This is a truly flavorful dish with a lovely plate presentation. My mom and I experimented and made this for lunch. It came out so good I promptly went to the fish market so I could make it for my dinner guests that night. YUMMY!

¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon paprika
lemon pepper to taste
sea salt to taste
2 pounds sea bass
3 tablespoons butter
2 large cloves garlic, chopped
1 tablespoon chopped Italian flat leaf parsley
1 ½ tablespoons extra virgin olive oil

Steps:

  • Preheat grill for high heat.
  • In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish.
  • In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside.
  • Lightly oil grill grate. Grill fish for 7 minutes, then turn and drizzle with butter. Continue cooking for 7 minutes, or until easily flaked with a fork. Drizzle with olive oil before serving.

4 medium oranges, peeled, sectioned, and coarsely chopped
1 large tomato, seeded and chopped
0.25 cup snipped fresh cilantro
2 tablespoon finely chopped green onion
2 tablespoon chopped walnuts, toasted
1 tablespoon lime juice
4 fresh or frozen tuna or sea bass steaks, cut 1 inch thick
0.5 teaspoon ground cumin
1 tablespoon olive oil

Steps:

  • For salsa, in a medium bowl combine the orange peel, chopped oranges, tomato, cilantro, green onion, walnuts, lime juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
  • Thaw fish, if frozen. Rinse fish; pat dry with paper towels.
  • In a small bowl combine cumin, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Brush the fish with olive oil and sprinkle evenly with cumin mixture.
  • Place fish on the greased unheated rack of a broiler pan. Broil about 4 inches from the heat for 8 to 12 minutes or until fish flakes easily when tested with a fork, gently turning once halfway through broiling. Spoon the salsa over fish. Makes 4 servings.

2 oranges
1 red onion, chopped
1/2 cup cilantro leaves, chopped

2 cups fresh sugar snap peas
2 tablespoons honey
1 tablespoon butter
1 snack-size cup (4 ounces) mandarin oranges, drained
1/4 cup unsalted cashews, coarsely chopped
4 tuna steaks (6 ounces each)
5 tablespoons sesame ginger marinade, divided

Steps:

  • Cook rice according to package directions. In a large skillet, saute peas in butter and honey until crisp-tender. 5 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 cup chopped pitted Kalamata olives or other brine-cured black olives
1/2 cup chopped red onion
1/3 cup chopped fresh cilantro
1/4 cup golden raisins
3 tablespoons fresh lemon juice
2 tablespoons (packed) chopped fresh mint
2 teaspoons grated orange peel
1/2 teaspoon (scant) cayenne
6 6-ounce sea bass fillets

Steps:

  • Char peppers over gas flame or in broiler until blackened on all sides, turning frequently with tongs. Transfer peppers to medium bowl. Cover with foil; let stand 10 minutes. Peel, seed and coarsely chop peppers; return to same bowl.
  • Heat 1 tablespoon oil in heavy small skillet over medium heat. Add cumin and cinnamon; stir until fragrant, about 1 minute. Pour oil mixture over peppers. Mix in olives, next 7 ingredients and 2 tablespoons oil. Season salsa with salt and pepper. (Can be made 2 hours ahead. Cover; let stand at room temperature, tossing occasionally.)
