CRISPY DUCK

Crispy duck is very popular in the Sichuan province and it can be found in many restaurants. However, it is also equally popular to cook at home because, unlike Peking duck, it is easier to make in the home kitchen. My modern variation uses duck breast with the skin on. The duck is first seasoned and then pan-fried until the skin is crispy; the cooking is then finished off in the oven. I like serving this with a sweet and sour apricot and plum sauce.

6 star anise
4 tablespoons freshly grated ginger
2 tablespoons Shaohsing rice wine or dry sherry
2 tablespoons ground Sichuan peppercorns
2 tablespoons sea salt
1 tablespoon dark soy sauce
1 tablespoon light soy sauce
2 skin-on duck breasts, skin scored in a criss-cross pattern
1 tablespoon groundnut oil (peanut)
Salad greens, for service
3 1/2 ounces water
2 ripe plums, stoned and quartered
2 ounces dried apricots, chopped
2 tablespoons sugar
1 tablespoon honey
1 cinnamon stick
1 star anise
Juice of 1 lime
Serving suggestion: This dish is delicious accompanied by stir-fried green beans and roasted sweet potatoes.

Steps:

  • To make the marinade: Place the star anise, grated ginger, rice wine, peppercorns, salt, dark soy sauce, and light soy sauce, into a bowl, and stir to combine.
  • Add the duck breasts to the marinade, cover the bowl with plastic wrap, and leave to marinate for 20 minutes.
  • Preheat an oven to 400 degrees F.
  • Heat a wok or pan over a high heat, and add the groundnut oil. Remove the duck from the marinade and place the duck into the hot wok or pan, skin-side down, and fry until the skin is brown and crisp, about 4 to 5 minutes. Transfer the duck to a sheet pan, skin-side up, and roast in the oven for 3 to 4 minutes, depending on how well done you would like your duck to be. While the duck is in the oven, prepare the apricot and plum sauce
  • To make the sauce: Pour the water into a small saucepan, and bring to a boil. Add the plums, apricots, sugar, honey, cinnamon, star anise, and cook until the mixture has reduced to a sticky sauce. Remove the pan from the heat, and stir in the lime juice.
  • To serve, place a duck breast onto a plate, pour over the sauce and serve with a salad.

1 duck breast , about 200g/8oz
2 rashers smoked back bacon , each chopped into about 6 pieces
1 medium waxy potato such as Desirée or Maris Piper, peeled and cut into about 8 chunks
¼ Savoy cabbage , roughly shredded (core removed)
150ml chicken stock
large pinch chopped parsley
small pinch chopped garlic (optional)

Steps:

  • Heat a small saucepan (one with a lid) on a medium heat. Season the breast, lay it skin side down in the pan and reduce the heat to the lowest it will go. Leave to sizzle for about 15 minutes, uncovered, until the skin is golden and crisp and has rendered most of its fat. Don't shake the pan or move the duck.
  • Remove the duck (the meat side will be raw). Pour out just over half the fat (save it for frying vegetables another time) and turn up the heat slightly. Add the bacon and fry for 2-3 minutes until starting to crisp. Add the potato, cover and cook for 10 minutes, stirring occasionally, until the potato looks sticky and has just started to brown at the edges.
  • Tip in the cabbage and stir until glossy, then pour in the stock. Nestle the duck, skin side up, among the cabbage and potato and cover the pan. Simmer gently for 10 minutes until the veg is tender and the duck cooked. Remove the duck from the pan and stir in the parsley and garlic. To serve, spoon the veg, bacon and juice on to a plate and sit the duck on top. Pour a glass of wine and enjoy the flavours of autumn.

