These sausage balls are the perfect bite-size combination of cheese, meat and biscuits -- all rolled into one. A staple around the holidays in the South, they are perfect on their own as an appetizer, or served as a side dish at your holiday table.

1 pound spicy Italian sausage, casings removed
4 cups grated extra-sharp Cheddar
2 cups baking mix, such as Bisquick
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.
  • Bake until the sausage balls are golden brown and cooked through, about 25 minutes. Let cool for 5 minutes and serve warm or at room temperature. Store any leftover sausage balls in an airtight container for up to 1 week.

1 pound hot country-style sausage or any other spicy bulk pork sausage, uncooked
3 1/2 cups sharp Cheddar cheese, grated
2 cups Bisquick

Steps:

  • Heat oven to 400 degrees. Combine ingredients in a bowl and mix with your hands until there are no dry crumbs. Form into balls about one inch in diameter and place on a baking sheet. If you have the time, the sausage balls hold their shape better if refrigerated overnight before baking. (They also freeze extremely well. Bake them straight out of the freezer, adding a few more minutes to the baking time.)
  • Bake until the balls are golden brown, about 8 to 10 minutes. Serve immediately.

1 medium onion, chopped
3/4 cup parmesan cheese, grated
1 (16 ounce) package spicy bulk sausage, cooked & drained
1/2 teaspoon black pepper
3 cups pepperidge farm seasoned stuffing mix
5 eggs, beaten
1 1/2 cups mild cheddar cheese, grated
1 1/2 teaspoons garlic powder
1/2 teaspoon red cayenne pepper
salt

Steps:

  • Preheat oven to 325 degrees.
  • Cook and drain chopped spinach. Squeeze spinach until dry with paper towel.

2 teaspoons curry powder
1 teaspoon paprika
¼ teaspoon salt
8 ounces shredded Cheddar cheese
1 pound pork sausage
½ cup butter

Steps:

  • Mix in a large bowl the flour, curry, paprika, salt and cheese. With pastry blender or 2 knives used scissors fashion, cut in butter until mixture resembles coarse crumbs. With hands shape into a ball. Cover and refrigerate.
  • Meanwhile, shape heaping teaspoon of sausage meat into small balls. In a large skillet, over medium heat, fry until well browned. Drain thoroughly on paper towels.
  • Divide dough into as many pieces as sausage balls. Then shape dough evenly around balls. Wrap and freeze.
  • At Serving Time: Preheat oven to 400 degrees F. Place frozen sausage balls on a cookie sheet and bake 12-15 minutes until golden. Serve with toothpicks as appetizers.

1 tablespoon light soy sauce
1 tablespoon vinegar

Steps:

  • In medium bowl, combine egg, sausage, stuffing mix and sage.
  • Mix thoroughly.
  • Shape into 1 inch balls.
  • Add to large skillet.
  • Cook over medium heat, turning occasionally, 5-8 minutes or until browned on all sides.
  • Remove from skillet.
  • Drain on paper towels.
  • Drain fat from skillet and discard.
  • Add water, ketchup, chili sauce, brown sugar, soy sauce and vinegar to skillet.
  • Stir well.
