This is a refreshing summer salad. Perfect for a picnic or barbeque. I usually serve it with a spicy flank steak and potatoes.

- In a large bowl, combine vinegar, sugar, and salt. Mix in cucumbers, and marinate 1 hour, stirring occasionally.

ROASTED CUCUMBERS AND ONIONS WITH FRESH HERBS
I invented this recipe out of a need for a way to use the surplus cucumbers from a friend's garden this summer. I had never heard of someone roasting cucumbers, and a quick internet search turned up nothing, so I thought it would make an interesting culinary experiment. As it turned out, though, I discovered a new family favorite! This fast and easy recipe makes a great side dish for any occasion. Great with chicken or steak! I've even eaten it by itself for a light lunch. What more could you ask for?

- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with aluminum foil. Spray the foil with olive oil cooking spray.
- Spread pieces of butter into the baking sheet and lay cucumber spears over the butter. Top with slices of sweet onion and scatter basil, parsley, cilantro, and mint over the top. Spray the vegetables again with olive oil cooking spray.
- Roast cucumber mixture in the preheated oven until cucumber spears begin to soften, about 10 minutes. Turn the cucumbers and onion slices over and return to oven; roast until cucumbers are tender, 15 to 20 more minutes.

SMASHED CUCUMBERS WITH CUMIN TAHINI
Cool, watery cucumbers and warm, rich sesame oil are a classic combination in Asia, and the chef Danny Bowien builds on that tradition here by using sesame paste and smashed cucumbers, which have even more crunch and juice than sliced ones. The lime, oregano and cumin in the dressing can lean either Middle Eastern or Mexican, but in any case they are a perfect pairing for cucumbers. Mr. Bowien adds a pinch of sugar to the strainer; it does wonders for transforming the color and taste of the cucumber peels, which can be bitter. He serves this dish with a funky, fiery drizzle of chorizo oil with dried shrimp and XO sauce, but a little chile paste and vinegar is a fine accent, too.

- Rinse cucumbers and pat dry. Cut crosswise into pieces about 4 inches long. Cut each piece in half lengthwise.
- On a work surface, place a piece of cucumber (or several) cut side down. Lay the blade of a large knife flat on top the cucumber and smash down lightly with your other hand. The skin will begin to crack, the flesh will break down and the seeds will separate. Repeat until the whole piece is smashed. Break or slice diagonally into bite-size pieces, leaving the seeds behind.
- Place the cucumber pieces in a strainer and toss with a big pinch of salt and a big pinch of sugar. Place a plastic bag filled with ice on top of the cucumbers to serve as a weight and place the strainer over a bowl. Let drain 15 to 30 minutes on the counter, or in the refrigerator until ready to serve, up to 4 hours.
- Make the dressing: In a blender or small food processor, combine lime juice and garlic and blend. Add tahini and 2 tablespoons warm water and blend. Check the texture; you want a smooth, creamy liquid. If necessary, add more warm water and blend again. Add olive oil, 1/2 teaspoon salt, the cumin and the oregano, rubbing the dried leaves between your fingers to release the flavors. Taste for salt and adjust the seasonings.
- Make the chile vinegar, if desired: Place sambal in a bowl and slowly drizzle in white vinegar, stirring to loosen. Taste often and stop adding vinegar when mixture is tart and spicy, but not enough to make your eyes water.
- When ready to serve, shake cucumbers well to drain off any remaining liquid and transfer to a bowl. Drizzle lightly with olive oil and toss. Add half the dressing, toss and taste. Keep adding dressing until cucumbers are well coated but not drowned.
- Serve immediately. For each serving, scoop a large spoonful of cucumbers into a bowl, spoon a little chile vinegar around the edges and sprinkle with sesame seeds.

- Peel cucumber and quarter lengthwise. Cut out and discard core. Cut each quarter crosswise into 4 pieces. Cut each piece lengthwise into 4 strips.
- In an 8- to 9-inch non-stick skillet heat oil ove moderately high heat until hot but not smoking and sauté cucumber with salt to taste, stirring, 3 minutes. Stir in cumin and water. Boil mixture, stirring, until liquid is evaporated and stir in mint and salt and pepper to taste.

- Peel, halve lengthwise and seed the cucumber. Cut into chunks the size of large croutons or slice into thin half-moons. It depends on whether you want al dente chunks or soft, silkier petals. Both have their merits, depending on what you're serving with. Heat the olive oil in a pan. Saute the cucumber until hot and softened to your liking, about 5 minutes, depending on size. Season with salt and pepper and toss in the mint. Serve warm or at room temperature.

CUCUMBERS WITH CREAM AND MINT

- Peel and slice: 2 cucumbers.
- If the seeds are large and tough, cut the cucumbers in half lengthwise and scoop out the seeds with a spoon before slicing. Place in a medium-size bowl and sprinkle with: Salt.
- In another bowl, combine: 1/4 cup heavy cream, 3 tablespoons olive oil, Juice of 1/2 lemon, Fresh-ground black pepper.
- Stir well. If water has accumulated with the cucumbers, drain it off. Pour the dressing over the sliced cucumbers and combine. Coarsely chop: 3 mint sprigs, leaves only and toss with the cucumbers. Taste and adjust the salt as needed. Serve cool.
- Variations
- Add pounded garlic to the dressing.
- Serve alongside sliced beets dressed with oil and vinegar.
- Grate or dice the cucumbers and serve as a sauce over baked salmon.
- Parsley, chervil, basil, or cilantro can be substituted for the mint.
- Substitute plain yogurt for the cream.
- Add spices such as cumin, coriander, or mustard seeds to the dressing.

- In a small skillet, cook the cumin seeds over moderate heat until fragrant, about 1 minute. Transfer to a work surface and let cool, then coarsely chop.