Many restaurants simply fry commercial pressed duck & then top it with a thick brown sauce. This recipe gives you the authentic procedure, complete with all the steps. 1 (3 -5 lb) long island duck
1 cup peanut oil
4 tablespoons soy sauce
1 teaspoon fennel seed
4 whole star anise
6 whole cloves
salt
white pepper
water
1/2 tangerine peel (dried)
2 ounces sliced gingerroot
4 green onions (tied in knots)
cornstarch
all-purpose flour
1 small onion, diced
2 celery ribs (coarsely chopped)
2 cups of the poaching stock
2 tablespoons soy sauce
3/4 head of crushed garlic
4 tablespoons all-purpose flour
2 tablespoons cornstarch

Steps:

  • In a large skillet heat the peanut oil to medium-hot.
  • In the meantime, dry the duck with several layers of paper towels.
  • Brush the duck liberally with the soy sauce, being certain to paint it all over and thoroughly.
  • When it is fully brushed, place the duck into the hot peanut oiled skillet and fry it on both sides until it turns a dark golden brown.
  • While the duck is frying, bring to a boil a pot of water deep enough to completely submerge the duck.
  • Into the pot, add a bouquet garni made of 1 teaspoon fennel seeds, 4 whole star anise, 6 whole cloves, salt and white pepper, dried peel from 1/2 of a tangerine, about 2 oz. sliced ginger root, 4 green onions (tied in knots), and water.
  • After the stock has simmered for about 20 minutes to release the essences from the bouquet, take the fried duck and place it into the stockpot.
  • At this point, lower the heat and poach the duck for exactly 1 hour.
  • This causes the thick fat layer in the duck to dissolve and be extracted from under the skin.
  • When the allotted cooking time is done, remove the duck from the stockpot, drain it well, and allow it to cool.
  • Cut the duck in half and remove the rib bones, back bones, neck bones, and thigh bones (but leave the drumstick and wing bones on for presentation).
  • IMMEDIATELY sprinkle the duck halves with salt and white pepper.
  • Then sprinkle the duck halves evenly with cornstarch.
  • Then sprinkle over the cornstarch with cold water.
  • Then top everything off by the sprinkling of all-purpose flour.
  • Then place both duck halves on a metal steamer rack and set the rack down inside the stockpot that you poached the duck in originally.
  • With the burner set to medium, cover and steam the duck halves for 20 minutes.
  • As soon as they come out of the steamer pot, transfer the duck halves to a preheated 375 degree oven.
  • In about 15 to 20 minutes the oven heat will cause the water from the steaming process to evaporate from the duck meat, consequently crisping up the skin in the process.
  • This is probably the most critical part of the entire recipe, because a miscalculation here could completely dry out the duck and make it stringy instead of crispy and juicy.
  • So, it is important to watch the halves carefully while they are in the oven.
  • You'll now make the Mandarin Sauce from these ingredients listed in the ingredients section: 1 small onion diced, 2 ribs celery (coarsely chopped), 2 cups of the poaching stock, 2 tablespoons soy sauce, 3/4 head of crushed garlic, 4 tablespoons all-purpose flour, and 2 tablespoons cornstarch.
  • While the halves are crisping, take about 1/2 cup of the oil from the skillet you originally browned the duck in and pour it into a wok.
  • Then over high heat, fry down until the veggies are richly browned.
  • When all the veggies have caramelized (which intensely flavors the oil and which should take about 5 minutes or so), spoon into the wok about 3 or 4 tablespoons of all-purpose flour and cook it into the oil to make a roux.
  • Then, carefully ladle into the roux about 1 or 2 cups of the poaching stock to make a gravy.
  • This is where the intensity of the flavors is created.
  • The stock is ultra-rich in duck flavor, and the roux is ultra-rich in caramelized onions and garlic.
  • Finally, when you are ready to serve the dish, remove the duck from the oven, cut it into julienned strips, and place it on a platter.
  • Then finish the Mandarin Sauce by stirring into the gravy 2 tablespoons of soy sauce, and 2 tablespoons cornstarch dissolved in water to thicken it.
  • Serve over a bed of white rice if desired.
  • I know it is a lot of work, but very few other dishes even come close to the taste of this great dish!
  • NOTES: To make and use a bouquet garni, simply tie up the herbs you select in a piece of cheesecloth and simmer them in water for at least 20 minutes.
  • When you steam the duck halves, rest them on top of strips of green onions or carrot slices so that the steam can circulate under the meat. Otherwise, the duck will not cook consistantly.
  • Be careful when adding the poaching stock to the hot roux. If this is done carelessly, the oil could splatter and cause severe burns! When doing this, I wrap a thick towel around my arm.

