1 1/2 quarts hard cider, unsweetened nonalcoholic cider or apple juice
2 pounds tart green apples
1 lemon
1 to 2 tablespoons sugar or honey, or to taste

Steps:

  • Put the cider in a large, wide pot and bring to a boil. Skim the foam and continue to boil it for 30 minutes or so, until it is reduced to 1 1/2 cups.
  • While the cider is cooking down, peel, core and slice the apples thin. Put the sliced apples in a bowl of water and add the juice of half the lemon.
  • When the cider has boiled down, drain the apples and add them to the pot with the cider. Bring to a simmer, cover and simmer gently for 10 to 15 minutes until the apple slices are tender and have begun to look translucent but have not lost their shape.
  • Using a slotted spoon, transfer the apple slices to a bowl. Sweeten the cider to taste with sugar or honey and boil it for a few minutes until it is a little syrupy. Add a squeeze or two of lemon juice to sharpen the flavor, then pour the syrup over the apples. Serve warm or cold.

We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

NOTE: After fiddling with the conversions to quarts and lbs, I discovered this is for a huge crowd! So...I cut the recipe WAY down! While on a family vacation, we visited Shaker Village at Pleasant Hill in Mercer Co. Kentucky. This is the largest restored Shaker village in the US. If you are not familiar with the Shakers, they are the members of the United Society of Believers in Christ's Second Coming. They led a very humble life, believing in celibacy, separation (men on one side of the house, women on the other), and the philosophy of "Hands to work, Heart's to God". Their contributions to agriculture, handcrafting, and furniture construction is awesome. Google "Shakers" and see for yourself. This recipe is served at the Trustee's House lodging and is part of what they call "daily fare". They are simply delicious and wonderful served with a slab of butter and a homemade biscuit. Cook time is approximate, as it depends on how hot your "low" is.

8 medium apples
1 1/2 cups water
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves

Steps:

  • Peel, core, and dice the apples. Place the cut pieces in a large pot.
  • Cover with the remaining 5 ingredients. Stir to evenly coat the apples. (It won't look like much water, but it's enough.)
  • Cover with a lid and cook over medium heat for 20-25 minutes. Stir occasionally.
  • Let mixture cool for 5-10 minutes. Then puree it in the food processor.
  • Store in the refrigerator or freezer. You can serve it warm or cold.
  • Tip: I use orchard apples, no specific type.

Coarse salt and ground pepper

Steps:

  • Peel, core, and cut apples into 1/2-inch-thick slices. In a large saucepan, combine apples with cinnamon, sugar, and water; bring to a boil. Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)
