1 avocado, halved and pitted
6 hard-boiled eggs, halved
1 tablespoon mayonnaise
2 teaspoons prepared yellow mustard
1 splash lime juice
1 pinch red pepper flakes

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 5 minutes. Drain on paper towels.
  • Mash avocado in a large bowl with a fork. Mix in bacon, yolks from the hard-boiled eggs, mayonnaise, mustard, and lime juice.
  • Spoon avocado mixture into the egg whites. Garnish eggs with red pepper flakes. Chill until ready to serve.

½ teaspoon Hot sauce of choice, for garnish

Steps:

  • Preheat oven to 425 degrees F. Spray baking sheet or glass baking pan with cooking spray.
  • Scoop about an additional 1 to 2 tablespoons out of avocados to create a well for eggs.
  • Place avocados flesh-side up on prepared baking sheet or glass pan.
  • Gently crack 1 egg into each avocado well, making sure to keep yolk intact. Season with salt and pepper.
  • Bake for 15 to 18 minutes, or until eggs are desired temperature.
  • Top with crumbled bacon, Parmesan cheese, and chopped chives. Garnish with paprika and hot sauce.

Steps:

  • Brown bacon in a small skillet over medium heat, 3 to 5 minutes per side. Remove bacon; pour off all but 1 teaspoon fat.
  • In a bowl, beat eggs with 2 tablespoons water; season with salt and pepper. Pour into pan; cook, scraping bottom frequently with a flexible heatproof spatula, until just set, 2 to 3 minutes.

1/4 cup heavy cream
3 tablespoons unsalted butter
Sea salt and freshly ground black pepper
3 avocados, peeled, pitted and sliced
Chopped fresh chives, for garnish

Steps:

  • Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

4 eggs
2 tablespoons half-and-half
2 tablespoons butter

Steps:

  • Cook bacon pieces in skillet until crisp.
  • Remove from pan and drain on paper towels.
  • Remove bacon grease from skillet, wash and dry pan and return to heat.
  • Scramble eggs and add half and half and mix well.
  • Add butter to heated pan and add egg mixture.
  • Let the eggs set a bit and then sprinkle bacon over.
  • Stir eggs until soft set or until they are done to your liking.
  • Note: I sometimes also add small diced cubes of cheese when I add the eggs to the pan. Then proceed with recipe.

2 slices Gouda cheese, optional
1 slice red onion, separated into rings, optional

  • In a large nonstick skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Pour off drippings., In same skillet, break eggs, one at a time, into pan; immediately reduce heat to low. Cook until whites are completely set and yolks begin to thicken. I first had this at a restaurant 20+ years ago, loved it then and love it now. Great way to use up leftover avocado dip (real stuff, not the stuff sold at the grocery store, unless you like that) and your favorite cheese!

Steps:

  • Heat oven to 400ºF.
  • Place wire cooling rack in foil-lined shallow pan; spray with cooking spray. Mix first 2 ingredients in shallow dish. Add bacon, 1 slice at a time, turning to evenly coat both sides of each slice. Place on wire rack. Bake 20 min. or until crisp and golden brown.
  • Meanwhile, beat cream cheese spread and eggs with whisk until blended. After bacon has baked 15 min., add egg mixture to medium skillet sprayed with cooking spray; cook on medium heat 4 to 5 min. or until set, stirring occasionally.
  • Serve eggs with bacon.

  • Chop onion. Halve, pit, and peel avocado and cut into 1/4-inch pieces. In a bowl whisk together eggs and Cheddar and season with salt and pepper. In a nonstick skillet heat butter over moderately high heat until foam subsides and sauté onion, stirring, until just beginning to soften, about 2 minutes. Add egg mixture and cook, stirring constantly, until eggs are just set, about 1 minute. Remove skillet from heat and stir in avocado.
