Sweet and spicy peppers mingle with fennel, shallots, and garlicky crostini for a hearty, satisfying salad.

2 hot Italian sausage links, meat removed from casings
4 sweet Italian sausage links, meat removed from casings
1 yellow pepper, cut in 1/2-inch strips
1 large shallot or 2 small, sliced crosswise
1/4 cup dry white wine
2 tablespoons extra-virgin olive oil
4 garlic cloves, smashed and peeled
5 slices ciabatta bread
1 head romaine lettuce, washed, well dried, and crisped in refrigerator, and chopped into 1 1/2-inch pieces
1 small fennel bulb, very thinly sliced
1 tablespoon white-wine vinegar
Salt and freshly ground black pepper
1/4 cup shaved Parmesan

Steps:

  • In large skillet, saute sausage meat. Using a metal spatula to break the pieces up, cook until it is golden brown and with some crispy bits, about 10 minutes. Remove from the pan to a paper towel-lined plate.
  • Add the peppers and shallots to the same pan. Saute to soften, about 5 minutes. Deglaze with the wine, cooking to reduce it to a slight glaze on the peppers. Place the pepper mixture on the plate on top of the sausage.
  • Add 1 tablespoon olive oil and the garlic to the pan. Let the garlic sizzle, and remove before it is brown. Add bread and cook to golden on one side, about 2 minutes. Drizzle the remaining olive oil over the up side of the bread, turn, and continue cooking until crisp.
  • Place the lettuce and fennel in a large bowl; add the sausage and pepper mixture. Drizzle over the vinegar, sprinkle with salt and a generous grind of black pepper. Toss well and serve in a large salad bowl topped with the shaved Parmesan and a crostini.

1 pound refrigerated pizza dough, at room temperature
3 tablespoons extra-virgin olive oil
1 pound sweet or hot Italian sausages (about 6 links)
2 bell peppers (any color), thinly sliced
2 cups fresh parsley leaves
1/4 red onion, thinly sliced
1 tablespoon balsamic vinegar
Kosher salt and freshly ground pepper
1 cup jarred marinara sauce
1 cup shredded Italian four-cheese blend (about 4 ounces)

Steps:

  • Preheat a grill to medium. Place the pizza dough on a baking sheet and brush with 1 tablespoon olive oil; set aside. Grill the sausages, turning often, until cooked through, about 8 minutes. Transfer to a cutting board and slice into 1/4-inch-thick rounds; set aside.
  • Combine the bell peppers, parsley, red onion, the remaining 2 tablespoons olive oil, and the balsamic vinegar in a medium bowl. Season with salt and pepper and toss to coat; set aside.
  • Stretch the pizza dough into a 12-inch round. Place the pizza dough directly on the grill grates; cook until the crust is golden and marked, about 5 minutes. Flip the crust and spread with the marinara sauce. Top with half of the cheese, then the sausage and the remaining cheese. Cover and grill until the cheese melts and the crust is cooked through, about 6 more minutes. Remove the pizza from the grill; let sit 5 minutes before slicing. Serve with the bell pepper salad.

1 large Spanish onion, cut in halved, and cut into 1/4 inch slices
1 tablespoon tomato paste
2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 large yellow peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 poblano peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
4 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
6 crusty sandwich rolls, toasted

Steps:

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.

1 tablespoon garlic flavored olive oil
3 green bell pepper, seeded and cut into strips

1 (14.5 ounce) can diced tomatoes, drained
2 tablespoons Italian seasoning
6 cloves garlic, chopped
1 large onion, cut into wedges
¼ cup grated Parmesan cheese

2 tablespoons garlic flavored olive oil

Steps:

  • Slice each sausage link into 5 pieces. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the sausage, and cook until browned, turning as needed.
  • Drain excess grease, then add the green, red and yellow peppers, tomatoes, and Italian seasoning. Drizzle the remaining olive oil over all, and reduce the heat to medium-low. Cover, and let simmer for 15 minutes.
  • Remove the lid, and stir. Add the garlic and onion to the pan. Sprinkle with Parmesan cheese. Cover, and simmer for 15 more minutes. Stir, then top with mozzarella cheese. Cover and cook for 5 minutes to melt the cheese. Remove from the heat and enjoy.
