serving plates. Top with peanuts and serve with lemon wedges.

Steps:
- Reserve a few rocket leaves for serving then put the remaining rocket, spinach and watercress in a salad bowl. Add the cherry tomatoes and set aside.
- To make the cannellini bean purée, put the beans, garlic, lemon juice, thyme, oil and 2 tablespoons of water in a food processor or blender. Season with salt and pepper, to taste, then process to a smooth, soft purée. Add a little more water, if necessary. Transfer to a saucepan and heat gently for about 5 minutes, stirring frequently, until piping hot. Alternatively, put the purée in a microwaveable bowl, cover and cook on high for about 4 minutes, stirring halfway through, until piping hot. Let stand for 1 minute before serving.
- Meanwhile, to cook the salmon fillets, heat the oil in a non-stick frying pan. Add the garlic and fry gently for 1 minute. Add the salmon and cook for 5-8 minutes, turning once halfway through.
- Drizzle the salad with a little balsamic vinegar, season to taste with salt and pepper and toss well. Put a spoonful of cannellini bean purée on each of 4 warmed serving plates. Put the reserved rocket leaves on top, followed by the salmon. Drizzle with a little extra virgin olive oil. Serve immediately with the salad.
- Variation: The bean purée would be delicious with most grilled foods. Try chicken, turkey, large prawns or tuna. Use other beans or a mixture of two or three types and keep the purée slightly chunky, if you prefer.

- Antoni Porowski’s Salmon and Spinach Rice Bowl with Green Tea Broth. This beauty is extra soothing, thanks to the soul-warming broth. It’s inspired by ochazuke, a Japanese dish that calls for pouring hot green tea over rice.
- Salmon Noodle Bowls with Chili-Yuzu Relish and Pickled Radishes. Feel free to substitute whatever veggies you have in the fridge. Carrots and cucumbers pickle like a charm, while steamed broccoli and edamame would work wonderfully as toppers.
- Wild Alaska Salmon and Smashed Cucumber Grain Bowls. Chewy, nutty farro stars as the base for this hearty meal, but you could easily swap in quinoa, rice or millet if you’d prefer.
- Salmon Bowl with Farro, Black Beans and Tahini Dressing. Bring on the plant-based protein and fiber. Every ingredient in this meal aims to keep you nourished and satiated, down to the avocado garnish.
- Hemp and Walnut Crusted Salmon with Broccoli and Kimchi Cauliflower Rice. Here’s a dinner worth bragging to your doctor about. Not only does the fish offer loads of heart-healthy omega-3s, but so do the hemp seeds and chopped walnuts.
- Salmon and Fennel Dinner Salad. Instead of a generous bed of grains, pearl couscous is tossed in with cabbage, fennel and herby yogurt dressing in order to let the veggies shine.
- Instant Pot Coconut Salmon with Fresh Herbs and Lime. Picture flaky, tender salmon steam-poached in turmeric-spiked coconut milk, crowned with fresh basil.
- TikTok Salmon Rice Bowl. Chow down Emily Mariko-style with this mix of shredded salmon, rice, avocado and kimchi drizzled with soy sauce, Kewpie and sriracha.
- Teriyaki Salmon Bowl. Even your picky kids will have no complaints about this sweet-and-savory 20-minute dish. Use store-bought teriyaki marinade to save yourself some time and effort.
- Sesame-Ginger Salmon Bowl. A rainbow of textures (and colors) awaits in this nutritious bowl. We’re talking soft spring greens, crisp root veggies, crunchy wonton crisps, fluffy rice and tender salmon.
7 SALMON BOWL RECIPES TO TRY FOR LUNCH | WELL+GOOD
From wellandgood.com
- Salmon burrito bowl. Like in Mariko's salmon bowl, you still need your fish, rice, and avocado for this one. It's the spices (chipotle powder, paprika, and cumin) that make it taste completely different.
- Salmon and broccoli bowl. If you have some leftover broccoli hanging out in your crisper, this is the perfect chance to integrate it into something really yummy.
- Mediterranean salmon bowl. This salmon bowl recipe is triple-registered dietitian-approved, so you know every ingredient is going to benefit the body.
- Korean rice bowl with sashimi (hoedeopbap) Raw salmon works just as well in a bowl as cooked salmon. Here, it's paired with tuna and several different types of greens, including green or red leaf lettuce leaves, chrysanthemum leaves, and perilla leaves—and they aren't the only veggies on the ingredients list either.
- Mango Caribbean-inspired salmon bowl. What makes this salmon bowl special is hands-down the mango-lime-coconut sauce—it's a must. The citrusy topping adds sweetness to the bowl without overpowering the taste of the salmon, a perfect balance.
- Barbecue salmon bowl. Just because summer is over doesn't mean you're done with barbecue sauce until May; it tastes delicious with salmon. Besides the barbecue sauce, the other must-have for this salmon bowl is the pineapple salsa—it brightens up the whole bowl.
- Pesto salmon bowl. Making your own pesto sauce only takes a minute and it's a great way to add more greens to your bowl. Other ingredients that taste great in this bowl are spring onions, cucumber, and baby peas, so throw 'em in there if you have them in your fridge.