2 cups duck liquid

Steps:

  • 1. Wipe duck inside and out with a damp cloth and cut in two. Rub each half inside and out with soy sauce. 2. Heat oil until boiling. Using a wire basket or long-handled Chinese strainer, add duck, one half at a time, and deep-fry, basting and turning, until light golden. Drain on paper toweling. 3. Transfer duck halves to a heavy pan and add water, salt, sugar and remaining soy sauce. Bring to a boil then simmer, covered, 30 minutes. 4. Drain, reserving liquid. Let bird cool then bone and cut in 1-inch squares, each with some skin. Dredge lightly in flour to coat. 5. Reheat deep-frying oil to boiling. Add duck squares a few at a time and deep-fry until golden brown. Drain on paper toweling. Keep warm. 6. Skim and discard fat from reserved duck liquid then reheat. water to cover
1/2 cup almonds
1 cup canned mushrooms
1 head Boston lettuce
2 eggs
4 tablespoons cornstarch
2 tablespoons water
1 teaspoon salt

oil for deep-frying
2 cups duck broth
1/4 teaspoon salt
dash pepper
1 tablespoon cornstarch
3 tablespoons water

Steps:

  • 1. Wipe duck inside and out with a damp cloth. Disjoint and place in a heavy pan with cold water to cover. Bring to a boil and simmer, covered, 40 minutes. 2. Meanwhile blanch, toast and sliver almonds. Drain canned mushrooms. Shred lettuce and arrange on a serving platter. 3. Drain duck, reserving liquid. Let bird cool slightly then bone and cut meat in 1/2-inch squares, each with some skin. Skim fat off duck liquid. 4. Beat eggs lightly. Mix to a smooth batter with cornstarch, water, salt and pepper. Dip duck squares in batter to coat. 5. Heat oil. Add coated duck squares, a few at a time, and deep-fry until golden. Drain on paper toweling. Arrange on lettuce bed. 6. Reheat duck broth. Add canned mushrooms and remaining salt and pepper. Meanwhile blend remaining cornstarch and cold water to a paste, then stir in to thicken. Pour sauce over duck squares and serve, garnished with almonds. VARIATION: * Leave the duck whole. In step 1, add to pan 1/2 tablespoon salt 3 tablespoons soy sauce 1 scallion 2 slices fresh ginger root 1 garlic clove, crushed and 2 cloves star anise. Simmer 1 1/2 hours. 1 (4 1/2- to 5 1/2-lb) fresh Pekin duck (sometimes called Long Island duck)
6 tablespoons toasted Sichuan-peppercorn salt
1 tablespoon five-spice powder
2 tablespoons Chinese rice wine or dry Sherry
6 (1/8-inch-thick) slices fresh ginger
4 scallions, cut into 2-inch pieces
About 12 cups corn, peanut, or canola oil
2 tablespoons dark (black or mushroom) soy sauce
1/3 cup all-purpose flour
Special Equipment
a 10-inch glass pie plate or shallow heatproof bowl; a 16- to 18-inch wok with a lid and a 9 1/2- to 10-inch round metal rack, or a 14-inch wok and same rack plus a large pot (at least 12 inches wide and 5 inches high); long oven mitts; a bulb baster; an electric fan; 2 large Chinese mesh spoons or large slotted spoons

Steps:

