¾ cup mayonnaise
½ cup grated Parmesan cheese
¾ teaspoon garlic powder
¾ cup Italian seasoned bread crumbs
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl, mix the mayonnaise, Parmesan cheese, and garlic powder. Place bread crumbs in a separate bowl. Dip chicken into the mayonnaise mixture, then into the bread crumbs to coat. Arrange coated chicken on a baking sheet.
  • Bake 20 minutes in the preheated oven, or until chicken juices run clear and coating is golden brown.

Chicken at its easiest and most flavorful! The three-ingredient marinade adds moisture and flavor to otherwise ordinary chicken breasts.

1/2 cup dry sherry or apple juice
1/4 cup olive or vegetable oil
3 tablespoons soy sauce
6 boneless skinless chicken breast halves (4 1/2 pounds)

Steps:

  • Stir together sherry, oil and soy sauce. Cut chicken into strips, 6x1x1/4 inch. Pour sherry mixture over chicken in glass baking dish. Cover and refrigerate at least 4 hours but no longer than 24 hours, turning chicken occasionally.
  • Set oven control to broil. Thread chicken onto six 8-inch metal skewers (discard sherry mixture). Place chicken on rack in broiler pan. Broil with chicken 4 to 5 inches from heat 8 to 10 minutes, turning once, until no longer pink in center.

2 boneless chicken breasts, cut into tenders
2 egg whites
1 cup flour
1 tablespoon onion powder
1/2 tablespoon salt
1/2 tablespoon pepper
1 tablespoon paprika
1/2 cup olive oil
3/4 cup Italian dressing

Steps:

  • Crack egg whites into small bowl.
  • Mix flour, paprika, salt, and pepper into pie dish or onto plate.
  • Dip cut tenders into egg white.
  • Roll tenders with egg into flour, coating on both sides.
  • Heat olive oil in shallow frying pan.
  • Place tenders in frying pan, cooking 10-15 minutes, turning occasionally, until chicken is cooked through.
  • Transfer tenders to plate and dump oil out of pan.
  • Return tenders to pan and add Italian dressing.
  • Cook for another 5 minutes until some of the dressing has carmelized.
  • Remove tenders from pan and serve immediately.
