1 lb smoked sausage links (quartered and diced into ½ inch pieces)
1 onion (small, diced)
1 Tb butter
1 ½ c self-rising cornmeal
½ teaspoon salt
¼ teaspoon chili powder
2 eggs (beaten)
¾ c milk
¼ c vegetable oil
14 oz. creamed style corn (canned)
4 oz. diced green chilies (canned)
1 ½ c shredded sharp cheddar cheese (divided)

Steps:

  • To begin, preheat your oven to 350 degrees.
  • Grease a 9x9 square baking dish, and set it aside for now.
  • In a skillet, sauté the sausage and onion with the butter over medium-low heat until the onions are tender and the sausage is slightly browned. Transfer the sausage mixture to a plate lined with paper towels to drain any excess grease.
  • In your mixing bowl, combine the cornmeal, salt and chili powder.
  • Stir in the eggs, milk, oil, creamed corn and green chilies.
  • Add 1 cup of the shredded cheese and the sausage mixture. Fold it together.
  • Spread the batter into your prepared baking pan. Sprinkle with the remaining cheese.
  • Bake for 35-40 minutes or until it tests done with a toothpick in the center. If it begins to get too brown on top while it is baking, simply cover it with some aluminum foil for the remainder of the baking time.

2 large eggs eggs, lightly beaten
1 ½ cups buttermilk self-rising cornmeal mix
1 (15 ounce) can cream style corn
½ cup sour cream
¼ cup vegetable oil
2 cups shredded sharp Cheddar cheese
½ cup milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 10 inch ovenproof skillet.
  • In a medium skillet, brown the sausage and onion; drain well.
  • In a large bowl, combine eggs, corn meal mix, corn, sour cream, milk, and oil. Pour half of corn meal mixture into the greased pan, and sprinkle with sausage mixture and cheese. Pour remaining batter over top.
  • Bake for 30 to 40 minutes. Let stand 10 minutes before serving.

1 large onion, chopped
1-1/2 cups cornmeal
1/4 cup all-purpose flour
2-1/4 teaspoons baking powder
3/4 teaspoon salt
1 can (14-3/4 ounces) cream-style corn
3/4 cup whole milk

1/4 cup vegetable oil
2 cups shredded sharp cheddar cheese

Steps:

  • In a skillet, cook the sausage and onion over medium heat until meat is no longer pink and onion is tender; drain. In a bowl, combine cornmeal, flour, baking powder and salt. Save space in the oven on the big day with this easy cornbread dressing. I start with a make-ahead buttermilk cornbread that has an extra depth of flavor, thanks to a dash of Dijon. A half hour before everyone sits down to the table, I saute some spicy sausage with Dijon mustard, vegetables, chestnuts and fresh herbs. After folding in the cornbread, the dish goes straight into a serving bowl -- leaving plenty of room for the other sides in the oven.

1 cup cornmeal

Steps:

  • For the cornbread: Preheat the oven to 400 degrees F. Grease a 9-inch cast-iron skillet with butter.
  • Combine the cornmeal, flour, sugar, baking powder and salt in a large bowl. Stir in the buttermilk, whole milk, oil, Dijon mustard and egg until smooth. Pour the batter into the prepared skillet and bake until a toothpick inserted into the center comes out clean, about 25 minutes. The cornbread can be made up to 1 day in advance. Wrap tightly in several layers of plastic wrap and store at room temperature.
  • For the stuffing: Crumble enough of the cornbread into large pieces to make 4 cups. Reserve the remaining cornbread for another use.
  • Add the sausage to a large skillet over medium heat and cook, breaking up with a wooden spoon, until the fat starts to render, about 8 minutes. Add the onion powder, garlic powder, fennel seed and celery salt and season with salt and pepper. Once the meat starts to brown and crisp, add the onion, carrot, celery, chestnuts, fennel, garlic and sage. Cook, stirring occasionally, until the meat is browned, the carrots become soft and tender and the onions are translucent, about 10 minutes.
  • Add the white wine and scrape up any browned bits from the bottom of the pan with a wooden spoon. Bring the wine to a boil and cook until mostly evaporated, about 3 minutes. Stir in the chicken stock and Dijon mustard and bring to a simmer. Fold in the cornbread until completely incorporated and the bread is moist and heated through, about 3 minutes. Season to taste with salt and pepper.
  • Transfer the stuffing to a serving bowl and garnish with the parsley.

