SEARED TUNA SALAD RECIPE
In summer it's nice to have a quick, easy and fresh meal.

- To make the dressing, place all the ingredients and one tablespoon of water in a bowl and whisk well to combine. Season to taste with white pepper and set aside. Season the tuna with sea salt and white pepper to taste. Heat oil in a heavy-based frying pan over medium-high heat until just smoking and sear fish for 15 seconds on each side, so it's lightly cooked on the outside but still raw in the middle. Set fish aside to rest. Divide the salad leaves among four plates, then place the avocado on the leaves and add the shallots. With a sharp knife, cut the fish into thin, even slices. Place the fish on the salad and spoon the dressing liberally over the fish and leaves. Sprinkle with extra toasted sesame seeds (if desired). Season the fish with salt and a grind of white pepper to taste, then serve.
SEARED TUNA & CUCUMBER SALAD
This Asian-inspired sharing salad is topped with flavour-packed marinated tuna steaks - great for lunch or a light dinner

Steps:
- Whisk the soy sauce, sesame oil and pepper together in a shallow dish. Heat the sunflower oil in a non-stick frying pan. Sear the steaks on both sides until cooked to your liking. Transfer to the dish with the marinade, then chill for 1 hr. Turn the steaks, then continue to chill until ready to assemble.
- Tip all the veg into a large serving bowl with both types of ginger and the nori. Drizzle over the mirin and lime juice, then add the coriander and chilli. Toss and rest for 20 mins.
- Make the dressing by whisking everything together. To serve, slice the tuna and arrange over the salad, then sprinkle over the coriander seeds and drizzle over the dressing.

- Place the potatoes in a medium-size saucepan and cover with cold water. Cook over medium heat until tender, about 12 minutes. Drain, let cool and cut into quarters. Set aside.
- Heat a large, heavy-bottomed nonstick skillet over medium heat. Add the olive oil. Add the tuna, sear on all sides, about 3 minutes. Set aside. Toss the potatoes, tomatoes and spinach together.
- Combine the tomato juice, anchovy fillets, roasted garlic, salt and pepper to taste in a blender. Blend until smooth. Divide the salad among 4 plates. Top each with some of the tuna. Drizzle the sauce over all and serve immediately.

SEARED TUNA SALAD WITH ASIAN VINAIGRETTE

- In a small bowl, whisk together the vinegar, soy sauce, lime, ginger, mustard and cilantro. Pour in the oil and continue to whisk until emulsified.
- Season the tuna fillets with salt and pepper; lightly coat with oil. Put sesame seeds on a plate. Coat top and bottom of each fillet with seeds. Heat a large, dry skillet over high heat. Add fillets; cook about 3 minutes. Turn; cook until desired doneness, about 3 to 4 minutes for rare. Slice the tuna into 1-inch thick strips.
- Mix the greens together and spread out on a platter. Add the green onions, rice noodles almonds, and orange segments. Lay the tuna strips on top then drizzle with the vinaigrette. Season with salt and pepper and serve immediately.
YELLOWFIN TUNA SALAD WITH TOMATO STACK

- For the vinaigrette:
- Puree anchovy, garlic, mustard, and caper and red wine vinegar. Slowly emulsify with olive oil. Season with salt and pepper.
- For the salad:
- Slice different tomato varieties 1/4-inch thick and place in a mixing bowl. Season with salt and pepper. Marinate with nicoise vinaigrette, then toss with green beans, red onions, and chives. Arrange tomatoes into a stack layered with green beans and onions and place in center of 4 serving plates. Garnish each stack with 4 slices of tuna. Season with salt and pepper and drizzle vinaigrette. Garnish with fresh chives.
TUNA, OLIVE AND ANCHOVY SALAD

- Before starting, remove the anchovies from the oil they come in and marinade in balsamic vinegar for 1hr minimum. Try to remove as much oil as possible. I buy a 100g jar of anchovies in olive oil, drain, and replace the oil with vinegar. Store this in the fridge for on demand de-salted marinated anchovies
- Cook the penne in a pan of boiling water. Go easy on the salt - there'll be enough from the anchovy.
- Whilst the pasta cooks, drain olives if tinned, and cut them in half.
- Trim and peel the carrot, and chop in to a thick julienne - strips 0.5cm (1/4") thick.
- Trim the spring onion, removing as little as possible of the root (white) end, and most of the 'leaf' end. Finely mince this, and the garlic.
- Remove the anchovy from vinegar, and mince very finely.
- Rince the green been and the lettice, and roughly chop.
- When the pasta is al-dente (cook until edible, but firm), add some cold water so the pasta can cool slightly, and drain well.
- Combine all ingredients.
- Stir well and season.
- Enjoy!

SEARED ENCRUSTED TUNA STEAK SALAD

- Smash up the chili and the coriander in a martar and pestle.
- Add the garlic, basil, cilantro, and lemon juice to taste.
- Mix together, and season.
- Lay out tuna steaks on a tray, season both sides and rub the herb mixture on to each side.
- Heat pan and rub it with a little olive oil.
- Put on the tuna.
- Sear the tuna so that it toasts, fries, and browns (about 45-60 seconds on each side).
- Rip steaks in half and serve on salad greens with sun-dried tomatoes, olives, and basil.
SEARED AHI TUNA SALAD
Steps:
- Make dressing:
- Whisk olive oil, lime juice, orange juice, soy sauce, sesame oil, chives and ginger in small bowl to blend. Season with salt and pepper.
- Make wontons:
- Pour oil into heavy medium saucepan to depth of 1 inch. Heat oil to 375°F. Working in batches, fry wonton strips until golden and crisp, about 1 minute. Using tongs, transfer wonton strips to paper towels; drain. Sprinkle with salt and pepper. (Dressing and wonton strips can be made 2 hours ahead. Let stand at room temperature.)
- Place tomatoes in small bowl. Add 2 tablespoons dressing and toss to coat. Cook carrots and peas in medium pot of boiling salted water until crisp-tender, about 30 seconds. Drain, rinse with cold water and pat dry. Place in medium bowl; toss with 2 tablespoons dressing.
- Stir sesame seeds in heavy large skillet over high heat until seeds are pale golden, about 2 minutes. Transfer seeds to large plate. Sprinkle fish with salt and pepper. Dip fish into seeds, coating on all sides and pressing fish so that seeds adhere. Return same skillet to high heat. Brush skillet with some of deep-frying oil. Add fish to skillet and sear until fish is just opaque in center and coating is deep brown on outside, about 3 minutes per side. Transfer fish to work surface.
- Mound lettuces on 4 plates. Thinly slice fish; arrange fish, slices overlapping, on lettuces. Surround lettuces with tomatoes, carrots and peas, dividing equally. Drizzle each salad with some dressing. Garnish with wonton strips. Serve, passing any remaining dressing separately.
