4 tablespoons butter
4 bulbs fennel, cut into wedge
3 tablespoons sugar
1 cup apple cider
1 cup chicken stock
2 sprigs thyme
Salt and freshly cracked black pepper
1/4 cup chopped parsley leaves
1 cup apple cider
1 teaspoon cayenne pepper
3 tablespoons brown sugar
Grapeseed oil, to sear
4 (8-ounce) boneless and skinless salmon fillets
Salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Braised Fennel:
  • In a large Dutch oven over medium-high heat, add the butter. Add the fennel and sugar and cook for 3 to 4 minutes until the fennel caramelizes. Add the cider, stock and thyme. Cook until the fennel is tender and liquid is reduced, about 10 minutes Season the fennel with salt and pepper, to taste. Add the parsley and mix well. Remove from the heat and cover.
  • Glaze:
  • In a small saucepan, add the cider, cayenne and brown sugar and cook over medium heat until 1/2 cup of liquid remains. Set aside.
  • Salmon:
  • In a large saute pan over medium-high heat, add the oil. Season the salmon fillets with salt and pepper, to taste, and sear for 4 minutes in the hot oil. Remove from the pan and put, seared side up, on a quarter sheet tray with a rack. Spoon the glaze over the top of each fillet and bake until cooked through, about 4 minutes. Remove from the oven to a serving platter and serve with the braised fennel alongside.

1 tablespoon fennel seeds
1/4 cup plus 2 teaspoons (packed) golden brown sugar
3 tablespoons Pimentón de la Vera (Spanish smoked paprika)
1 tablespoon coarse kosher salt
2 teaspoons freshly ground black pepper
2 teaspoons dried dill weed
Nonstick vegetable oil spray
1 3 3/4- to 4-pound side of salmon with skin (preferably wild salmon)
Olive oil

Steps:

  • Finely grind fennel seeds in spice mill or coffee grinder. Transfer to small bowl. Mix in next 5 ingredients.
  • Spray grill rack with nonstick spray. Prepare barbecue (medium-high heat). Brush salmon lightly on both sides with olive oil. Rub spice mixture generously over flesh side of salmon. Place salmon, skin side up, on grill rack; cover and cook until fish is slightly firmer, about 8 minutes. Slide rimless baking sheet under salmon to turn salmon over without breaking. Place another rimless baking sheet atop salmon. Using both hands, firmly hold baking sheets together and invert salmon; slide salmon, flesh side up, off baking sheet and onto grill rack. Cover and grill until just opaque in center, about 8 minutes longer. Using rimless baking sheet, remove salmon from grill. Gently slide salmon, flesh side up, onto platter and serve.

HERB SMOKED PACIFIC SALMON WITH SHAVED FENNEL AND DILL SALAD



Herb Smoked Pacific Salmon with Shaved Fennel and Dill Salad image

2 tablespoons Kosher salt
1/4 cup sugar
2 teaspoons coriander seeds
2 teaspoons fennel seeds
15 whole black peppercorns
3 bay leaves
1 1/2 cups dry white wine
8 (5 ounce) salmon fillets, cut thickly and uniformly
1/3 cup snipped fresh dill
Olive oil, for grilling
2 medium fresh fennel bulbs, shaved paper thin
1 medium cucumber peeled, cut in half, seeded and cut into long thin strips
1 fresh endive separated into individual leaves
Walnut-Dill Vinaigrette (recipe follows)

Steps:

  • This is a simple dish to prepare but timing is crucial. The cure can be made in quantity and stored refrigerated for up to 2 weeks. It is imperative that the salmon not stay in the cure for longer than 30 minutes before grilling or the surface will become dry and tough. It can cure for as short a time as 15 minutes. In volume situations, the salmon can be undercooked slightly and flashed in a hot oven to just heat through just before serving. The fennel needs to be shaved paper thin and ideally done just before serving. Do not store shaved fennel in ice water unless absolutely necessary - - it loses its fresh, aromatic flavor. Once shaved it can be held covered and refrigerated for up to 3 hours without browning.
  • Garnish: Daikon or Sunflower sprouts, rinsed fresh salmon roe and basil oil
  • In a saucepan over high heat, combine the salt, sugar, coriander and fennel seeds, peppercorns and bay leaves. Bring to a boil. Reduce the heat and simmer for 1 to 2 minutes. Remove from the heat and add the dill and let cool completely. Place the salmon fillets in a baking dish large enough to hold them in a single layer. Pour on the cooled wine mixture and let the salmon "cure" for 30 minutes only, turning once. Meanwhile prepare a charcoal fire along with some soaked hardwood chips or shavings. Lightly oil the grill.
  • Remove the salmon from the "cure" and drain off any excess liquid. It is fine if spices or dill adhere to the salmon.
  • Lightly brush the salmon with some olive oil. Place hardwood chips on coals, cover and smoke/cook the salmon over medium coals for 5 to 6 minutes or until just done. Be careful not to overcook the salmon or it will become dry and lose its wonderful texture. It should still be translucent in the center. To serve: Toss the fennel and the cucumber together and dress to taste with Walnut-Dill Vinaigrette. Arrange attractively on top of the endive leaves on chilled plates. Place salmon on top and garnish with the sprouts, salmon roe and drizzles of the basil oil around the plate. Salmon can be served warm or at room temperature.

  • Slice a medium size fennel into a 1/4 inch pieces and place them on a baking sheet. Sprinkle with olive oil, salt and black pepper and place on the middle rack of a preheated oven at 425 degrees. Cook for 20 minutes. Remove the fennel from the oven and place over the salmon, sprinkle with fresh dill. Add 3 or 4 tablespoons of vegetable broth or water around the fish and over the fennel. Cover with aluminum foil and braise for an additional 12 minutes. Remove the aluminum foil, with a spatula remove the fennel with the salmon on top. Arrange on a plate and serve immediately.

  • Preheat the oven to 350 degrees. Run your fingers down each salmon fillet to locate the pin bones and pull them out with tweezers or needle-nose pliers. Put the fillets in 2 large roasting pans. Pour half of the wine and half of the Pernod around the salmon in each pan. Scatter half of the sliced fennel over each fillet. Roast until salmon is just cooked through, about 30 minutes, basting from time to time.
  • Using 2 long spatulas, carefully transfer the fillets to platters. Season with salt and pepper. Toss the watercress with the lemon juice, and season with salt and pepper. Arrange the watercress around the salmon. Chop the fennel greens, and sprinkle them over the top.

2 tablespoons olive oil
1 small onion, finely chopped
1 large granny smith apples or 1 large winesap apple, peeled, cored and thinly sliced

2 ribs fennel, thinly sliced
3/4 cup vegetable broth
1/2 cup apple cider
1/2 lemon, juice of

Steps:

  • Season the flour with salt and pepper, and dredge the salmon steaks on both sides, patting off any excess flour mixture.
  • In a deep skillet, heat half the olive oil until bubbling. Brown salmon pieces on both sides over high heat. Remove to a plate and keep warm.
  • Add the onion and the remaining oil to the pan, and cook over medium heat until lightly browned. Add the apple slices, sugar and fennel. Cook until lightly browned, about 3 to 5 minutes. Add the broth and cider; heat to a simmer.
  • Return the salmon to the pan along with any juices that have collected on the plate. Cover and simmer for 8 to 10 minutes, until the salmon flakes when lightly pressed.
  • Lift the fish from the pan with a slotted spatula and place on a platter. Surround with the apples and fennel.
  • If the liquid in the pan is too thin, reduce for several minutes to thicken. Add the lemon juice and pour over the fish.

2 lbs salmon fillets, from the middle of the fish
3 tablespoons sea salt
1 tablespoon fine salt
3 tablespoons caster sugar
1/3 cup dried fennel
1/3 cup dried dill
10 whole white peppercorns, coarsely ground
2 tablespoons Dijon mustard
2 tablespoons ordinary mustard
2 tablespoons white wine vinegar
6 1/2 ounces oil
salt
white pepper

Steps:

  • Remove all the bones from the salmon fillet. Mix the salts and the sugar in one bowl and the fennel and dill in a separate bowl. Place the fish in a salting dish, skin side down. Rub the fish all over with the sugar salt mixture. Add the coarsely ground white peppercorns and cover the whole fillet with the fennel-dill mixture. Marinate in the refrigerator for 24 hours.

