Shrimp marinated in lemon, garlic, and parsley for 30 minutes, then grilled. Can be used as an appetizer or main dish. This recipe also works well with scallops.

Steps:
- In a large, non-reactive bowl, stir together the olive oil, lemon juice, parsley, garlic, and black pepper. Season with crushed red pepper, if desired. Add shrimp, and toss to coat. Marinate in the refrigerator for 30 minutes.
- Preheat grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard any remaining marinade.
- Lightly oil grill grate. Grill for 2 to 3 minutes per side, or until opaque.

- Soak the wooden skewers in cold water for a minumum of 30 minutes.
- Set grill for high heat.
- In a large bowl mix together softened butter, olive oil, garlic, shallots, chives, paprika, salt and pepper; add in the shrimp; toss to coat.
- Thread the shrimp onto skewers.
- Lighty oil the grill grate.
- Cook shrimp as close to the flame as possible for about 2-3 minutes per side or until the shrimp are opaque in colour.

GRILLED SHRIMP SKEWERS
Steps:
- Put the olive oil, garlic and chile flakes in a small skillet. Turn the heat to low and let the mixture heat for about 10 minutes; the oil should just barely simmer around the garlic in the last few minutes. Remove from the heat and cool slightly. Transfer to a blender, add the 1 tablespoon oregano and some salt and pepper, and blend until the garlic and oregano are finely chopped. Set aside half of the chile-garlic oil for serving.
- Heat the grill to high. Thread the shrimp onto skewers, about 4 or 5 shrimp per skewer, threading so that the skewers goes through the tail and thick end of each shrimp. Brush the shrimp with some of the chile-garlic oil and season with salt and pepper. Grill until lightly golden brown on both sides and opaque, 1 to 1 1/2 minutes per side. Transfer the skewers to a platter and immediately drizzle with some of the reserved chile-garlic oil (not the oil you used for brushing the raw shrimp). Garnish with oregano, and serve with more of the reserved oil.

- If your shrimp is frozen, thaw before using. Peel shrimp leaving tails intact and devein.
- In a small saucepan using medium-high heat, melt margarine or butter and oil. Add garlic and cook for 2 minutes; remove from the heat and stir in wine, parsley, lemon peel, and ground pepper. Set aside.
- Using 6-inch long appetizer skewers (if wooden skewers soak for at least 30 minutes in water to avoid scorching)thread shrimp, green onion, and pepper pieces and brush with garlic mixture.
- Grill the shrimp and vegetable skewers on a grill rack directly over medium heat for approximately 6 to 8 minutes or until shrimp turns pink. Turn once and brush with garlic mixture halfway through grilling. Serve immediately.

- Stir together the oil, tarragon, parsley, Dijon, honey, vinegar, whole-grain mustard, garlic and lemon juice in a large bowl. Add the shrimp and toss to coat well. Cover and refrigerate 30 minutes.
- Remove the shrimp from the marinade, reserving the marinade. Thread the shrimp alternately with the lemon slices onto skewers. Sprinkle the shrimp lightly with salt and pepper.
- Pour the marinade into a small saucepan. Bring to a boil and simmer 5 minutes or until very hot. Reserve the marinade for serving.
- Preheat a grill to medium-high heat. Grill the shrimp kabobs until cooked through, 2 to 3 minutes on each side. Transfer to a platter and garnish with fresh parsley. Serve with the reserved marinade.

- Clean and devein shrimp, remove tail. Add to a bowl with 1 1/2 teaspoons grated garlic, 2 teaspoons olive oil, 6 grates of cracked pepper and 1 teaspoon thyme leaves. Cover, refrigerate 20 minutes. Sourdough Bread Cubes:
- Place the bread cubes on a rimmed baking tray to fit. Place in a preheated 350 degree oven and toast for 5 - 7 minutes until lightly golden around the edges. Do not crisp until hard, just lightly golden. Set aside. Shrimp and Scampi Sauce: Heat a 12 - 14" skillet with 2 tablespoons olive oil - set heat to medium-high. Add the marinated shrimp.