  • Prepare duck:
  • Cut off wing tips with poultry shears or a sharp knife. Remove and discard excess fat from body cavity and neck, then rinse inside and out. Pat dry inside and out and press on breastbone to break it and flatten duck.
  • Marinate duck:
  • Heat peppercorn salt and five-spice powder in a dry skillet over moderate heat, stirring, until hot. Measure out 3 tablespoons and rub 1 tablespoon in body cavity and 2 tablespoons over outside of duck, including under wings and legs. Reserve remaining spiced salt for serving with duck.
  • Put duck in a bowl and marinate, covered and chilled, 8 to 24 hours.
  • Steam duck:
  • Drain any liquid from cavity and put duck in glass pie plate. Rub rice wine over duck. Smash ginger and scallions with flat side of a large heavy knife, then put one third in duck cavity and scatter remainder over duck.
  • Fill wok with enough water for rack to sit 1/2 inch above water and bring to a rolling boil. Wearing oven mitts, put pie plate with duck on rack over boiling water and cover wok with lid.
  • Reduce heat to moderate and steam duck 2 hours, checking every half hour to siphon off fat and juices from around duck and in cavity with bulb baster and replenishing boiling water as necessary.
  • Wearing oven mitts, remove pie plate from steamer. Discard ginger and scallions. Drain duck and cool in pie plate 15 minutes.
  • Air-dry duck:
  • Slide duck onto a rack set over a baking sheet (to catch juices) and pat dry with paper towels. Position duck in front of a fan and air-dry 2 hours, making sure air blows directly onto duck.
  • Fry duck:
  • Heat 2‚ inches oil in large wok or large pot until a deep-fat thermometer registers 375°F. Meanwhile, brush outside of duck with soy sauce, then dust with flour, gently knocking off excess.
  • Dip mesh spoons in hot oil (to keep duck from sticking) before using them to gently lower duck into hot oil. Fry duck, spooning hot oil over top, 2 minutes. Carefully turn duck over and fry 1 minute more. With extreme care, remove duck from oil with mesh spoons, draining cavity, and transfer to paper towels to drain.
  • Heat oil to 400°F and fry duck a second time, in same manner, until dark brown and crisp, 30 seconds to 1 minute on each side. Again with extreme care, remove duck from oil with mesh spoons, draining cavity, and transfer to paper towels to drain briefly.
  • Presentation:
  • Serve duck with small dishes of reserved spiced salt for dipping.

1 tablespoon cumin powder
1 tablespoon chili paste

1 teaspoon turmeric
2 tablespoons molasses
2 tablespoons honey
salt and pepper
oil (for deep frying)

Steps:

  • In a small bowl, combine cumin, ginger, garlic, timur, nutmeg, half teaspoon of turmeric, salt and pepper; mix well.
  • Clean duck; wipe dry.
  • Rub duck inside and out with the spice mixture.
  • Let rest to marinate for at least eight hours.
  • Place marinated duck in a steamer and steam for at least one hour.
  • Remove from steamer and let cool down.
  • Combine a half teaspoon of turmeric, chili paste, molasses, honey and salt, and smother over the duck, inside and out.
  • In a deep fryer heat oil to 360F.
  • Dip the steamed duck in frying oil.
  • Fry duck, turning periodically, until the duck skin is golden brown and crispy.
  • Remove from oil and place on paper towel to absorb excess oil.
  • To serve, cut crispy duck into bite-size pieces.
  • Serve with rice pilaf, accompanied with mango chutney.

DEEP-FRIED TOFU SIMMERED WITH SCALLION



Deep-Fried Tofu Simmered with Scallion image

Viet cooks often deep-fry cubes of tofu until crisp and golden and then add them to a stir-fry or a simmering liquid (in this case, a mixture of fish sauce, water, and scallion). Fried tofu absorbs other flavors especially well, yet holds its shape and retains its faintly nutty overtones. The end result is a chewy, almost meaty quality. Look for regular or medium-firm tofu for deep-frying, never the silken type or the firm type that is best for grilling. Freshly made tofu (see opposite) will puff up during frying and then deflate as it cools; packaged tofu won't do that and will be denser after it is out of the oil. Both will have excellent flavor. When building your menu, treat this recipe as the main savory dish and accompany it with a vegetable dish and/or meat-and-vegetable stir-fry, a simple soup, and rice.