1 cup finely chopped fresh dill
1/3 cup whole-grain mustard
2 tablespoons white-wine vinegar
1 salmon about 4 1/2 pounds, boned with head and tail left on
1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 1/2 teaspoons sugar
Salt and freshly ground black pepper to taste
Dill sprigs for garnish

Steps:

  • Mix together one-half cup of the dill, two tablespoons of the mustard and the vinegar. Spread the fish open and rub this mixture over the flesh. Close the fish up and secure the edge, using slender skewers or sewing it with heavy thread. Rub the skin of the fish with one tablepoon of the oil, cover loosely and allow to marinate in the refrigerator for one hour.
  • Meanwhile prepare the sauce. Combine the remaining dill and mustard in a small mixing bowl. Beat in one-third cup olive oil, the lemon juice and sugar. Season to taste with salt and pepper.
  • Preheat grill to very hot. Oil a fish basket large enough to hold the fish or oil your racks. If you do not have this equipment you can also use a well-oiled double-sheet of heavy-duty foil into which you have punched holes with a fork.
  • Grill the fish 10 minutes on each side, or a little longer, depending on the intensiy of the heat. For best results, you should cook the fish with the grill covered for about half the cooking time. You will be able to turn the fish only once either by turning the basket or by lifting the fish off the rack with a couple of large spatulas. You can also turn it by just turning the foil package. Before turning it, brush some oil on the skin. After turning it, you may find that some of the skin has stuck to the grill despite your best efforts. Don't worry. The second side, which will be turned up for serving should brown nicely and not stick at all. The fish is done when a wooden skewer or toothpick inserted in the center meets little or no resistance. Do not overcook the fish.
  • When the fish is done, place it on heavy-duty foil. Roll it onto a serving plate so the bottom side of the fish is on top. Remove the skewers or trussing and decorate with sprigs of dill. Serve the fish hot or at room temperature with the sauce on the side.

4 heads fennel, 2 cups fronds separated, bulbs cut into 1-inch wedges
2 teaspoons grated lemon zest
Kosher salt
1/4 cup extra-virgin olive oil
1/4 cup vegetable oil
1/2 teaspoon ground fennel seed
2 lemons
3/4 cup panko breadcrumbs
5 tablespoons extra-virgin olive oil, plus more for drizzling

8 skinless 1-inch-thick wild-salmon fillets (about 6 ounces each)
3 tablespoons Greek yogurt

Steps:

  • Pesto: Turn on a food processor and drop garlic through tube; process until finely chopped. Add pistachios and pulse until coarsely ground. Add fennel fronds, lemon zest, fennel seed, and 1/4 teaspoon salt; pulse to combine. With machine running, gradually add both oils until combined. (Pesto can be refrigerated in an airtight container up to 1 week.)
  • Salmon: Preheat oven to 425°F with racks in upper and lower thirds. Using a rasp, zest 1 lemon (you should have 2 teaspoons), then cut into 1/8-inch-thick wheels. Cut second lemon into wedges. Toss panko with 2 tablespoons oil, season with salt and pepper, and spread on a baking sheet. Bake until golden brown, 4 to 5 minutes. Transfer to a bowl; stir in lemon zest.

2 pounds salmon, skinned and deboned
2 tablespoons olive oil
1 lemon
½ tablespoon chopped fresh dill, or more to taste
½ tablespoon garlic powder, or more to taste
½ teaspoon salt
½ teaspoon ground black pepper

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Rub salmon down in olive oil. Cut your lemon in half and set 1 half off to the side. Cut the other half into 1/4-inch thick slices. Lay them on a broiler pan and lay the salmon on top of them. You just need enough to cover the bottom of the salmon so it's not touching the pan. Sprinkle with dill, garlic powder, salt, and pepper.