1 cup diced fennel
1 cup diced Spanish onions

Steps:

  • In a large saute pan on low heat, add the ground spicy pork sausage and cook slowly to render out the fat, about 8 minutes. Season with salt and pepper, onion powder, garlic powder, fennel seed and celery salt. Once the fat is rendered and the meat starts to brown and crisp, add the carrots, celery, chestnuts, fennel, onions, garlic and sage. Cook until the meat continues to brown, the carrots become soft and tender and the onions become translucent, about 10 minutes.
  • Add the crumbled cornbread and chicken stock and stir until completely incorporated and the bread is moist. Season with salt and pepper. Garnish with the parsley.
  • Serve family style in a large bowl while still hot.
  • Preheat the oven to 400 degrees F. Grease a 9-inch cast-iron pan with butter.
  • Combine the flour, cornmeal, sugar, baking powder and salt in a large bowl. Stir in the buttermilk, whole milk, oil and egg until smooth.
  • Pour the batter into the prepared pan and bake until a toothpick is smooth when tested, about 25 minutes.

3 lb. cornbread, cut into ¾" pieces (14-16 cups)
1½ lb. breakfast sausage, casings removed if needed
1 cup unsalted butter (2 sticks), plus more for pan
2 medium onions, chopped
4 celery stalks, chopped
Kosher salt
3 garlic cloves, finely chopped
2 Thai chiles or 1 jalapeño (with seeds), chopped
¾ cup corn nuts, finely ground in a food processor, blender, or mortar and pestle (about ½ cup)
¾ cup dry white wine
1 Tbsp. finely chopped sage
2 tsp. finely chopped thyme
3 large eggs
Freshly ground black pepper
3½ cups turkey stock or low-sodium chicken broth

Steps:

  • Preheat oven to 325°F. Divide cornbread evenly between 2 large rimmed baking sheets and bake, tossing occasionally, until dried out and lightly browned around the edges, 40-50 minutes. Let cool at least 10 minutes. Increase oven temperature to 350°F.
  • Meanwhile, cook sausage in a large skillet over medium-high heat, stirring and breaking up with a spoon, until lightly browned and cooked through, 6-8 minutes. Transfer to a plate.
  • Reduce heat to medium and melt butter in same skillet. Add onions and celery; season with salt. Cook, stirring occasionally, until softened but not browned, 8-10 minutes. Add garlic and chiles. Cook, stirring once, until very fragrant, about 1 minute. Add corn nuts and cook, stirring often, until very fragrant and vegetables are starting to brown around the edges, about 3 minutes. Add wine and cook, stirring occasionally, until almost completely evaporated, about 3 minutes. Add sage and thyme and toss to combine. Remove from heat.
  • Combine cornbread, sausage, and vegetable mixture in a large bowl. Whisk eggs and stock in a medium bowl until very well combined. Pour over cornbread mixture and let sit, gently stirring every minute or so, until cornbread has absorbed all or virtually all of the liquid. Season with salt and pepper (about 1 Tbsp. Diamond Crystal or 1½ tsp. Morton kosher salt).
  • Lightly butter a 3-qt. or 13x9x2" baking dish. Transfer stuffing to dish and tap dish lightly against counter to distribute and compact stuffing. Cover tightly with foil and bake until stuffing is very hot throughout and bubbles appear around sides, 40-45 minutes. Increase oven temperature to 425°F and remove foil. Continue to bake stuffing until top is lightly browned, 15-20 minutes longer.
  • Do Ahead: Stuffing can be baked at 350°f 3 days ahead. Let cool, then chill. Reheat in a 350°F oven before increasing temperature to 425°F and removing foil.

Steps:

  • Preheat oven to 350°.

  • Using a pastry blender or 2 knives, cut in the butter until mixture resembles coarse crumbs.
  • In another bowl, whisk together the egg and buttermilk until well blended.
