"We first experimented with this recipe using fresh crappie," writes Marsha Sullins of Longview, Texas. "We liked it so much, the next night I used it with bass. When my friend tried it on red snapper, I concluded it's just awesome with any fish."

2 red snapper fillets (about 7 ounces each)
1 tablespoon lemon juice
Dash pepper
1/2 cup sliced fresh mushrooms
3 to 4 garlic cloves, minced
1/4 cup butter
1/4 pound uncooked medium shrimp, peeled and deveined
2 tablespoons sliced green onion

Steps:

  • Place the fillets in a shallow 2-qt. baking dish coated with cooking spray. Sprinkle with lemon juice and pepper. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork. , Meanwhile, in a small skillet, saute the mushrooms and garlic in butter until tender. Add shrimp; cook for 2-4 minutes or until shrimp turn pink. Spoon over fish. Sprinkle with onion.

2 cups water
1 cup long-grain rice (recommended: Zatarain's)
4 tablespoons butter
1 pound fresh shrimp, peeled, deveined and finely chopped
8 ounces crabmeat
1 cup finely chopped green onions
1/2 cup finely chopped seeded jalapenos
4 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Essence, recipe follows
1/2 cup all-purpose flour
4 eggs, lightly beaten
Vegetable oil or peanut oil for frying
White saltine cracker crumbs
Garlic Aioli, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
4 egg yolks
2 tablespoons Dijon mustard (recommended: Grey Poupon) or Creole mustard
10 cloves garlic
1 1/2 cups extra virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper

Steps:

  • Bring 2 cups salted water to a boil in a medium pot. Add the rice, reduce heat to medium-low and cook until done, about 20 to 25 minutes. Remove pot from the heat and add the butter to the warm rice and stir to incorporate. Next, add the shrimp, crab, onions, jalapenos, lemon juice, salt, pepper and Essence and stir to combine. Stir in flour and eggs. Be careful not to break up the crabmeat when mixing the ingredients. Transfer the mixture to a storage container and refrigerate for 2 hours.
  • In a large heavy-bottomed sauce pan, pour enough oil to fill the pan about a 1/3 of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F. (If you don't have a thermometer, a cube of bread will brown in about 3 minutes.)
  • Remove the croquette mixture from refrigerator and shape into 1/2-inch to 3/4-inch thick patties and coat with white cracker crumbs. Use an ice cream scoop to keep portion sizes the same.
  • Fry the croquettes until golden brown on both sides. Drain on paper towels and season with salt. Serve with Garlic Aioli.
  • Combine all ingredients thoroughly.

  • Combine the egg yolks, mustard and garlic cloves in a food processor. While processing, add 1 cup of the olive oil in a fine stream to make an emulsion. Add lemon juice, salt, black pepper and cayenne, and then the remaining oil. Process until thick and smooth.

Nonstick spray
1 stick plus 2 tablespoons unsalted butter
1 tablespoon olive oil
3 tablespoons finely chopped red onion (about 1/4 small red onion), soaked in cold water 5 minutes
1 jalapeno, seeded and finely chopped
1 clove garlic, minced
Salt and freshly ground black pepper
2 tablespoons heavy cream
2 tablespoons seafood seasoning, divided (recommended: Old Bay)
2 cups panko breadcrumbs, divided
1 egg, lightly beaten , divided
4 tablespoons chopped fresh cilantro, divided
2 limes, zested, divided
3 limes, juiced, divided
1 pint jumbo lump crabmeat, picked over for cartilage (about 2 cups)
1 pound U-12 or colossal shrimp, peeled, deveined and tails on (about 12 shrimp)

Steps:

  • Preheat the oven to 350 degrees F. Prepare a baking sheet with nonstick spray.
  • In a medium saute pan over medium heat, add the 2 tablespoons butter and olive oil. Next, add the red onions, jalapeno and garlic and saute about 5 minutes. Season with salt and pepper. Remove from the heat and let cool about 2 minutes.
  • In a large bowl, add the heavy cream and 1 tablespoon seafood seasoning; stir to combine. Add 1 cup panko, the egg, 2 tablespoons cilantro, juice of 2 limes, zest of 1 lime and sprinkle with salt and pepper. Mix into the cooled vegetable mixture. Gently fold in the crab, being careful not to break up the lumps.
  • Butterfly the shrimp by splitting them down the back from the center to the tail, being careful not to cut through. Stuff each shrimp with 2 heaping tablespoons of the crabmeat mixture. Place the stuffed shrimp onto a large plate and, when all are stuffed, put into the refrigerator about 20 minutes.
  • While the shrimp are being refrigerated, melt the remaining 1 stick butter in a saute pan over medium-low heat. Add the remaining 1 cup panko and the remaining lime zest and juice. Add the remaining 1 tablespoon seafood seasoning, along with a pinch of salt, pepper and remaining 2 tablespoons cilantro. Stir together.
  • Pull the shrimp from the refrigerator and top with 1 to 2 tablespoons seasoned panko on each individual shrimp. Place the shrimp onto a baking sheet and bake until are pink, about 20 minutes.

2 celery ribs, chopped

  • Preheat oven to 350°. Spread rice into a greased 13x9-in. baking dish. In a large skillet, heat butter over medium-high heat. Add celery and onion; cook and stir until tender, 6-8 minutes.   • Preheat oven to 350°F. Spread 6 cups corn on 2 rimmed baking sheets. Roast until crisp and light brown, stirring occasionally, about 20 minutes. Cool.
  • Heat 1 tablespoon oil in heavy medium skillet over medium-high heat. Add remaining 3 cups corn, green and red jalapeño chilies, and garlic; sauté until corn is crisp-tender, about 2 minutes. Stir in cilantro. Keep warm.

3 teaspoons seafood seasoning (store-bought, your own recipe or Seafood Seasoning Mix)
1 cup flour
1/2 cup clarified butter
1 cup fish stock or 1 cup clam juice
1 1/2 cups crabmeat, picked over for shells (16 ounces)
1 cup butter, room temperature
1/4 cup sun-dried tomato packed in oil, minced
1/4 teaspoon salt
1 teaspoon fresh basil, minced

Steps:

  • To make the butter: whirl all ingredients in blender or food processor until smooth. Refrigerate until ready to use.
  • Preheat oven to 450F; spray two large saute pans with cooking spray and place in oven to heat.
  • Warm serving plates.
  • Season fish with 1/2 teaspoon seasoning and dust the skin side with flour.
  • Add 1/4 cup clarified butter to each saute pan.
  • Place fish in hot butter, skin-side down and cook for a minute.
  • Bake in oven for about eight minutes or until flesh flakes easily.
  • Place a fillet on each serving plate; discard butter and return pans to high heat.
  • Add 1/2 cup stock or clam juice to each pan and bring to a boil.
  • Add half the tomato butter to each pan and heat until butter is nearly melted.
  • Add 3/4 cup of crab meat to each pan and cook until heated through.
  • To serve: Divide the crab meat and sauce evenly over the top of each piece of fish.
  • Serve immediately.