Yield serves 4 with 2 or 3 other dishes

1/2 cup water
2 to 3 tablespoons fish sauce
1 1/2 pounds regular or medium-firm tofu (in cakes or large blocks), cut into 1-inch cubes, drained well in a colander, and patted dry
Corn or canola oil for deep-frying
3 scallions, green part only, chopped

Steps:

  • In a wide, shallow saucepan or 10-inch skillet, combine the water and enough fish sauce to create a lightly savory liquid. The tofu will completely absorb this liquid, so make it a little less strong than you would like. Place the pan next to the stove.
  • Pour oil to a depth of 1 1/2 inches into a wok or 5-quart Dutch oven and heat over medium-high heat to 350°F on a deep-frying thermometer. (If you don't have a thermometer, stand a dry bamboo chopstick in the oil; if small bubbles immediately gather on the surface around the chopstick, the oil is ready.)
  • Fry the tofu cubes in 2 or 3 batches to avoid crowding the pan and lowering the oil temperature. Gently drop the tofu into the hot oil, which will foam vigorously. The tofu will immediately sink to the bottom and then eventually float up. As the tofu cubes fry, use a skimmer to push them around to ensure even frying and to separate any that stick together. After 4 to 6 minutes, the cubes should be golden and crispy. Use the skimmer to lift them out of the oil and then shake it over the pan briefly to drain away excess oil. Put the tofu directly into the saucepan holding the fish sauce and water. Repeat until all the tofu is fried. (You can fry the tofu several hours in advance, cover, and keep at room temperature. Just before serving, add the tofu to the fish sauce and water and continue with the recipe.)
  • Place the pan over medium heat, bring the tofu and sauce to a simmer, cover, and cook, stirring occasionally to expose all the surfaces to the seasonings, for 3 minutes, or until the tofu absorbs the liquid. Uncover, scatter in the scallion, and give everything a big stir. Transfer to a shallow bowl and serve immediately.

I have made this recipe and it is delicious. It can be served with plum sauce as well as a fruit sauce. This is actually a short-cut version but it is fantastic.

1 (4 pound) whole duck, dressed
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground white pepper
⅛ teaspoon ground cloves
3 tablespoons soy sauce
1 tablespoon honey
1 orange, sliced in rounds
1 tablespoon chopped fresh parsley, for garnish
5 green onions
½ cup plum jam
1 ½ teaspoons sugar
1 ½ teaspoons distilled white vinegar
¼ cup finely chopped chutney

Steps:

  • Rinse the duck inside and out, and pat dry. Cut off tail and discard. In a small bowl, mix together the cinnamon, ginger, nutmeg, white pepper and cloves. Sprinkle one teaspoon of the mixture into the cavity of the duck. Stir one tablespoon of the soy sauce into the remaining spice mixture and rub evenly over the entire outside of the bird. Cut one of the green onions in half and tuck inside the cavity. Cover and refrigerate the bird for at least 2 hours, or overnight.
  • Place duck breast side up on a rack in a big enough wok or pot and steam for an hour adding a little more water, if necessary, as it evaporates. Lift duck with two large spoons, and drain juices and green onion.
  • Preheat the oven to 375 degrees F (190 degrees C). Place duck breast side up in a roasting pan and prick skin all over using a fork.
  • Roast for 30 minutes in the preheated oven. While the duck is roasting, mix together the remaining 2 tablespoons of soy sauce and honey. After 30 minutes, brush the honey mixture onto the duck and return it to the oven. Turn the heat up to 500 degrees F (260 degrees C). Roast for 5 minutes, or until the skin is richly browned. Do not allow the skin to char.
  • Prepare the duck sauce by mixing the plum jam with the sugar, vinegar and chutney in a small serving bowl. Chop remaining green onions and place them into a separate bowl. Place whole duck onto a serving platter and garnish with orange slices and fresh parsley. Use plum sauce and onions for dipping.
