Sauteed Cod With Pea Cream image

The cod is first marinated a couple of hours in the refrigerator with crushed mustard seeds. Then served on a bed of pureed peas and then topped with a light sauce. This recipe comes from a book to be published in February, "Fish: Recipes from the Sea" which comes from Italy's "Il Cucchiaio d'Argento (The Silver Spoon)". This is the authoritative guide to Italian cooking and is the best selling cookbook in Italy. Since it was commission in 1950 to collect hundreds of traditional recipes from throughout Italy, including regional specialties, it has been updated to keep up with modern trends. Found in "Saveur" magazine.

2 1/2 lbs cod fish fillets, cut into 2-inch pieces (boneless skinless)
1 tablespoon mustard seeds, lightly crushed
4 tablespoons unsalted butter
2 shallots, minced
3 1/2 cups peas, thawed (fresh or frozen)
1 cup water
kosher salt & freshly ground black pepper
2/3 cup half-and-half
2 tablespoons olive oil
fresh dill, for garnish

Steps:

  • Sprinkle cod, on both sides, with crushed mustard seeds; let marinate in the refrigerator for 2 hours.
  • Meanwhile, prepare the sauce: Heat butter in a skillet over medium heat; add shallots and cook until softened, about 5 minutes.
  • Add peas, 1 cup water, and season with salt and pepper; partially cover and let reduce for about 10 minutes and keep warm.
  • Remove 3/4 cup of the peas and puree in a food process with the half and half and some salt and pepper; transfer to a saucepan, cover, and keep warmed over low heat.
  • Heat oil in another skillet over medium high heat; add cod and cook until golden, turning once, about 4 minutes; season with salt.
  • To serve: Spoon pea puree into serving dishes; top with cod and sauce, garnish with fresh dill.

4 tablespoons unsalted butter
2 shallots, finely chopped
3 1/2 cups fresh or frozen, thawed peas
Kosher salt and freshly ground black pepper to taste
2/3 cup half-and-half
2 tablespoons olive oil
roughly chopped fresh dill, to garnish

Steps:

  • Sprinkle cod evenly with mustard seeds and let marinate in the refrigerator for 2 hours. Meanwhile, heat butter in a 10-inch skillet over medium heat. Add shallots; cook until soft, about 5 minutes. Add peas, 1 cup water, and salt and black pepper, and cover partially with lid; cook until sauce is reduced, about 10 minutes. Set sauce aside and keep warm. Purée 3/4 cup peas, half-and-half, salt, and black pepper in a food processor; transfer to a 2-quart saucepan and keep warm over low heat. Heat oil in a 12-inch skillet over medium-high heat. Add cod; cook, turning once, until golden brown, about 4 minutes. Season with salt. Divide pea purée among 6 serving plates and top with cod; spoon over sauce and garnish with dill.

This a traditional Portuguese way of cooking codfish, from the capital city of Lisbon. In a country with a large tradition of making codfish in several ways, this is, for me, the most delicious and sinful way of eating this wonderful fish. Taste it and you will see!

12 ounces dried salted cod fish
vegetable oil for frying
4 large potatoes, peeled and cut into very small cubes
½ cup olive oil
1 large onion, sliced thin
3 cloves garlic, minced
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup hot milk
1 pinch ground nutmeg
1 ⅓ cups heavy cream
salt and ground black pepper to taste
⅔ cup heavy cream
1 ounce grated Parmesan cheese

Steps:

  • Soak the dried salted cod in cold water with the skin side up for 24 hours, changing the water about 4 times. Drain and discard the water.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the cod in a pan with enough water to cover; bring to a boil and cook for 10 minutes. Remove the cod from the pan; remove and discard the skin and bones. Cut the cod into chunks and set aside.
  • Heat 1/2 inch vegetable oil in large skillet over medium-high heat. Working in batches if necessary, fry the potatoes in the hot oil until just cooked, about 5 minutes. Transfer to a plate lined with paper towels to drain.
  • Pour the olive oil into a Dutch oven or heat-proof casserole dish over medium heat. Cook the onion and garlic in the oil until the onion is translucent, about 5 minutes. Add the cod and cook another 3 minutes; stir the potatoes into the mixture and cook another 1 to 2 minutes. Reduce heat to low.
  • Melt the butter in a separate pan over medium-low heat; vigorously stir the flour into the melted butter. Slowly stream the hot milk into the mixture while stirring; cook and stir until thick. Season with the nutmeg. Pour into the casserole with 1 1/3 cups cream; stir to coat. Allow the mixture to simmer together for about 2 minutes. Season with salt and pepper. Drizzle remaining 2/3 cup cream over the mixture; sprinkle with the Parmesan cheese.
  • Bake in the preheated oven until the top is browned, 30 to 40 minutes. Serve hot.

4 teaspoons nerigoma (Japanese sesame paste) or well-stirred tahini
3 tablespoons vegetable oil
For cabbage
2 tablespoons vegetable oil
2 garlic cloves, finely chopped
1/2 lb Savoy cabbage, very thinly sliced crosswise
1/2 lb napa cabbage, very thinly sliced crosswise
1/4 lb snow peas, very thinly sliced lengthwise
For fish
2 tablespoons vegetable oil
4 (5-oz) pieces cod fillet (3/4 to 1 inch thick)

Steps:

  • Make vinaigrette:
  • Purée all vinaigrette ingredients in a blender until smooth.
  • Sauté cabbage:
  • Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté garlic until golden, about 30 seconds. Add cabbages and snow peas and sauté until cabbages are wilted and peas are crisp-tender, about 5 minutes. Season with salt and transfer to a bowl, then wipe skillet clean.
  • Cook fish:
  • Heat oil in skillet over high heat until hot but not smoking, then sauté cod, turning once, until golden and just cooked through, about 6 minutes total.
  • Divide cabbage among 4 plates, then top with fish and drizzle with some dressing. Serve remainder on the side.

Steps:

  • Brush the air fryer basket with vegetable oil and preheat to 400 degrees F (200 degrees C).
  • Thaw fish if frozen; blot dry with paper towels, and sprinkle lightly with salt and pepper.
  • Stir together butter and sesame seeds in a small bowl. Set aside 2 tablespoons of the butter mixture for the fish. Toss peas and garlic with remaining butter mixture and place in the air fryer basket.
  • Cook peas in the preheated air fryer in batches, if needed, until just tender, tossing once, about 10 minutes. Remove and keep warm while cooking fish.
  • Brush fish with 1/2 of the remaining butter mixture. Place fillets in air fryer basket. Cook 4 minutes; turn fish. Brush with remaining butter mixture. Cook 5 to 6 minutes more or until fish begins to flake when tested with a fork. Serve with snap peas and orange wedges.
