TUNA FISH PIZZA WITH FENNEL AND OLIVES
This tuna fish pizza will transport you to the Mediterranean with fennel, olives, lemon, tomato sauce, and Parmesan cheese.

Steps:
- Preheat the oven to 500°F (if using a baking sheet) or as high as it will go (if using a baking stone/steel; place the stone/steel in the bottom third of the oven before you start preheating). Let the oven preheat for at least 30 minutes. Then, if you're using a baking stone or steel, switch the oven to Broil on high.
- Stretch or roll out your dough to a 12- to 14-inch circle, then transfer it to an oiled or parchment-lined baking sheet or a lightly floured pizza peel (if using a baking stone/steel).
- Spread the sauce evenly on the dough, leaving a 1-inch border all around. Scatter on the fennel, then the tuna, olives, lemon zest, and Parmesan.
- Transfer the pizza to the oven and bake until the crust is golden and the cheese has browned in spots-8 to 10 minutes on the baking sheet, 6 to 8 minutes on the baking stone/steel.
- Remove the pizza from the oven. Sprinkle with the fennel fronds, drizzle with extra-virgin olive oil, and season with salt and pepper. Slice and serve.

- Marinate tuna:
- Combine oil, lemon juice, anchovies, garlic, oregano, and tuna in a large sealable bag and seal bag, pressing out excess air. Let stand at room temperature, turning occasionally, 30 minutes.
- Grill tuna:
- Remove tuna from marinade and shake off any excess. Lightly oil grill pan and heat over medium-high heat until smoking. Grill tuna, turning once, until pale pink in center, 5 to 7 minutes. Transfer to a platter and cover with foil to keep warm.
- Meanwhile, make sauce:
- Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers. Add diced celery and cook, stirring, until tender, about 5 minutes. Stir in tomatoes, olives, and capers and cook until sauce is slightly thickened, about 5 minutes.
- Stir in basil, lemon juice, and 1/4 teaspoon each of salt and pepper and remove from heat. Spoon sauce over tuna and sprinkle with celery leaves.

- Preheat broiler.
- Into a bowl flake tuna and stir in mayonnaise, fennel, olives, parsley, lemon juice, and salt and pepper to taste. Divide tuna salad among toast slices and top with Cheddar. In a shallow baking pan broil sandwiches under broiler about 4 inches from heat until cheese is bubbling, 1 to 2 minutes.
TOM COLICCHIO'S SICILIAN TUNA SALAD
Celebrity chef Tom Colicchio serves this delicious mayo-free tuna salad at his New York restaurant 'wichcraft. He recommends serving the salad on a fresh baguette, with olives, fennel and lemon confit (or more simply, some grated lemon zest). I got the recipe from the Today Show. This tastes best with a higher quality tuna.

ITALIAN TUNA AND SHAVED FENNEL SANDWICH WITH BLACK OLIVE PASTE

- Preheat the oven to 325°F
- Individually wrap the 4 sections of baguette in aluminum foil and set in the oven to warm, about 10 minutes. Trim the fennel bulb of any fronds or stalks and remove a slice or two from the root end. Using a mandoline, a sharp knife, or a food processor, shave the fennel as thin as possible -the shavings should be nearly transparent. Toss the fennel with the lemon juice, olive oil, a pinch of salt, and some pepper. Set aside.
- Remove one of the baguette sections from the oven. Spread the bottom half with a tablespoon or so of the olive paste. Lay on top 2 to 4 slices of preserved lemon, if using. Arrange one fourth of the tuna on the sandwich. Dot with some of the harissa, and top with a scattering of the fennel salad. Close the sandwich and wrap up again with foil. Set aside. Repeat with the remaining bread to form 4 sandwiches. Cut each in half through the foil and serve.
- Leftovers: Assembled sandwiches will keep for eight hours or so, but no more. As they sit, the bread gets a little soggy, but that isn't such a bad thing.

- To make the salad, saute the sliced onion in 2 tablespoons of olive oil over high heat until they blacken a bit on the edges, about 4 minutes or so. Add the garlic, cook another 30 seconds or so, then turn off the heat. Add the tomatoes, olives, capers and roasted red pepper to the pan and toss to combine. Add the remaining olive oil and salt and pepper to taste; you might not need more salt, as the olives and capers are salty. When the salad has cooled a bit toss in the oregano, basil and mint.
- When you're ready to cook the fish, get your grill nice and hot, and clean the grates well. Pat the tuna dry and coat with oil. Grind some black pepper over the fish. Using tongs, grab a crumpled piece of paper towel you have dipped in some vegetable oil and wipe down the grill grates.
- Grill the tuna for at least 2 minutes per side, depending on how thick the pieces are and how well-done you like your tuna. Slice it crosswise and serve atop the salad with some crusty bread and a good white or rosé wine.
