THAI SEAFOOD HOT POT
Steps:
- Bring a medium saucepan of water to a boil. Stir in noodles; remove from heat. Let stand until noodles soften, 7 to 10 minutes; drain. Heat oil in a large pot over medium heat. Cook shallots, garlic and onion until soft, 3 to 5 minutes. Add stock, juice from tomatoes, coconut milk, vinegar, fish sauce, lime zest, chiles, sugar and lemongrass. Bring to a boil over medium-high heat. Add cilantro and basil; reduce heat to medium-low; simmer 10 minutes. Remove garlic, cilantro and basil from pot; add tomatoes and mushrooms. Return to a simmer. Add shrimp and scallops; cook 2 minutes. Add calamari and lime juice. Season with salt and pepper. Divide noodles among 4 bowls; top with broth and seafood; garnish with remaining basil and cilantro.
SPICY THAI ONE POT
This recipe actually came from the side of a bag of Jasmine rice. My family likes it well enough that it has become a semi-regular, quick and easy weeknight meal. As written, it has a nice kick, but won't melt your head. Adjust the cayenne pepper to your liking.

Steps:
- Combine water, soy sauce and cayenne pepper. Heat large wok or fry pan over high heat (Spray with cooking spray if using a "drier meat" like poultry). Add meat and stir fry for 4-5 minutes or until browned.
- Add bell pepper. Stir fry for one more minute.
- Mix in rice and soy sauce mixture. Bring to a boil, then reduce heat, cover and simmer for 20 minutes or until liquid is absorbed.
- Mix in green onions and cilantro. Serve.

- In a mortar and pestle, pound garlic and chilies (if using) until fine. Add the red bean curd and juice and mash until smooth. (No mortar and pestle? You can also mince the garlic and mash the bean curd with a fork.)
- Soak glass noodles in room temp water for 7-10 minutes until softened. Cut them with scissors a few times so they are shorter and easier to separate. Arrange on a serving platter along with the rest of the vegetables and tofu.
- I always start by adding a bunch of vegetables first because veggies will help flavour the broth, and they also tend to take longer to cook. This is the "communal veg" which means anyone can take from this pile. Keep adding communal veg as people take them.

- Thoroughly mix the meat, oyster sauce, soy sauce, oil, tapioca starch and egg white. Marinate for at least 20 minutes. Arrange all types of meat on a platter and place the remaining egg in the middle of the platter right on top of the meat (you can make a little crater so the egg doesn't run). - To make the broth: Bring the pork broth to a simmer and add the lemongrass, galangal and kaffir lime leaves; simmer rapidly for 3-5 minutes. Add the fish sauce and right before you're ready to start eating, add the toasted rice powder into the broth.
